They are slow smoked for 8 hrs, then flash fried just prior to serving and drizzled with a Spicy White Sauce. These might be the best ribs in the city! We shared a bowl of the Potato and leek soup. Another round of cocktails and we enjoyed entrees. Nick had the Short Rib with mashed potatoes and broccolini. I had the Filet with mashed potatoes and asparagus. Both of our entrees were great. Nick's was definitely our favorite. That Short Rib was amazing. Alan our server suggested a Strawberry Flambe for dessert. He is the only server who does this amazing dessert and it is a table side presentation. It was delicious. The smell of the melted butter and brown sugar, the Flambe of the bourbon and the dash of toasted cinnamon. I wanted a sampling of the menu so my party of two opted for small plates - the bleu cheese and fig jam toasts, roasted beet salad, and mussels were on the menu for us. You are also served with table bread with a Parmesan sauce that was phenomenal. I might order a different small plate besides the toast next go-round. Somehow we managed to snag the only open space right outside the front door, which felt like winning a very specific Louisville lottery. We arrived a few minutes before our reservation and the place was already buzzing. It was packed with locals, which is usually a good sign. While our table was being bussed, three different employees checked to make sure we were being helped. We let them know we were just a little early and waiting on our table, but it spoke volumes about the attentiveness of the staff. The atmosphere is exactly what you want from a neighbourhood pizza spot: relaxed, lively, and unpretentious. The soundtrack quietly floating through the speakers was a crate-digger's delight, full of songs that have been sampled throughout hip-hop history. Hearing Lynn Collins' Think (About It) while waiting for dinner felt particularly apt following the recent passing of Rob Base. The song's iconic break became the foundation of It Takes Two, one of hip-hop's most recognisable records, and it was a nice reminder of how deeply great music connects generations. To start, we ordered the Olives & Togarashi, a bowl of Castelvetrano olives coated in a wonderfully aromatic blend of spices with notes of fennel, sesame and citrus. My son tried his first olive and was genuinely shocked by the flavour. He'll come around eventually. For the main event, we ordered three large pizzas: the DOP Margherita, the Funghi and the Original Sting. The DOP Margherita showcases imported buffalo mozzarella from Campania alongside basil and San Marzano tomatoes. The Funghi is loaded with an incredible blend of mushrooms, taleggio, pecorino cream and mozzarella. The Original Sting combines soppressata, fresh mozzarella, basil, tomato and spicy local honey in a sweet-and-savoury combination that completely works. Now, let's talk about the crust. It is perfect. Pillowy and light, yet substantial enough to give you that satisfying chew. The wood-fired oven creates just the right amount of charred bubbling around the edges. Our server offered house-made ranch and other dipping sauces for the crust, but we politely declined. This pizza doesn't need any enhancers. The balance of flavours across all three pies was exceptional. I've eaten pizza all over the world, and Pizza Lupo belongs in that conversation. It really is that good. We had a plan: sample all three pizzas and leave just enough room to split the tiramisu. Thankfully, we stuck to it. The tiramisu was fresh, light and beautifully balanced. Not overly sweet, nicely moist, with just enough espresso flavour coming through. It was the perfect finish to an outstanding meal. The service was fast without feeling rushed, friendly without feeling scripted, and genuine throughout the evening. There is a small bar area and an area of table seating. Outdoor seating is available as well. The bistro is known for one of its appetizer small plates of deviled eggs. The owner said that the recipe for the eggs is one of the few things he is not wiling to share! Employees and patrons have drawn pictures of deviled eggs that are displayed on a wall space. I opted for the grilled chicken Greek salad. Greek salad is a favorite of mine and I have eaten it from numerous restaurants. By far, this was the best I have ever had. The artful presentation, fresh ingredients, and decadent flavors were a real treat. The chicken was so tender and again, the flavor bloomed in my mouth. The owner brought out a small serving of homemade peach ice cream that had been made the day before with fresh peaches. I simply have no words for how delicious it was. I will let my husband describe his experience in his yelp account, but I will say that after having salmon the night before at an 'upscale' restaurant in Louisville, he commented that the salmon at this bistro "blew it away!" The bread pudding may have been the best bread pudding I've had in a restaurant - it was very moist but wasn't too sweet or too rich. The chocolate cake was kind of like an oreo cake with the thick vanilla frosting and cookie crumbs - not your generic chocolate cake with white frosting, but conventional enough that I think it would make anyone happy. Maybe the portions of the entrees alone are a little small, but I think they were the right size to enjoy along with a shared appetizer and dessert.
