Good atmosphere, quality food, and sharp service. Definitely a place I'd come back to.

During the last few Denver Restaurant Week events, I've tried to take the offerings as an…read moreopportunity to sample restaurants that I haven't tried, or otherwise may not try, and see if I can add to my list of favorites. I saw Former Saint on CBS News, and the menu and food looked incredible. In particular, that white chocolate blueberry cheesecake was something I know my hubby would look forward to all week! I loved the idea of local food and fresh homemade dishes. Sounds healthy, after a week of potential over-indulgence at other restaurant week venues. An additional bonus was that it is located right near the Denver Convention Center and the Performing Arts Center. This has become a dry spot for fine dining, with even the choices on Larimer Square growing more thin, giving rise to the inability to get reservations at favorites like Tamayo and Rioja prior to a show. I go to performances frequently with friends, and despite my rule to avoid hotel restaurants (Former Saint is in the Hyatt Regency), I thought I'd scope out Former Saint as a place to take my friends before the next symphony or Children's Chorale or ballet or broadway performance. I must say, the jury is still out. Former Saint was a Jekyll and Hyde of courses. Parking was not difficult (Yay, maybe I can park here prior to my shows, if I grab a bite first). There is a large garage, and the promise of validation from the restaurant. The ambiance of the restaurant is typical hotel restaurant. Booths, tables, old and a bit drab. Except for the bar. Oh, my! The bar has this BEAUTIFUL copper creation above it, adding so much industrial character to the space! I was in awe looking at it, as it appeared to bring craft suds to the bartender's taps. I didn't ask how it worked, as it wasn't clear how the beer separation and dispensing worked, but it was a great centerpiece and spectacle for the place. I do wish I had investigated more about this architectural marvel, and will do so if I return. For restaurant week, my husband chose the Lobster Ravioli, Ribeye, and blueberry cheesecake (as predicted). I chose the Gotham salad, roasted chicken, and key lime tart. The lobster ravioli was nice; my husband was surprised that it was a toasted ravioli, but enjoyed it. My salad was full of beautiful greens, pears, walnuts, and feta. No scrimping here! The dressing was light and sweet/sour. The pears were a bit unripe and crisp, to the point that I was having trouble identifying exactly what fruit I was eating, but other than that, the salad was beautiful, healthy, and ample. My husband's ribeye steak was a nice cut, done to his liking. Slivered hash browns were underneath with a nice green chimichurri on top and some sliced Fresnos adding a welcome kick to the dish. My chicken was delightful. 1/2 chicken on the bone, seasoned nicely, and with a pan sauce. The breast was super-tender and delicious. It came atop cheesy grits, which was a yummy substitute for a mashed potato. I also was served side salad of curly lettuce and fennel. I probably didn't need more salad, but I was glad to have the healthy side on my plate. I will say that this salad was over-seasoned. The chicken and grits were great, but the salad too salty. My husband ordered a glass of J. Lohr Cabernet, which was a very nice find on the wine list, as far as a pairing for his ribeye. That said, the glass cost $30! A bit much, I might say. The real detractor, unfortunately, was dessert. The blueberry cheesecake looked nothing like the beautiful creamy white cheesecake accented throughout by purple blueberries, which I saw on the CBS News clip. My husband was served a very small solid purple slice, overcome with whipped cream dollops. This cheesecake had been uncovered in the fridge too long, with sort of a skin on it. My husband ate almost none of it. My key lime tart was similarly over-adorned with whipped cream, although I had some nice raspberries on top. The tart also seemed overexposed to the cool air, with the thickening of a skin on top. It was a very disappointing way to end a nice meal, and belied the healthy, homemade, craft theme. High points of this experience include the well-crafted and healthy entrees, the fact that we could see the convention center right outside our window (i.e., the location is perfect for pre-event or -theater), the $3.00 validated parking fee, and that beautiful copper tap system. Will the pros outweigh the cons? Will we be back with friends? Time will tell.

