Firehole is a very no frills, casual counter order restaurant but the meat was unbelievable. The staff were friendly and helpful. Came for dinner and the line was to the door. I like that they dont allow people to save tables must order f¹irst then sit. You order at the counter and get your food at the same time when paying. We ordered a full rack of ribs and a pound of juicy brisket. Sat outside to eat. The brisket was juicy and delicious but could use more sauce. Idk the BBQ sauce on the table isn't the same as the sauce on the brisket . The ribs were good too. Reheating isn't very good though for the brisket. The ribs were still good reheated. Firehole has the BEST BBQ in town.. It's not very flashy and is very hometown feely but my oh my the flavor is all there and they pack a BIG punch. Everything on the menu is served with a heavy hand and Id come back here at any given chance. The price point is very affordable and the ambiance is very charming. We went in the evening and the only meats were sausage, pulled pork, or turkey. I didn't order any of these since I don't really consider this BBQ. Instead, I got sides of a plain baked potato (they wanted to charge another $7 for like a spoonful of meat) and corn salad. The potato was drenched in butter unfortunately. There was a line , but it moved really quickly. Ordering was easier than usual because the people behind the counter were so helpful and kind. We ordered half rack of ribs, brisket, loaded potatoes, and a pork sandwich. The corn, Mac n cheese and beans were really tasty. I don't usually go crazy for even the best BBQ in our town , but the flavor profile at this place was buttery, salty, sweet and spicy in the best way possible. They left the sides less salted to balance the salted flavor on the meats. So at first I was really annoyed they didn't have online ordering. I mean come on even the mediocre pizza place had that. So I drove my lazy butt the few blocks to the place and realized why. There was a fairly long line, but they have a system. One person takes your order then two others set up the plate while the first person prepares your meat and then another person finishes your plate and ANOTHER checks you out. The whole thing took maybe 7 minutes. The brisket was gone so we didn't get that but we had the pork and turkey sandwiches and a half rack of ribs which were all very good. Their sauces are a little mild for my taste, but good nonetheless. The coleslaw expert tells me she loved the coleslaw. Definitely worth getting dinner here. Side note - I was so impressed I told them they were awesome and they really seemed to appreciate it. When people do a good job we should take a moment to acknowledge that. I'm so glad that we had a chance to try this place during our Yellowstone NP trip. Get there early because they tend to sell out FAST. We got there a little bit before they opened and already had some people waiting outside. They have your typical meats that can be ordered by the lb or 1/2 lb: brisket, pork + ribs, and sausage link. They also have a few sides to pick up. We ended up ordering brisket and ribs with cornsalad and coleslaw. The brisket was so TENDER and juicy, hands down one of the best briskets I've ever had. The pork ribs were so tender too, the meat just ribbed right off the bone. Their in house spicy bbq sauce made it mouth watering.. Wish I had ordered more brisket to bring back to LA. We had the brisket, baked potato, which was a very large portion and delicious 5/5 stars, brisket sandwich 5/5, pulled pork sandwich 5/5, buffalo sausage 4/5, and a side of coleslaw and pinto beans. Amazing bbq! Our family got pulled pork and brisket and all 4 sides. Our family has raved and raved about how it was some of the best we've had! I'm really picky on Cole slaw, but it was perfect. After reading reviews and getting a recommendation from a local, we stopped by and realized that this spot was also on Diners, Drive Ins, and Dives. Located in West Yellowstone off of Firehole Ave, next to a gas station, you'll find a spot with delicious BBQ. We walked in and stood in line to order. We ordered Brisket sandwiches, which come on a hamburger bun with pickles and onions on the side. The friendly staff asked if we wanted juicy or lean. We ordered one of each. We also added a side of coleslaw, mac and cheese, and corn salad. The brisket was delicious! Not liking fatty meat, I chose the lean, and it was still tender. The meat had a smokey flavor that was seasoned well. Add the BBQ and hot sauce on the table for even more flavor. I wasn't a huge fan of the hamburger bun. The sides were interestingly good. Wow, wow, wow! When I saw the server grab the brisket and that meat "jiggle" I already knew I'm in love. They hand cut and weigh each order, the smoke and seasoning is perfection, the mac and cheese is a delightful 'death by dairy', cheesy goodness with a touch of spice rub in it! Oh my! This was definitely the highlight of my Yellowstone trip! I saw that it was on the Yelp top 100 BBQ places, and I was going to be in the area so it became my mission to stop here. This places deserves that status in the article because it has a line out the door non stop. When we went there was a line and every time we drove by there was a line. The line does move pretty quickly and by the time you make your way to sit down there are tables available. We got the ribs and brisket and they were both tender, juicy, and delicious!! My favorite was the ribs because they were fall off the bone and you could still taste the dry rub under all the juices. I got the brisket on my baked potato and drenched that in their hot bbq sauce.
