Their bagels are inspired by both New York and Montreal styles, giving them a perfectly chewy texture with just a hint of sweetness. I ordered the Thunderbird, and as someone who normally avoids both salt & pepper bagels (I know...weird) and sweet-and-savory combinations, I wasn't sure what to expect. Turns out I was completely wrong. The maple chicken sausage, fluffy bodega-style eggs, melty American and cheddar, spicy honey, and maple salt & pepper bagel somehow create the perfect balance. The pastrami was tender and flavorful, the eggs were cooked perfectly, and the spicy honey added just the right amount of sweetness without stealing the show.
