if you don't know what Ethereal means then don't offer a review because this restaurant truly is Ethereal. The decor is what you first experience and you wonder can the rest live up to the beautiful decor which is awesome! The atmosphere is terrific and the restaurant can be a little noisy but the construction keeps the sound to an acceptable level! The service was the next challenge and Sebastian lived up to the name - not rushed and knowledgeable about the different menu items. Likewise when my wife went to the restroom someone took her napkin and folded it awaiting her return! Maybe a little item but it showed how much went into making this restaurant above any other restaurant i've experienced in Florida! The food the final test for us coming to a new restaurant- I had the beef tartare and my wife the peach salad both beautifully presented with a perfect complimentary "sauce". Then the lamb chops for me - wow tender and with a sauce which they should market retail as beyond anything I have ever tasted - my wife the steak frites which was tender and perfectly cooked- not as a criticism but a s a suggestion it could have been presented a little warmer! The wine we had was reasonably priced which clearly is different than many restaurants try ing to make money off the "liquor " at Ethereal they want you to enjoy the complete experience! Ethereal is unlike any restaurant in Delray Beach... or anywhere. After my first visit, I had to go back to make sure it wasn't just a dream. From the outside, there's little indication of what's waiting for you. It's a relatively simple, modern exterior in a quiet location... then you walk through the door and enter another world. The room is fantastic... imaginative, dramatic, whimsical, almost fantasy-like. Everywhere you look there's something interesting that catches your eye... and each piece is made with exacting detail. Clocks play a starring role, including the enormous moving clock behind the bar. It's hard to imagine all the thought that went into this project... there's so much to take in. But somehow, it all works... the entire space feels like one large piece of art. What makes it even more interesting is the story behind it. Owner Nick didn't simply hire a designer and tell him what he wanted... Nick is the designer. This place is the culmination of ideas and inspiration gathered throughout his professional career. And when you realize that he designed and manufactured everything in the place himself, you begin to understand that it's probably the only way a place like this could happen. After meeting him on my first visit and spending more time with him when I returned, I began to understand what Ethereal really is... it's Nick's dream. OK, the space is amazing... but how's the food? Thankfully, the fantastic chow from Chef/Partner Estuardo Mira fits perfectly. Chef Mira has put together an interesting menu with a personality of its own. Playful dish titles, but his philosophy is straightforward... use quality ingredients and, as he says, "let the food speak for itself." I like that. I had a chance to speak with him on my second visit, and this is a chef who's passionate about what he's doing in the kitchen. I'm glad he and Nick found each other. It's a real family affair, with their wives and Nick's daughter involved in the project as well. On my second visit I had the Steak & Frites (9.2)... a beautifully prepared center-cut tenderloin with a fantastic au poivre sauce. The accompanying Frites were nice and hot with just the right crispness. Interestingly, the menu says this dish was Nick's personal request. Trust Nick on this one. There were plenty of hits on my first visit as well. The Tequila Lime Mahi Taco (9.0) on a housemade blue corn tortilla was great, and the Le Tartare (8.5), hand-cut prime beef with shallots and Dijon, was very good. I wasn't as excited about the Holy Crab! (8.0). They were well executed and loaded with crab, but I prefer a more classic style of crab cake. One of the diners sitting nearby loved theirs... so there you go. And don't overlook the sides. The Elotes Locos (9.8)... charred corn, chipotle mayo, Cotija cheese, cilantro and lime... was sensational. Perfectly cooked, messy and absolutely delicious. The menu says, "Extra napkins on the house." You'll need them. The wine choices worked for me too... ZD Chardonnay (9.2), one of my favorites, and The Critic Napa Valley Cabernet Sauvignon (8.8). I sat at the bar on both visits, where Josie took excellent care of me. There's an awful lot going on at Ethereal. A place this over the top could easily feel pretentious or intimidating... it doesn't. I think a big reason is the warm, personable and welcoming nature of the staff. They make you feel comfortable. For all the spectacle, Ethereal is surprisingly laid-back and fun. I've written a lot of reviews over the years... Ethereal is a hard place to put into words. You really have to experience it to understand what's going on here. There are restaurants you enjoy... and then there are places you just can't wait to tell people about. I didn't have to wait long to order a drink at the bar, and the bartenders were extremely attentive. The food was delicious, and the presentation was absolutely immaculate. I actually had to redownload Yelp just to write this review. Honestly, this was not one of the best dining experiences I've had, and I've eaten at quite a few different restaurants. I normally don't take the time to leave reviews, but I felt this experience was worth sharing. Unfortunately, the drinks were not very enjoyable. I ordered a pineapple-based drink, and the flavor was extremely unpleasant. It was honestly difficult to finish. For food, I decided to order three appetizers rather than a full entrée: the 302 tacos, bacon, and mini lobster rolls. The bacon was noticeably undercooked and very greasy. I understand that bacon is naturally fatty, but this was more than I would have expected. The mahi tacos were probably the biggest disappointment. After the first bite, there was a very distinct fishy flavor, followed by an unexpected earthy undertone. The flavors simply did not complement each other well, and the overall combination was quite unpleasant. At this point, I was already very disappointed with the meal. I ended up taking the mini lobster rolls to go because I was ready to leave and haven't even had the chance to try them yet. Unfortunately, the experience was disappointing enough that I left and headed to Burger King afterward because I was still hungry and needed to find something I actually enjoyed. I genuinely wanted to like this place, but based on my experience, the food and drinks simply did not meet my expectations. But I will say the atmosphere was very pleasant. Though, while I was exiting the booth to go to the bathroom I received a large cut through the back of my lower leg over my achilles from a nail or wire poking through the booth. We recently visited Ethereal in Delray Beach, excited to try a new restaurant. Unfortunately, our experience was disappointing enough that we have no plans to return. We are more than willing to give a new restaurant the benefit of the doubt. We understand that opening a new place comes with challenges, and mistakes happen. What was most surprising, however, was that despite multiple problems throughout our evening, not one manager came to our table to apologize, acknowledge the issues, or ask if there was anything they could do to make things right. We ordered a bottle of white wine that arrived at essentially room temperature- Florida room temperature. When I mentioned this to the manager, I was told, "We just got this bottle delivered, so we didn't have time to refrigerate it." That may explain the situation, but it certainly doesn't make it acceptable to serve a bottle of white wine that isn't properly chilled. They had already poured three large glasses without offering me a taste first. After I objected, they agreed to chill the remainder, but I explained that wasn't acceptable and requested a properly chilled bottle. It took approximately 30 minutes to receive another bottle--and that bottle wasn't properly chilled either. We also had a side dish that was simply forgotten. Then, when my whole fish arrived, it was not cooked through and had to be sent back to the kitchen. Again, had someone from management simply come over, acknowledged what was happening, apologized, and said they were working to correct things, we would have been much more understanding. Instead, despite clearly knowing that our table was experiencing multiple problems, no manager ever came over. When we received the check, we were charged the full bill, with only a credit for the potatoes that were never delivered. Given the delays, the wine issue, the missing side, and having to send back an important entrée because it was undercooked, I would have expected management to at least acknowledge the experience and offer some gesture of goodwill. Nothing was offered--and, more importantly, nobody even apologized. For a brand-new restaurant trying to establish itself and build a loyal clientele, that lack of attention from management is what I find most disappointing. Mistakes can be forgiven. Failing to acknowledge them or make any effort to take care of your guests is much harder to overlook. Unfortunately, based on this experience, I have no intention of returning and would have a difficult time recommending Ethereal to others. read more
