Not going to lie, first experience here was not great. It was shortly after opening and we chalked it up to it being new but we still had not been back. Our experience yesterday was completely different! Blown away by how great everything was! From the staff to the food- zero complaints. We actually came today after I made a mistake in planning a group social at a different brewery. We pivoted and came to Evolve and of course, it was packed due to the FIFA World Cup. When I said we needed an area for 20+ people, the hostess did not laugh in my face, but smiled and said "I cannot get you in right this second but I just know we will have the space when the game ends if you don't mind waiting until then". She was so sweet and accommodating! I'm sorry I didn't catch her name. So we waited and as we waited, a server (I believe her name was Stephanie) came up and started taking drink orders while we were still standing in the lobby! First of all, talk about great customer service! But secondly, from a business perspective, talk about a great employee. She saw a need and money being lost and took it upon herself to increase your sales! Impressive! Once we were seated our service was turned over to Jordan... 12/10 recommend! Jordan was FANTASTIC! He took excellent care of everyone, remembered names, gave exceptional service and all with a smile on his face. We could not have asked for a better experience. We were so grateful to the whole staff, including management, for the welcoming, hospitable and outstanding service we received. Thank you so much! This was our first time at Evolve Brewery which was formerly Aces and Ales . Kristin helped us at the bar , she was so sweet and helpful . We had the jalapeño poppers that had applewood bacon wrapped around them , comes with 4. We also had the chicken tenders , also 4 pieces and the chicken was so tender !! Beer wise I have the Evolve wheat beer , it was good , my husband had the Pizza Port /Evolve -Colab beer which is an IPA , and who doesn't love Pizza Ports beer . The brewery has been there about 1 1/2 years . They have trivia nights , beer club you can join, we went for happy hour today so $2 off apps and beers were $6 I believe. read more

Each person must buy a brunch entree + the $25. Personally, to me it sounds like a good deal because I read on the back of their menu that their cocktails were $15-$18 each. If you drink 2 beverages off the Retox Menu, you basically drank $25 worth. Anyways, your entire table/party needs to agree to the $25 All You Can Drink (similar to AYCE places), makes sense. I wanted to try their drinks but my party didn't want to drink so we all agreed on food only (sadly lol). I will need to come back again to try this! Food was delicious! Avocado Toast and Slayer Skillet were both great. I would order the Slayer Skillet again as it was very tasty. Pickle Chips were gross. I almost never give bad reviews but I need to tonight. I can't comment on the brew side because I don't drink these days but I have always loved Brew Pub food. Service was fine. I ordered the House Mac with Bacon and my wife ordered the fish and chips. The Mac came out almost cold with the cheese already congealing and the pasta tough. It came out in a Cast Iron serving skillet so I have no clue how it could be so cold. Of course I asked the waiter to please take it back and bring me hot food. He said no problem and came out around 10 minutes later with the Mac this time in a square serving bowl. Just as cold as before. Also completely tasteless like salt wasnt allowed. I just nibbled and asked for a to go container figuring I can add some spice and heat it up at home. The Fries with the fish were very good, the fish was just as tasteless and completely without any salt. No condiments at all on the tables so we even had to ask for ketchup for the fries. We met some friends from out of town at Evolve back at the beginning of April. I've been slacking on getting my reviews up on time, so its coming now. Evolve is a newer brewery, but its by Aces & Ales, who we've liked for a long time, so we knew we'd have a pretty good time here. Service was great. We were helped out by Stephanie (Stefani?), and she was super attentive, friendly, and very helpful. We all had a few drinks, and I will be honest...the best beers were not the ones that they brewed. The Evolve beers were fairly underwhelming for all 4 of us. They make a pretty stellar espresso martini though!! Its hard to find a proper one in town, and this one was outstanding. For the food, I ordered the Ahi wrap deconstructed into a salad. It was HUGE and absolutely delicious. Morgan ordered a steak sammich, and we got the mac and cheese to split. Everything was really tasty. We'll definitely come back for the food, and maybe to try some more of their beers when the season changes a bit to see if they have better flavors. I came here with my friends to watch a golden knights game. The place did get pretty packed, but it's a large enough space so you don't feel like your sardines. We sit at the high tops and the waitresses. They were really helpful and attentive. The beer selection is amazing and extensive. I was able to explore around and jump around and see what types of beers they had with recommendations from our waitress. The food is so good just overall a very great experience. read more

