They use brown rice here. It was super soft and sticky like sushi rice is supposed to be, and healthier!. 4 stars for atmosphere,(just close your eyes and savor the delicious rolls). Their hours are funky so pay attention. We were their last order before closing early bc they were out of rice. He gave us a free roll to make up for it, even though we werent unhappy. This place was very good! We came on a cruise ship and missed our excursion so we needed a place for lunch. We always try to eat local and saw Eat Dragon Sushi as highly recommended. It shares a space with 3 other restaurants which is interesting. We ordered a spicy ahi cucumber roll and a California roll. They were a little too loosely wrapped for my taste but tasted delicious. Great fresh sushi at an amazing price! But I highly recommend the food To Go. Only downside is this is in a food court style situation (so this is not a stand alone restaurant) and the tables and eating area in general were very dirty. This is definitely a must try in Hilo. This one man and woman(husband&wife) show/shop is truly one of Hilo's culinary gems. All sushi is made with brown rice and prices are super reasonable. Now, it does get busy here and there's only two workers running this shop, so if it gets busy, be patient. I don't recommend letting a long line deter you because Dragon Sushi makes the best sushi around. I also think that their poke bowls are the best on island. The fish is super fresh and the available rolls and sushis are very traditional. Also, be sure to check if he has any ube cheesecake available because it's delish. Anyway, I could go on and on about how good this place is but I'd much rather you guys go down and try it, so go! Hands down best sushi in Hilo! Fresh everything and great prices. Their wasabi is really good too! I hate going to sushi places and their wasabi is dull. Meaning, it doesn't make me cry. But Dragon Sushi's wasabi does the trick. You'll find that many sushi places on the Big Island uses more local style sushi rice. But they use normal sushi rice (that sweet, vinegar taste). They only use brown rice, but it tastes exactly like normal rice, trust me. Other than their rice, I don't eat brown rice (refuse to, more like). Their sushi is very authentic. My sister came to visit and tried their sushi for the first time and she said the sushi chef's techniques are very authentic as well (she's been to Japan many times). The chef and (his wife maybe?) don't really speak English, but they try to show you as much gratitude as they can. As you leave, they constantly tell you "thank you" and bow. It's located in a small hole in the wall near the Hilo Farmer's Market with a couple of other restaurants. Not much seating, but it's fine. Hopefully he gets his own place one day! read more
