The food here is all very delicious. My husband got the crispy duck ramen and shrimp skewer. The duck ramen was probably the best of all the things we got- the duck flavor came through, and the noodles had a good bit of bite to them, not too soft. I got the carbonara udon. It's basically like mac and cheese udon with bacon, also quite tasty, though I do think the ramens were better. I also got a pork belly skewer which was good. My son (10) got a shoyu ramen with noodles- no toppings. They don't have a Keiki menu but instead do a plain noodle and broth ramen for kids- which is exactly what my son wanted so we were happy with that. The edemame was well salted and incredibly fresh- trust me, I have had edemame in at least 20 places, this was top notch freshness. Was it a fluke? No idea. Edemame can be hit or miss in most places but this was shockingly good. My son devoured it. Lave cake with vanilla ice cream on it was also delicious. Waiter was very nice. The ramens took a while to come out- new restaurant growing pains, we didn't complain and the quality was worth it but the waiter was very apologetic and comped our dessert. Oh the mocktail I had was good too. I don't think they have a liquor license so it's a BYOB place. I had the matcha miso mocktail. I was skeptical about it unsure how miso and matcha would blend, but it was refreshing, a little sweet, like a matcha lemon lime drink- not as sweet as soda but refreshing like a mojito. We were really looking forward to trying this place, but unfortunately, it did not live up to the expectations. The Service: We booked our reservation on OpenTable and checked the "birthday" option, but it was never acknowledged or mentioned by anyone during our visit. After being seated, we sat for about 14 minutes without anyone greeting us or offering water. The hostess must have overheard us complaining because she finally brought water and took our initial order to pass it off to our server. Once our waiter (a man with a receding hairline and ponytail) finally showed up 10 to 15 minutes later, the service didn't improve. He completely prioritized other tables and largely ignored us. When I tried to order a beer from what looked like a full bar, he informed me they don't serve alcohol. His actual recommendation was for me to leave the restaurant, walk across the street to the grocery store, buy a beer, and bring it back. The Food: The Good: The yakitori came out first and was actually pretty good. The Not-So-Good: The wontons were incredibly tiny and definitely not worth the $14 price tag. The Ramen: A huge letdown. The noodles were super thin, which was fine, but the broth was very creamy and incredibly bland. My wife and I have been to Japan multiple times and eat ramen on Oahu frequently as well, so we know what good ramen tastes like. This just wasn't it. The Atmosphere: The vibe just didn't feel like an authentic Japanese ramen shop. They use cheap paper napkins, and while they have a prominent certificate at the check in claiming they were taught by a Japanese organization, the execution tells a different story. This place opened about two months ago. It's from Chef Joey who own's Joey's Kitchen which is a few stores over in the same strip mall. At first we went to Joey's Kitchen, but all their tables were full and we didn't feel like doing take-out and eating outside. So we decided to give Dang Dang noodle a try. The hostess was very helpful and friendly. However our waiter was very slow and didn't come to our table for a very long time. The hostess ended up taking our order and giving us water. Since they have been open for 2 months they still need to work out the kinks, especially with their speed of service and attentiveness. I guess they were understaffed with servers which is why we ended up sitting there with no water and no one to take our order for quite some time after we got seated. We tried the pork belly ramen, udon carbonara corn ribs, pork belly & shrimp skewers, half a dozen oysters, sisig and the matcha panna cotta. The corn ribs were the best dish there and we actually got two orders of them. The rest of the dishes were just so so. Nothing too special. The udon carbonara was very dry. I wish they had added more cream sauce in there. The sisig had a citrus and tangy taste which didn't really match with the dish. We asked for some spicy sauce to eat with our spork belly ramen and I was surprised when I got the bill that they actually charged us $2 for a very small amount of spicy sauce. Overall for the prices they charged - $30 for half a dozen oysters, $24 for pork belly ramen and $5-$6 per skewer were quite pricey and not worth the value. We could get much better dishes and tastier for a much better price. We will not be going back to this place again. read more

