The flavors were so fresh and full of umami, it was a burst of goodness that you must try! I asked someone about this - turns out he was the chef! I forget his name but he was so gracious in explaining the salsas he creates and adds to the juice for that delicious burst of flavors! I had never seen this before. It elevated that dish so much. He spoke about how this is actually traditional in his hometown in MX. He then surprised us when he came out with 2 small bowls of the salsas, one brown and one deeper red. So delicious and fun to taste on their own and with chips too! I had a combo plate with the chili verde enchilada and chili relleno. The pork in the enchilada was super fresh, soft, flaky, incredibly yummy! We'll be going back for sure.
