Well, I have visited this restaurant 3 times. All 3 times have been for a holiday brunch or dinner. Location (4 stars) This restaurant is downtown near the convention center. parking is pricy if you valet park at the hotel. Last year it was around $40. Parking in the lot across the street for $25 dollars Easter Sunday. If you use a walker, I would not recommend the parking lot across the street. Food (3 Stars) The Thanksgiving buffet is the best one. I would rate that buffet a (4). The Christmas and Easter buffet are pretty low key. There is a carving station (ham and prime rib). There is an omelet station. Dessert bar is decorative. Cheesecake was delicious. The warming station with potatoes, sausage etc. leaves much to be desired. The charcuterie station is sparse. They offer unlimited mimosas for an additional $25. Service (5 stars) Staff are extremely friendly. Cleanliness (2 stars) My only complaint, I saw a tabletop being cleaned off with a rag used to clean the chairs and then under the table on the floor and on to the next tabletop. I'm just a little picky about that. Especially since folks these days go commando and wear short attire, and you know their parts are on the chair and now spread to tabletops. Wiping up the crumbs off the floor with same rag simply through me over the edge. Atmosphere (4 stars) Spacious uncrowded environment. Nice decor. Bright with large windows. read more

During the last few Denver Restaurant Week events, I've tried to take the offerings as an opportunity to sample restaurants that I haven't tried, or otherwise may not try, and see if I can add to my list of favorites. I saw Former Saint on CBS News, and the menu and food looked incredible. In particular, that white chocolate blueberry cheesecake was something I know my hubby would look forward to all week! I loved the idea of local food and fresh homemade dishes. Sounds healthy, after a week of potential over-indulgence at other restaurant week venues. An additional bonus was that it is located right near the Denver Convention Center and the Performing Arts Center. This has become a dry spot for fine dining, with even the choices on Larimer Square growing more thin, giving rise to the inability to get reservations at favorites like Tamayo and Rioja prior to a show. I go to performances frequently with friends, and despite my rule to avoid hotel restaurants (Former Saint is in the Hyatt Regency), I thought I'd scope out Former Saint as a place to take my friends before the next symphony or Children's Chorale or ballet or broadway performance. I must say, the jury is still out. Former Saint was a Jekyll and Hyde of courses. Parking was not difficult (Yay, maybe I can park here prior to my shows, if I grab a bite first). There is a large garage, and the promise of validation from the restaurant. The ambiance of the restaurant is typical hotel restaurant. Booths, tables, old and a bit drab. Except for the bar. Oh, my! The bar has this BEAUTIFUL copper creation above it, adding so much industrial character to the space! I was in awe looking at it, as it appeared to bring craft suds to the bartender's taps. I didn't ask how it worked, as it wasn't clear how the beer separation and dispensing worked, but it was a great centerpiece and spectacle for the place. I do wish I had investigated more about this architectural marvel, and will do so if I return. For restaurant week, my husband chose the Lobster Ravioli, Ribeye, and blueberry cheesecake (as predicted). I chose the Gotham salad, roasted chicken, and key lime tart. The lobster ravioli was nice; my husband was surprised that it was a toasted ravioli, but enjoyed it. My salad was full of beautiful greens, pears, walnuts, and feta. No scrimping here! The dressing was light and sweet/sour. The pears were a bit unripe and crisp, to the point that I was having trouble identifying exactly what fruit I was eating, but other than that, the salad was beautiful, healthy, and ample. My husband's ribeye steak was a nice cut, done to his liking. Slivered hash browns were underneath with a nice green chimichurri on top and some sliced Fresnos adding a welcome kick to the dish. My chicken was delightful. 1/2 chicken on the bone, seasoned nicely, and with a pan sauce. The breast was super-tender and delicious. It came atop cheesy grits, which was a yummy substitute for a mashed potato. I also was served side salad of curly lettuce and fennel. I probably didn't need more salad, but I was glad to have the healthy side on my plate. I will say that this salad was over-seasoned. The chicken and grits were great, but the salad too salty. My husband ordered a glass of J. Lohr Cabernet, which was a very nice find on the wine list, as far as a pairing for his ribeye. That said, the glass cost $30! A bit much, I might say. The real detractor, unfortunately, was dessert. The blueberry cheesecake looked nothing like the beautiful creamy white cheesecake accented throughout by purple blueberries, which I saw on the CBS News clip. My husband was served a very small solid purple slice, overcome with whipped cream dollops. This cheesecake had been uncovered in the fridge too long, with sort of a skin on it. My husband ate almost none of it. My key lime tart was similarly over-adorned with whipped cream, although I had some nice raspberries on top. The tart also seemed overexposed to the cool air, with the thickening of a skin on top. It was a very disappointing way to end a nice meal, and belied the healthy, homemade, craft theme. High points of this experience include the well-crafted and healthy entrees, the fact that we could see the convention center right outside our window (i.e., the location is perfect for pre-event or -theater), the $3.00 validated parking fee, and that beautiful copper tap system. Will the pros outweigh the cons? Will we be back with friends? Time will tell. read more