The restaurant was well kept - it was clean and neat. There was some cool decor too - I liked the octopus mural on the wall and on the menu. There was a mix of visitors and locals. The restaurant has taken the place of the previous restaurant, FOND. Service was good too - Santiago was great and always checked in on us and made sure we had enough water. We got 3 skewers: the shishito peppers (8 pieces), the pork belly and the Kauai shrimp. The peppers were good; the pork belly and Kauai shrimp weren't bad, but not something I'd order again. I'd try another skewer along with shishito peppers. They're still waiting for their liquor license, so we got some mocktails. I got the Kilauea Vog - it was a bit sour. I didn't mind it but it may not be for everyone. The "Mi-Ma Who?" was fantastic. It really brought us back to our memories when we visited Okinawa. I'd say it was the star of our evening. My wife got the duck ramen. The ingredients mention it had Szechuan peppercorn, but it was difficult to find that flavor in the ramen. Overall it was straightforward rather than complex. We were hoping for more in a duck-focused dish. I had the udon carbonara. I really enjoyed this. This would become my go-to order if I were a regular customer here. Our overall visit was a mixed bag. Been waiting impatiently for this restaurant to open and WOW! It was only the second or third night since it opened but it was full and lively and had a great vibe. They give a Kamaiiana discount so there were plenty of locals there and it is obviously going to be a popular addition to local dining. In fact half the local Napili Paddle club were there dining that night ;) Love the decor with a big bar, Tako mural, and wooden seating. BYO booze as they are waiting for their drinks license but Napili Market stocks a great selection of beers and wines just across the complex. Service was great, we had a wobbly table and they gave us napkins to put underneath to keep it stable. Have to have a stable table for ramen! Server was quick, efficient, professional and was thinking ahead, bringing multiple spoons for dessert we were sharing, and keeping our waters topped up. The menu is a mix of soup/dimsum/bites, followed by sashimi/salad/pickles, skewers, charcoal cooked foods, veggies, then noodles with add ons, and dessert. We ordered: Pickles - a mixed plate of shishito peppers, spicy kimchi, broccolini namasu, konbu. A mixture of vinegar, spice, crunch and umami flavors to complement your food, the kimchi was a stand out Pork Belly skewers - delicious with a little bit of fat to give them extra taste Kauai Shrimp skewers - a whole shrimp with head so you can suck out the juices, delicately seasoned Vegan Ramen - umami with plenty of veggies, I added a Shio egg and spicey paste so I could spice it to my liking. Very tasty for a vegan dish Tan Tan Ramen - spicy and oh so nicey! Pork and interestingly oat milk Pork Belly Ramen - creamy broth makes this a little different Shoyu Chicken Ramen - traditional with lots of noodles in a big bowl Ube Cheesecake/Molten Lava cake with ice cream- desserts are very small but well made and a nice sweet end to an umami meal The ramen come in big bowls, steaming hot and are extremely filling and were very popular. Next visit I will order the Baked Dynamite Scallops and the Spiced Cauliflower. This is definitely going to be a favourite, can't wait to see their cocktail menu once they have their drinks license! read more

A New West Maui Gem! Made it to Dang Dang Noodle at Napili Plaza! I seen this sign go up awhile ago & was so excited to see this family-run spot open. We definitely did a little 'sample of everything' kind of date night, here's the scoop: My personal favorites: * Poke Soba: An Instagramable beauty, from all the colors, textures & shapes. I was in love with every tasty bite. * The Dessert Mashup: The Ube Cheesecake is fluffy and cake-like, while the Matcha Panna Cotta has that bold, authentic kick. Pro Tip: Combine them. The purple and green look stunning together, and the flavors are a match made in heaven. George's Picks: * He devoured the Pork Belly Ramen--broth was on point! He loved the Pork Belly Skewers too, though he'd love an extra crispy sear next time. The Bites: * Chicken Potstickers: They don't skimp on the filling! The water chestnut garnish is a tasty touch. * Spiced Cauliflower: Crunchy and fun. Pro Tip: Make sure to dip into the sauce hidden underneath for the full flavor. The Shoyu Chicken Ramen is mild on flavor, great for kids or those who prefer a lighter profile. P.S. I don't understand the people who didn't give this place 5 stars. It's ramen. Very good ramen. The prices are very reasonable and the food is delicious. We just strolled in and they were booked but had room at the bar. The spicy cauliflower was very well cooked, and was delicious. My wife had the Shoyu Ramen. She loved it, the chicken was tender and full of flavor, perfectly seasoned. Also, the 6 minute egg. I'll get to that shortly. I had the Dang Dang Saimin. Wow! The chicken was amazing, and the spam was one of the best things I've ever eaten. The 6 minute egg was so creamy and delicious, just the egg was worth the visit. The bartender who took care of us was very friendly, and provided great service. I really appreciated the laid back, relaxed atmosphere. We had a great meal! I am so happy we got to eat here on the first week it was open. I can only imagine Dang Dang noodle will be even better after a few months of continuous service. I was looking forward to Dang Dang. We like and order from Joey's Kitchen often but this was extremely disappointing, The service was fine but the food was really off. The chicken potstickers were terrible, dense and tasteless. The Tan Tan broth and spam were lacking flavor and depth. We struggled with most all our items including over cooked edamame. Someone needs to work with the kitchen on seasoning and flavor. Sorry, was hoping for better. We will try again. read more

We have been loyal customers of this chef for years. We dine out and usually wouldnt pick this place because it lacks a view. HOWEVER, dishes are outstanding with their spices and prep. I was really looking forward to Dang Dang Noodle. I've been to Chef Joey's other spots and always had high expectations, so I walked in expecting something solid. Especially with all the hype from staff and management about this being "Macadangdang 2.0." Not even close! Service nonexistent. Staff just kind of standing around chatting like it was a slow Sunday hangout instead of a restaurant. Maybe business is good enough where that flies, but from the customer side it didn't feel dialed in. There's a bar setup, but no liquor, just a little chalkboard outside saying BYOB. And their mocktails is just a recycled menu from Macadangdang. The skewers were fine. Honestly, they were probably the best thing we had, which says a lot. Everything else, especially the noodles, was surprisingly bland for a place that's supposed to specialize in them. I kept hearing about how the noodles are made fresh in house, which is great, but the dishes themselves didn't carry any real flavor or personality. It wasn't "needs a little salt," it was just flat. Food took close to an hour, which I could understand if the place was slammed but it wasn't. Maybe six tables in there at most. And all the five star hype online? I don't know, it just didn't match what was happening in front of us. I'll leave it at that. I'll probably give it one more shot next time I'm back on Maui in 6 months, because I want it to be good. But right now, it's got a lot of tightening up to do. read more

Delicious food, but not quite ready to be fully opened. Reservations suggested, walkin turned away while we were there with plenty of empty tables. Portions were good for a single serving; I like that they didnt bring a HUGE portion .. just right. Cheese wontons were good; needed a more flavorful dipping sauce.
