The Souk Gai soup was unique, tangy, and refreshing. I have been to Thailand, Vietnam, and Malaysia. I have also had my fair share of those cuisines in Toronto. But Toronto doesn't have enough representation of Lao food. This restaurant seems to be a great representative of Lao food in Toronto. Ambiance is decent and service is great. On a previous visit, I made the mistake of ordering dishes too spicy. This time, the server seemed to instinctively know better and brought the khao pad tom yum with chicken ($21) at a medium spice level. The fried rice was a full-on flavour bomb: punchy tom yum paste layered with aromatic onions, peppers, and fresh herbs. And the aroma? Absolutely intoxicating. I'd highly recommend splurging a little and ordering from the "premium beef" section. The khaw waan beef green curry ($27.50) uses "finger beef," a well-marbled cut carved from between rib bones. The result is deeply flavourful, incredibly tender meat with a luscious gelatinous ribbon of cartilage that adds richness. Green curry can often become too sweet or heavy on coconut, but Sala strikes the balance beautifully. It's creamy without being nauseating, with bold curry flavours still front and centre. The sauce is excellent spooned over the cone of steamed rice and soaking into the tender eggplant scattered throughout. Since my first visit, portion sizes have noticeably increased... we left with a doggy bag of leftovers. Everything arrives well-seasoned on its own, but for those who like to tweak, Sala offers a set of "flavour boosters" so you can dial up the salty, sweet, sour, or spicy elements. But we had already ordered the pad thai - you get to choose the noodle for pad thai and the spice level, we went for the glass noodles and it turned out really delicious. Very well balanced flavours! The pad kra pao was also good and the portion sizes for both were actually really generous. We also ordered two drinks from Khem and my favourite was the Southern Thai pulled tea.

Oyster omelettes are apparently "renowned as one of the top three must-try street food dishes in Bangkok". Radish cake had a lot of beansprouts on top. They tasted a little like the dim sum version but without things like dried shrimp or Chinese sausage inside (but with large firm peanut halves), cut much smaller & quite peppery. The dish didn't feel integrated as the chives, green onion & beansprouts seemed scattered on top, not cooked (much less cooked together with the radish cake). The egg was also fried on its own, not with the radish cake. It was served with sweet soy sauce & chill slices in vinegar. I saw a video at another Thai place how they cook this on the street in Thailand: small pieces are fried on a griddle together with beansprouts & chives, so this is different. Oyster omelette was served with smooth sweet & sour red chili sauce & coarse green chili sauce. Both were good, but green was better. Which was good, because the oyster omelette had little flavour. The soft bit was very gooey & had a super mild flavour. The crispy bit was thin & crispy & ironically despite being thin tasted better & had more of a taste than the gooey bit. The beansprouts were underneath & more cooked than in the other dish because of the heat from above. The oysters were not fresh either.
