I understand that protein carries a high food cost, especially in the current market. However, a more effective approach might be to balance the menu engineering by leaning on lower food cost items, like seasonal sides or creative vegetarian options, to offset the expense of sourcing and correctly preparing higher-end brisket. This would allow for a better product that justifies its price point, covers its own cost, and ultimately helps the company's bottom line while maintaining the quality standards this town deserves. There was a lot of flying debris from around the creek due to someone down the way doing outdoor maintenance.
