We tried this location for the first time and it was really disappointing. We ordered to-go or I would have said something there. My order was a beef brisket and cheddar. Normally a terrific sandwich. The amount of meat was SO little it was almost comical. My husband even offered some of the meat from his sandwich. Ordered a hook and ladder salad to go and when I got home, only one half tiny cup of dressing for a huge salad! I order this all the time at the West Hills location and always get two dressings without asking for extra. Have to wait until the next day to purchase a bottle of dressing so I could enjoy my salad. When I opened the container, the meat was clumped in huge, non cut slices like you would have on a sandwich. Also got a cherry limeade to go and asked for lime slices and was told they didn't have any. I'll be getting my next Firehouse order from Knoxville to bring home with me. On 1-2-24 was there with my daughter... I counted 12 employees in a not so busy restaurant.... However, only the young lady at the register and one other person were actually doing anything, while everyone else was standing around doing nothing while customers were waiting on the orders. I could hear the staff asking each other about orders that were not made....Obviously terrible management here and the food has gone downhill as well. We ordered 3 sandwiches to go. My sub was wrong and had totally soaking wet bread. This is the second time that's happened. It was a fully involved Hero plus banana peppers and black olives. There was no onion and no tomato. It had just a couple pieces of pepper (3) and maybe 6 slices of black olives on an entire medium. It tasted abnormally sweet. Like it has honey mustard on it in addition to the honey ham. The pickle was actually brown and bad. Tasted horrible. My fiance's large steamer was ok but I asked for extra pickles. He got just one, and it was extra small. It was also brown and bad. He spit it out. My mom's hook and ladder was ok but she didn't even get one pickle. My wife and I went into the store for meatball day. The staff was friendly and nice. We went for dinner to get a meatball sub for my wife and chicken meatball for myself. My wife's meatball was good. She enjoyed it. First bite into the chicken meatball was cold. I felt the other meatballs and they were all cold. I took it back up front and they apologized. They offered a refund or a new sandwich. I asked just for a new regular meatball sub like my wife. They brought it out about 10 mins later and after the first bite, it was nearly the same as the first, only slightly warmer. I'm so happy they put in a firehouse subs in Maryville!!! The only problem is the parking lot is not big at all- making it a pain to get in at lunchtime but its worth it. I love their meatball subs. C ordered an Engineer and I ordered a Steamer. We hoped that the sandwiches would at least reasonably good. Instead, we got two tasty, no, make that 'delicious' and hot subs. What a pleasant surprise. Admittedly, the white bread was "just okay," but the ingredients were excellent. On the plus side, we were so happy to find that Firehouse Subs uses biodegradable cartons for the to-go sandwiches. A full star for that! The restaurant is clean and the staff friendly. I give it 1 star because zero isn't allowed. Went in at 1:20 on a Sunday. It was busy, but not packed. 5 employees behind the counter. The place is filthy. The people in front of us were complaining about the drink machine being out of order. The employee told them to pick out a bottled drink from the cooler. They only had two options in the machine. They were out of stock of the rest. I figured I'd get Tea. The ice machine wasn't working. We finally order our food and walk to the other end to wait. After about 10 minutes, we ask the lady waiting next to us how long she's been waiting. She said 30 minutes. We go to check on our order, and after 10 minutes, our order was still like the 6th or 7th in line to start making. Just got a refund and left. read more

Walked into firehouse subs tonight around 6:45 and there were 5 people sitting at tables already eating. There was a man that walked in at the same time and I let him go ahead of me. I noticed he immediately left but didn't think much of it. I walked up to the counter and instead of hello or welcome I was told if I wanted to order it would be a 30 minute wait. I looked around and ask why? I was told they were to busy with to go/online orders!!! I then said so those come before someone actually here in front of you in your restaurant and was told yes. So I decided to go somewhere else. So not only did the customer in front of me leave the two families that came in behind me left too. This is a terrible way to do business. What really makes the Hook & Ladder for me is their Firehouse sauce. They call it, Captain Sorensen's Datil Pepper Hot Sauce. It has some heat to it but my 5 year old loves it on pretty much any sandwich. We purchased a bottle for home use or take-out and my son will eat it on grilled cheese and plain bologna sandwiches.