After seeing a reel on Instagram, my husband actually planned a brunch day with all of our friends to meet up here for weekend brunch! And so glad we got to experience this. What a cool spot! First of all, our server was Leilani and she was OUTSTANDING! I feel so bad, we definitely confused her with the separate checks, and then kept adding more people to our group to the point where we eventually moved outside to the patio. And she didn't even bat an eye or seem annoyed at all. She even helped us move our food and drinks outside for us, too. She seriously was the BEST server I have had in a really long time. Hats off to her for giving our big group such incredible service. Inside, it's so cute in here. They have bar seating and then there is also seating for families, too. They even have some games that you can take and play, too. It's HUGE in here. The menu selection is also amazing. The beer bites were our fave and we ordered two of them because they were that good. I got the breakfast burrito, which was pretty good but sadly I'm not into eggs lately so that was my own fault for not eating the entire thing. BUT it was really tasty! Even though I'm not drinking right now, their beer selection is awesome. They even have a beer with Freed's and with Mothership, which are some local businesses in the area. I had seen a video of Evolve's Prime Rib sandwich so this prompted me to go try this place! It's located on the ground floor of a newer mix use retail/restaurant complex. Evolve has a lot of room in side with a pool table and sofa, high top, and bar seating. It's spacious! We took a seat at the bar and the bartender was very friendly and greeted us not long after we took our seats. We first ordered the Prime Rib sandwich. It's a very good portion and the prime rib meat is really nice and tender. The au jus dip was also tasty. The fries seem to be fresh cut and it had the perfect crisp bite to them. After 9pm there is Happy Hour where pizzas are half off. The bartender recommended the BBQ Chicken Pizza. We tried a small 10" pizza. The dough is really nice - it's fluffy. The flavors were pretty good - but it's not a great pizza. It's a pretty good pizza. One thing you can't beat is it was only $10! read more

First time in came to see my team play. Place is awesome! So many TV's Great Brews and Food! Leilani is a great server! Met some friends here on a Saturday night. The space is clean, open, very big, well divided, and nicely decorated. The staff are kind and knowledgeable. We ordered several cocktails and mocktails. Only one margarita we were not a fan of because there was not enough coconut flavor but they immediately got us a new cocktail without a problem. The food was very good and the table favorite was the loaded fries. The fries stayed crisp and the cheese sauce is delicious. The large pretzel also has a delicious cheese sauce to dip. The pretzel was soft and perfectly baked. The nachos were good until they got cold and the chips got soggy quickly but the chicken that was topped on it was tender and had good flavor. The service was exceptional, thanks to our friendly and knowledgeable bartender, Kimberly. We decided on a beer flight, and Kimberly expertly guided us in choosing 2 Towns Cider Pacific Pineapple, Evolve Bright Eyes Strawberry Lager, Evolve Smack Talk Fruited Sour, and Sierra Nevada PILS for our selection. Both the food and beer menus have something to that is sure to please almost anyone. The French dip sandwich was massive and absolutely delicious--easily one of the best I've had in town at a bar since Bogey's. A new brewery in town! Come check out Evolve Brewing by Aces & Ales in southwest Las Vegas, right across the street from IKEA. The building layout where Evolve is in reminds me of a very similar building layout in Oregon, where we also visited a brewery there. This layout includes a little courtyard in the center with other businesses surrounding it. The entrance can be found around back from the parking lot, which is just a short walk away. We walked in and we were seated right away. While the dining area wasn't too busy, the bar area was completely packed with every seat taken. A wide variety of college football games were on at the time and many people came down here to watch them. Kyle prefers the dining area over the bar area when we go out to eat, so this was just ok for us. Pool tables are available if you're looking for some fun while you eat and drink. They have a pretty decent number of alcoholic drinks. Since I'm a fan of fruity drinks, I got myself the Evolve Bright Eyes Raspberry Lager. Our waitress told us that this was a good choice for the sour lager lover in anyone. Kyle also got himself a fruity beer, which was the Evolve Sticky Finger$ Pineapple Fruited Sour. And yes, there is a dollar sign included on the word Fingers. The Bright Eyes had that tarty, sour-like flavor to it, like I was drinking a sour candy, and I ended up finishing it before we left. Kyle enjoyed his Sticky Finger$, but also said that it wasn't that sour like mine was. We considered going for another round of drinks, but Kyle started feeling unwell towards the end of our meals (related to the recent weather change that day), so we just stuck with one drink each. For food, we shared an appetizer of Wisconsin Cheese Curds (a somewhat rare find for us). The waiter recommended that we air fry them in the case we choose to take them back as leftovers. And he was right - leftovers taste a lot better when we put them in the air fryer! Our entrees were beer battered fish and chips for myself snd the house mac on crack for Kyle. The fish and chips were good but a little bit on the oily side, which was a little messy. When I decided to take it back with me, the basket of fries (aka chips) was just endless and kept going and going. The house mac on crack was basically a cheeseburger served inside of a skillet. This was a great place to visit! Next time we come back, I want to sit on their very spacious patio, depending if the weather will still be nice. read more

