The menu is tight -- bento boxes, focused apps, nothing that needs a paragraph of explanation. The fried oysters and squid tentacles are mandatory. Non-negotiable. Do not test me on this. Then the subtle flex begins: yuzu, truffle, shiso placed with quiet confidence, mango puree that sounds wrong and tastes right, an Old Bay finish that would make Maryland weep with pride, and a Kalamata olive that has absolutely zero business being this good on a sushi menu -- and yet.
