We visited the Understory and played a few rounds of ping pong. After playing, we were hungry. The only place still open around 8 pm was Flip'n Patties. They are located on the lower floor with big open spaces and shared with other food stalls. I remember visiting the food truck when they are just starting years ago. They have an interesting mix of fusion Filipino food. I remembered liking their food. We ordered the Flip'n Patties burger and jeepney burger. They were huge with a thick patty. For their namesake burger, it also came with a fried portabella mushroom on top. Jeepney burger came with longanisa patty on top and tasted sweet. We were glad that we skipped the fries as we were stuffed after eating those burgers. Both of them are delicious and highly recommended. They also have rice pates with different combination of meats. Service was quick and friendly. We waited for our food at a nearby table. They call your name when it's ready. You also have an option to sit at the counter and watch as your food is made. One can also order a garlic rice dish, chicken wings, or fries! There is plenty of variety. When I dined at Flip'n Patties there were several menu items that were unavailable because they had run out of certain ingredients - aka. Rice and mushrooms. But, what I did order was delicious! I ordered the Puet burger - Wagyuru beef, diced pecan smoked pork butt, sautéed onions, provolone, house blend mayo, and FnP tang sauce. It was flip'n good! Paired with the Flip'n fries (which I got upgraded to a large for free thanks to the Friday special), I had a HUGE and tasty meal. The fries were massive, crisp, and covered in shredded cheese and banana ketchup aioli. Let's just say, I shared with a friend and still had lots of leftovers to bring home. The service was great. Kiko was very friendly, gave us suggestions on what to order and got our food out to us fast! The food hall was pretty empty when I went, but this could have been because it was the week of Christmas. There was plenty of seating. The area was kept clean, but there were cleansing towels to wipe down tables at the trash cans, if necessary. Note: This location is in a food hall downtown in the Bank of America building. Be prepared to either pay for parking in a garage or spend time searching for street parking (which you will still have to pay for at the meter if it is before 6PM). Flip n' patties was one of the few burger places that caught my eye with its uniqueness. They add a Filipino twist to their burgers and have some special cultural diahes as well. I thought their location in memorial was too far but they actually have a location in downtown in the Understory. I didn't know what the understory was before but it is actually really nice inside with a ton of entertainment such as ping pong tables. I got the puet burger which is an akaushi beef patty topped with marinated pecan smoked pork butt, caramelized onions, provolone, mayo, and flip n patties tang sauce. That day I also learned that puet means butt. I got a side of flip n fries as well. They were loaded with shredded cheddar, spicy sauce, banana ketchup aioli, and cilantro. The beef patty could've been more moist but the smoked pork butt was perfection. It added a lot of flavor and was much more tender. I could eat a burger with that to replace my beef patty. The fries were really solid as well. They were cut thick and the sauce was actually a bit spicy. The portion size was really big as well, enough to feed 2 or more people. I also tried the lechon kawali and it was pretty good. It had a crispy exterior with a lot of fat inside and it paired well with the mang tomas sauce. One of my friends got the chicken pupu plate and I didn't try it but it looks like it would smack. My other friend flip rolls (lumpia) and liked it but they thought it was small. Flip 'n Patties is quality Filipino fusion food in Houston. It's not the typical, authentic Filipino food that I'm used to eating, but I guess that's the whole point of it being "fusion." Service is great, and food is very flavorful. We ordered the chicken pupu plate and flip 'n fries. The chicken was crunchy, sweet and was a perfect complement to the spicy, umami fries. Pro tip is to add the chicken on top of the fries to make it loaded and an explosion of flavors. I'm pretty picky about my fries and these fries were the fresh version, like Five Guys/Wing stop fries. They were soft on the inside and crispy on the out. My friend and I settled on the mini kamayan, and like everyone else said, it definitely feeds 3-4 people instead of the 2 people stated on their menu. What a great value! The rice had a buttery/garlicky taste that was oh so good. The different meats within the kamayan all had their own flavors and textures. I was extremely impressed that I liked all of them. My favorite would probably be the grounded patties. The kamayan also comes with a sweet and sour sauce and gravy that compliments the meats. So I'm working downtown now in the BoA tower and Understory below our building in the tunnels has some pretty great lunch options. I decided to try Flip'n Patties as I remember from when they were just a food truck, but never had the chance to try them out. I'm a burger fanatic and have very high expectations. I do try to limit my carbs, but was craving fries this day, so I opted for the burger as a salad and I'm happy this was an option for any burger. I got the Pogimelt salad and my fries of course. The fries were perfectly crunchy on the outside, soft on the inside, salty and just what I needed! My enjoyed the Pogimelt salad although I couldn't finish it. The patties were a bit larger than I usually like, and could have been a bit better with a little more caramelization, but I enjoyed it nonetheless. That's the one thing I'm finding out about these tunnel restaurants, if you don't go early, your choices become hella limited. I was offered extra rice that I don't need or an egg. I tried to get the counter guy to help a sista out with recommendations but I gave up cause he wasn't rude at all but neither friendly either. I just told him to surprise me and he chose extra rice. I ate the plate in the nearby shared seating and it was around 1ish so the bulk of the typical crowd had left. Also, it was a buck off, I think on Wednesdays. Came to Understory with my friends for Tuesday night free lotteria and $1 tacos from La Taquiza. Parking can be validated for 2 hours if you make