We stopped by on a busy Sunday for lunch, beer and to watch some football. The place was packed for the 1PM games as we expected and the vibe was energetic and fun. The open dining area had plenty of space and tons of TVs hosting all the afternoon NFL games. It's loud but you can still definitely carry a conversation at your table. The glass windows keep the restaurant bright and your energy up but you're still staying cool. Ahi tuna wrap - Very fresh all around, but special shout out to the wasabi aioli that really worked with the Ahi Tuna. Sweet Potato Fried- my safe side dish order were all good. Cheese Curds - I sampled my buddy's, and they were fantastic. Absolute must order for my cheesey peeps. Onion Rings - Crispy and everyone enjoyed. Service: Our server and bus people were awesome. I felt so bad for them, they were severely understaffed during a known peak time. We had to ask for utensils and had to wave down our servers to get updates on our dishes. They tried so hard to cover so many tables but were put in an impossible situation. I don't know if people called in that Sunday or if there was a scheduling issue, but I did appreciate their positive attitudes under distress. The dishes were great, staff was awesome. So we LOVE a good brunch deal and I had to try this place out. It's $25 bottomless mimosas, Bloody Mary's, house wine, and draft beer with a purchase of the entree. I went with the mimosas because the house wine options were your typical red and white options, Chardonnay and Cab. The mimosa came out in a stemless wine glass to my surprise with a flight of juices to complement it, which I enjoy because I'm not a fan of the classic OJ. I ordered the chilaquiles because that's a fave of mine and haven't had it since moving here and they were so good I finished the entire plate. Cut right to the chase. I would probably go back but would definitely make sure there isn't a sporting event like an NFL game on. Went Saturday night during NFL playoffs and they absolutely were not prepared. The wait for a walk-in table was only 25 min. We were fine with that. The. There was the wait for someone to acknowledge we were there. Interesting setup. They have drink servers, an order taker, and food servers. I certainly hope they split the tip appropriately because we had more interaction with the food and beverage servers than the order taker. Overall, they seemed completely overwhelmed. Additionally, they were out of the two house made beers that I asked for. Food...deviled eggs had zero flavor and were terrible. Fish and chips had a very thin breading which was great. Too bad it had zero seasoning. Bacon bombs were spectacular. Pizza was good with a great thin crust. Turkey wrap was huge with about 1/2 a head of lettuce in it. It went uneaten. The french dip would have been a 5 if some of the salt from the au jus had been used in the other dishes. While I was really happy to be able to get their delicious and crispy onion rings, I was a bit saddened that the beer selection was dominated by the house brand. One of the charms of Aces and Ales was the availability of unique and hard to find beers. Service is friendly, but the overall location does feel a little bit sparse, especially away from the bar area. The tables are spaced a little oddly and lack any distinctiveness to them. Lastly, prices for the food have gotten a bit steep, especially for bar eats, as good as they are - though nothing too egregious. Just worth noting as a dinner for 4 can easily approach the $100 mark without drinks. read more

Had a mixed first time experience here with my coworkers last week. Our server was Leilani. The food was great, large portions and the drinks from the bar were delicious. The Brussels sprouts are so great!!! The service on the other hand wasn't great. It wasn't busy but the server took a very long time to greet our table, and didn't seem to care much about checking in with us as she was more attentive to the other couple tables. When we mentioned we were finished up with everything it still took her a long time to bring the bill, then never brought a receipt. She wasn't very friendly or helpful. It was very bizarre, after standing at our table waiting for the server who never came back, I ended up having to ask the bartender who was kind enough to print out our bill.
