A French artisinal charcuterie with a delectable array of sausages, pâtés, smoked meats, and extremely fine foods, like duck prosciutto and truffle butter. Enough said, right? Well, how about the fact that Fabrique Délices (a U.S. subsidiary of SAPAR) is based in the East Bay and uses local producers, like Niman Ranch, for many of its offerings? And they sell their wares at a wide variety of farmers' markets in the region? When you put this all together, it makes FD an outstanding source of delicious meat products sure to amp up the flavor in your life and bring out your inner carnivore. After passing by their stand at the San Mateo farmers' market for many months, we were finally lured into trying Fabrique Délices at the Saturday market in Half Moon Bay. Maybe it was the sunny skies and cool breezes, maybe it was the friendly salesperson, maybe it was the light crowds that morning. Whatever the reason, we stopped and sampled. Superb! There was so much to choose, but we settled on a French dry salami (saucisson sec, $11) bursting with rich tastes of pork, fresh garlic, cracked pepper, and sea salt. Sliced thin and served as an antipasto platter with even more cracked pepper and some cornichons, it is out of this world. It makes a great weekend lunch or light evening meal with fresh radishes, tomatoes, cucumbers, mixed greens, and a glass of wine or beer. My first encounter with FD will definitely not be the last, as their catalog of offerings is simply too good to pass up. Next on my "wish list": their smoked duck breast, the chorizo d'España, the Rosette de Lyon, and their Merguez lamb + beef sausages. I am also tempted by their natural pâtés and the sausages made with game (rabbit, wild boar, venison). All in moderation, and all in due time. If you eat meat sparingly, as I do, you want these indulgences to be memorable. The French chacuterie tradition practiced by FD may well be your ticket to bliss. read more

It's topped with aspic, which might not be everyone's thing but you can flip it upside down to avoid eating it. Two 7 oz. containers for $12! I was meeting at my clients' home and they have these delicious Pâtés out by Fabrique Delices... and my goodness, they were so smooth and delicious. I'm no food critics so I am out of vocabulary to describe how good they were. I just have to find a place who sell it. According to my clients, they bought them in San Mateo farmers market. I recently bought some White Truffle Pate & Black Peppercorn Pate at the Whole Foods in SF. I noticed that the Pate was locally made in Hayward, CA. Homemade Pate from Hayward, CA?!?! I was scared to say the least. I was pleasantly suprised. Both pate's were heavenly, and rich with fatty, rich, livery, goodness. Find these fine French folks at your local farmers' market and enjoy the amazing menagerie of meats. Spanish dry chorizo. Fresh cured coppa. Duck prosciutto. Duck terrine. Pork rillettes. Pates. Duck fat by the pound. Truffles all around. Some of the pates and rillettes can be found at local Whole Foods as well, but you need to go out and meet the makers, taste their samples, and stock up on vacuum-sealed goodness. I'm in love with Fabrique Delices! They totally hooked me up with some awesome duck salami, prosciutto, and pate. I planned a nice picnic for my fiance's birthday but couldn't find any duck charcuterie at my local shops. I emailed the owner, Marc, who said I could call the Hayward headquarters to place and pick up my order. I braved some nasty traffic on the 880 during rush hour and got lost in the boonies of Union City/Hayward, but it was SO worth it! As soon as I arrived I was handed my order, which was nicely packed in a box with a cooling gel pack to keep my loot fresh. SCORE! I ordered a five pack from WOOT, it was fantastic! I got one jar of delicious perfect cornichons, 2 jars of duck/pork pate, and 2 jars of duck rillette. They were so incredibly good. We opened the rillette and the cornichons and a box of crackers, and never even made it to the table, we just stood at the counter eating out of the jars. I'll definitely buy more of their products. Outstanding! I love french food and the selection is amazing. We tried boudin blanc , merguez, faisan sausage , pate , everything was good. it remind us our trips in France. I am so glad I found those products at the Lakeshore farmer's market in Oakland (open all year long every Saturday morning.) One of the few sources for real French delicacies in the Bay Area. Love cooking with their duck fat. My guess is that many restaurants serve Fabrique Delices products on their menu. Only a few French restaurants, like Bouchon or French Laundry, actually make their own fois gras. French food is not cheap eats, but Fabrique Delices prices are more reasonable than most. Living in Paris part of the year, I'm very spoiled when it comes to pates, saucisson and then I found Fabrique Delices at the San Mateo College farmer's market.