a purchase after 4 pm! The lumpia were small but crunchy on the outside. Hard to describe the flavor of the filling. The vampries have a garlic salt coverings that was so yummy! If you don't like extra seasoned fries I would not recommend it. I wish they were a bit more crispy but I think the amount and size were worth the price. I made the walk today to Understory to check out this spot. I took a few moments to look over the menu they had posted before deciding whether or not to get in line. One of the entrances to the Downtown Tunnel was nearby, a couple of folks walked out and the dude goes "oh this place is good" and they immediately got in line. After hearing that statement and observing the line grow, I decided to join it before it got too long. I ordered the Chicken Pupu with Garlic Rice and Fliprolls. Lady taking the order asked if I wanted it regular or spicy. I requested spicy. Order was ready in 15 minutes, which I felt was a nice response time. Ate some there and took the remainder back to the office. Meal was good and had some flavor to it, but it was nowhere near spicy. Fliprolls were awesome and I'd definitely order those on my next visit. My meal was nice and filling, at some point I'll make the walk again and try more items from their menu. Also wanted to note (and I may do this next time) that they accept online orders so that your lunch can be ready soon as you walk up. They'll put the order in a bag labeled with your name so that you can just walk up, grab it and go. Not to be confused with the food hall that also has "Under" in its name (Underground Hall) or the food hall that has the same aesthetic as Understory called Finn Hall. When I saw the name, I assumed I was going to Underground Hall. When I walked in, I assumed, "no, I guess this is that other, nicer food hall." Nope to both. This is Understory: copier of names and styles of other neighboring food halls. On a Friday at around 6pm, Flip 'n Patties was the only vendor that was open in here. The burger was delicious I just wish the bun was a little sturdier. After each bite the juices just made the bun soggy and I ended up taking it off and just eating the patty lol. I usually don't put tomatoes on my burger but it slipped my mind. I'm sure that would've helped lessen the juices, note to self for next time. Fries are fat, steak fries and sooo good. For as long as I could remember, Flip 'n Patties has been the white whale on my culinary wish list. I used to go to Downtown Houston for work with the place on my brain, but for some strange reason or another, I would end up somewhere else for lunch. Well, today -- my last day as a thirtysomething -- I finally did it. I finally ate at Flip 'n Patties. And it was worth all those times I put it off because I had died and went to Pinoy food heaven. I pop my cherry with the establishment with an order consisting of a Longsilog Plate and a BAR-B-SKEW App. I admit, I expected to get something that I could consume in less than five minutes (read: small portions), but that wasn't the case. The Longsilog Plate was assembled with a solid garlic toasted rice to longganisa patty ratio. Topped off with a fried egg and a couple of lumpiang shanghai, the meal transported me back to the balmy summer mornings in the Philippines of my youth. Though smaller than the Longsilog Plate (it's an appetizer, after all), the real star of the show was the BAR-B-SKEW. The quintessential Filipino street food was made with lots of TLC. I don't know if it's the marinade or the method of how it's cooked, but each bite was a fiesta of flavor and tenderness. The dude who owns and operates the Downtown branch of Flip 'n Patties told me it's the item he's most proud of. And he should be. If I could, I would order his supply for that day. Haha! I'm aware that Flip 'n Patties started out as a food truck before transitioning to the brick and mortar game. That's usually a sign that people highly demand what the truck has to offer in a sit-down setting. There is a parking garage but we had a whole thing with that and likely won't park there again. Now for the food. We got the mini kamayan, the vampries , and the Flip n burger. The fries were thick cut but soft and airy, with a pungent salty garlic flavor. There were three meats on the mini kamayan: pupu chicken, hamburger patties, and longanisa (they were out of lechon so they added extra chicken). The pupu chicken had an amazing spice mix on it that was earthy and sweet with a nice crunchy fry. The hamburger patties were seasoned with garlic and pepper, I could eat a ton of those. The longanisa texture was so so but the flavor was amazing. All of that on top of the most delicious bed of garlic rice with furikake. We ate it all. We didn't stop there bc we have a problem. We also had the flip n burger with a giant fried mushroom on top. That patty was also well seasoned, fresh and juicy. Don't know what buns they use but they were pillowy and just a little sweet. HEYHEYHEY! So Flip 'n Patties is probably best known for their burgers, and while I applaud their original ideas on the dish, the execution of it is whatever to me. Choice of bun is a bit powdery and patty didn't feel like anything special. I had the Puet burger with chopped pork butt and while it WAS good, I've had better out there. *[inhale]* Now let's talk about the Mini Kamayyan. First of all, do follow their recommendation and eat it with your hands if you're game. My hands feel gross very quickly so I ate it with a spoon lol. Still, that one bite I ate with my hands really elevated the experience. (You're supposed to spin the garlic rice into a ball in your hand, dip a piece of meat in sauce and then have them together at once.) That being said, if there's ONE thing that I'll remember Flip 'n Patties for, it'll be their garlic rice. It's SOOOOOO *beep*ing good! Honestly, the whole kamayyan was smoky and very authentic but in a GOOD way. You can just SEE the Asian auntie behind it even if you ordered it for delivery, yet it never dipped into the "too authentic" land of too much MSG or oily dim sum. Instead, it actually reminded me a lot of cơm tấm (Vietnamese broken rice). Their garlic rice recipe and the "Bar-B-Skews" (without any skews) really contributed a lot to that, and if there wasn't anything else in the tray I'd consider it "cơm tấm but better". Truly Southeast Asian. Oh and the Lechon Kawali is so crispy oh my gosh! Definitely gourmet Chinese BBQ material.