You know, Novo coffee is great. Having the clover machine is a big plus for us. The environment is comfortable enough and we are happy that they are in the neighborhood. Jeff, the owner - a nice guy; And the employees are really nice as well, EXCEPT the "other Jeff." This guy could ruin anybody's good mood. He is always intense, abrupt, never remotely friendly, and if you ask for a cup of coffee with no room, without fail, you are going to get a cup with room. Any drink which he makes, is never full. Why is this, we wondered. Our theory is, as crazy as it sounds, serving less coffee saves the shop money. We say this because he appears to be in charge when Jeff the owner is not around. We are not alone in this observation. We wish we knew his schedule so we could go there on the days he is not working! read more

As I sit here (for the past two hours), applying for jobs around the country, I have come the the realization... I am wasting my time. Denver is where I belong. Simply sitting outside watching the unique and friendly people stroll by, sip drinks and mingle with one another in this wonderful area/coffee shop reminds me of how awesome CO is. I digress. (This is starting to sound like a yelp review for Co.) Fluid has a great , helpful staff, awesome location and fabulous treats. The Almond Coffee Freeze is one of my favorites. Today, the scones were fluffy and light, the Italian sodas refreshing and unique, and espresso strong and steamy. (Yes, I have just tried them all.) Being from Portland, I think I have experienced some rather exquisite coffees as well as, several "comfortable" coffee shops. I think that the Novo coffee that they serve at Fluid, their Clover machine and the best cold-brewed coffee I have ever had, makes Fluid my (second) favorite coffee shop in the Denver/Boulder area. (Ozo on Pearl St., in Boulder is numero uno.) In addition, and important as well, is the attitude of the owner and the shop's employees. Seriously, compared to a couple of other independent coffee shops I tend to frequent, these guys (and gal) are a notch above when it comes to making one feel welcome and valued. (Though, I recently read one review I do agree with regarding one of their employees who is less than personable.) read more

We have been to several independent coffee shops in the area. Fluid is one of our favorites. We don't eat the food there because of nut allergies but Novo coffee is good and the clover machine enhances the coffee. Fluid is also clean and comfortable. And as other have commented, the staff here is really so much more personable than many other coffee shops. It is well worth the effort to find your way there. I just wonder if they will ever expand their coffee options and offer Kaladi Bros. or Coda. Both which are better than Novo, in our very subjective opinion. read more

We waited for 20 minutes because "the machine was down" and Jeff acted like it was our fault! We left before we were served. Try a steamed cold-brewed coffee. It is great and with little acidity. They also have a clover machine which everyone should try. read more

This store is on the first floor inside this tall building (so if you are on the northeast corner of 36th and Brighton, then you are at the right place; just step inside the building and the coffee shop is to the left through the main entrance on Brighton.) The exterior sign I read upon arrival was promising. Whereas I receive/obtain services from some corporate giants from time to time, I'm all about supporting local businesses. With that in mind, thanks Heady for existing for us. I really liked the tables/chairs and sofas. It's inviting where you want to sink in the nice cushiony sofa and read your favorite book or open your laptop to do some computer work. The bar seating was also spacious and inviting as well. The guy behind the counter wasn't smiling much but he was very professional to me. I ordered a small cappuccino ($4.50) and sweet potato burrito ($8) for to-go. After I had gotten my beverage/food, I looked around once last time to take more photos. The wall where the one and only TV screen is located has some artwork done on it: Rhinoceros to the left and "DENVER" to the right. This artwork matches with the overall ambiance of the shop. Nicely done. Inside my car, I sipped my cap a little and took a bit of the burrito. The burrito was super hot; it had been at least 5 minutes but it was still burning hot (lol!) The tortilla was nice and (lightly) brown. Inside was packed with scrambled egg(s) and pieces of sweet potato (steam was coming from it; must have sat on the hot plate for a while.) Great size/portion!! Enjoyed this place; another nice discovery!
