This Ameri-MexiCAN restaurant is a local business worthy of our support! I LOVE THIS PLACE! I love that it's in an area of town looking for fresh, new ideas. I love that it's staffed with the most friendly personnel - no really... I challenge you to find a group of people who are more passionate about providing great service. I love that it's a funky mix of art, food, and love. I love that the food always makes my belly happy. I love that it's all priced super reasonably. I even love the name! I'm not one for too much spice, but the salsa bar allows you to decide your own spice factor. The chicken empanadas are my current favorite...so perfectly golden on the outside and so moist on the inside. Yum! They carry imaginative menu items that will make it hard for you to decide. I have yet to try the soups, but the last time I was in there were diners exclaiming about it. Not only does the food have flavor, but so do the artwork that is featured on the walls. I am very rarely in the Tricities, I found this place by chance and with the help of Yelp. This is a very unassuming location, it's kind of in a strip mall next to some other businesses. The minute you walk in, you're greeted by a friendly staff. I was told there is always a special that's posted on the board and it looked very good and like a great value. I tried the adobo off the menu and it was terrific. I had initially turned down the tortillas, but have to say that they are a must with this dish. The beef tacos were also very good. You know, people call the tri-cities a "food desert," and maybe there aren't A TON of places to eat here, but El Fat Cat is the tipping point for me, in a good way. There are some hidden gems here, this place included. I got the Green Hornet burger, an all around good burger with yummy jalapeño cream. I thought it lacked a bit of crunch, like it was missing lettuce or some fresh onion, or something to make it a bit less squishy, but the flavor was really good. My husband got the Chorbata (Chorbada? I don't remember) Burrito. First, it was totally big enough for two people (but we're not complaining). It was good, I think I might have liked it a bit more than my burger. Either way, we'll definitely be back, and we look forward to trying some new things. read more

I ordered the chilaquiles, because I was really in the mood for eggs and asked to sub black beans for meat option. They happily obliged. They also have quite a few other options to suit ovo-lacto vegetarians. My boyfriend had the farmers burrito with their homemade habanero hot sauce. Portions were generous, flavors spot on, and prices very reasonable. The red sauce they put on the chilaquiles was divine. They have this unique firecracker sauce they put on the top - it is a tasty mayo-hot sauce combination. I will definitely come back again soon when I am visiting my or maybe even on the same trip. First time coming to this food truck and my oh my was I in for an amazing surprise! They have outstanding customer service, I was very impressed with the level of care I received. The staff is very friendly and I wish I would have been able to use the name of the lady with the gorgeous nails helping me at the register. Everyone was working so hard. There was a decent line but the food was quick and worth the wait! I got a vegetarian burrito minus the cheese, with pineapple sauce and habenro. The burrito was huge! The price is unbelievable for the amount of food you get. The only thing I would say is the burrito could have had more veggies and a bit less rice. I love seeing the story of El Fat Cat. I tried their initial brick and mortar effort and loved the fusion idea they were doing and recognized their above average home made salsa bar....Sadly the location was not optimal and they had to reboot. In the last few years, they have settled in as a food truck that has a set location. They have been recognized nationally now as one of the best food trucks in the state of washington. I have been regularly eating here throughout the years and love their burritos and tortas. The farmer burrito is literally 5 pounds and the largest burrito I have ever had. The food from here is always so fresh and delicious, it's hard to choose which of my favorite food to order. They are very friendly and always want to make sure you are happy. They are great with communicating on Facebook when they are out of food or have closed early due to extreme heat. That reason by itself shows how great they are. When they make a fresh huge batch of clam chowder and run out by 1 is a good indicator that it's awesome. My favorites are Scary Roy Chilada and it's not as scary as it sounds with habanero salsa. I don't like too hot of food but this has a perfect zip and a nice crunch. The others are the figi mango chicken tacos, and farmers burrito. I don't even want to try the burgers which I've heard are amazing but it will be even harder to choose when I go there. I drive from Pasco which is about 20 minutes specifically just to eat there.
