Tender enough and fluffy enough to fill the role of a receptacle for the creamy and very lightly peppered gravy. If there is a stand-out item on this plate it is the German potatoes. Grilled crispy on the outside and soft inside these are a nice change from the usual hash browns or so often poorly done "home fries". I definitely recommend Hugo's if you want a classic diner breakfast in Claremore.