For me, it was a huge let down. I went for board & bottle, they used to advertise it a lot with signs outside. Finally, I get a chance to get here to try it and... boo, they stopped doing it. Super bummed. I went with a Cobb Salad which was NOT very cobb-like. It was a pretty pathetic, way overpriced for what you get salad. Real Cobb Salads are usually loaded with protein. This one was not. And such a white salad... using iceburg and a few, small pieces of chicken. It was hard to even find the chicken since it matched the pale lettuce so much. The wine I tried was just ok. I won't be back but some people seem to think the breakfast is somewhat decent here. Maybe that's a better choice since they got rid of the board & bottle deal. Enjoyed the breakfast buffet here during my stay at the Hyatt. They had a variety of options which made it the perfect choice for those torn about a sweet vs savory breakfast. I got the fruit which was very fresh, the French toast which was delicious, and chicken sausage and breakfast potatoes (both amazing). I also ordered a cold brew which was nice and strong. Staff was nice and attentive. The decor is bright and trendy. The buffet was tempting but I ordered the egg white fritatta, with spinach, cheddar and tomatoes. While attending a conference at the convention center next door, a group of us came here for lunch. They were pretty busy, but still able to get us seated in about 5 minutes. They offer a lunch buffet which isn't huge, but it's definitely adequate and much easier for them to keep up with than those typical huge buffets. I tried the buffet and it was solid. The food was fresh and tasty. My wife tried the Cubano and she really liked it, she especially liked the fries that came with it. Service was pretty decent and so was the décor. The food is really good, the place looks amazing, and the I really enjoyed it overall. I got the Bison Philly and it was awesome. I was very interested in all their "on bread" options of you're looking for something a little less formal and was very pleased with my selection. Willing to accept that my horrible experience was due to the fact that we were a private party of about 40 with a fixed menu. That being said, if you can't do large scale well, then don't My sea bass was cooked beyond recognition. It was a skin-on shingle. When I tried to remove the skin the entire "filet" lifted up off the plate. My co-workers were all exchanging their steaks because some were mooing while others were charcoal briquettes. I visited here on Thursday night. We were seated right away. The staff were friendly. It did take a while for someone in my party to get an item they requested but the manager kindly offered free dessert to accommodate for that inconvenience. The other two people in my party had portions sizes that were smaller than they expected. My portion size was good. I ordered the kale mushroom ravioli. It was different but it had a good flavor. Made reservations through another app, but came down with something and thought it better to not spread it to their staff. Tried to message the restaurant through the reservation app 36 hours before the meal but received no response. Called the host stand more than 24 hours before and said I would cancel my reservation if they wouldn't charge me. They said yes and cancelled on their end. I still was charged $50 and received nothing! I tried going through the Hyatt customer service nightmare and could not get them to honor their word. They even fought the credit card dispute. Looking at the pictures it is a soulless corporate hotel lobby space anyway. Don't bother with this restaurant unless you have no other options! read more

Our second year enjoying their Thanksgiving Buffet/Meal. It was excellent especially the turkey, gravy, mashed potatoes, and sweet potatoes. We're not big fans of the desserts -- but the chocolate truffles are good. Great price! We love that they have Pepsi products as well. Had lunch here twice and dinner once while visiting Denver for a work conference. Ambiance is very open, modern, and bright. All the servers, hostesses, and managers that interacted with me were really on top of managing the customer's experience. They work together to ensure each person has what they need. Very attentive!! I had the Bison Philly on my first visit, the Colorado Cobb salad with chicken on my second trip, and the Bison ribeye on my dinner trip. Entrees were very good. The Bison ribeye was off the charts. I also had the red velvet cake for dessert which was delicious and filling (share it if you can). I'd highly recommend this spot. read more

Came to lunch with a colleague when we were attending a large conference in the Denver Convention Center across the street. It was 12:30pm on a busy Friday and business seemed quite good for them. However, we were seated quickly and the server was attentive - water, menu, and utensils came right after. We ordered the kale salad with salmon ($8 for two pieces, not bad) and a Ruben sandwich. Both were excellent! The salmon was nicely cooked to a crispy surface but inside was juicy and tender! Beautiful and spacious dining room and pleasant experience! I've been eating around the Convention Center for about a week now and I'd say this is one of the better spots for lunch around the Center. Great location too - it's the first restaurant you'd see coming out of the Convention Center on the right side of the street. Reasonable prices too for this area. Both of our orders were under $20. Stopped by the restaurant interested in getting a take out burger. Once I got to the restaurant I admired the openness of the restaurant I decided to stay and enjoy my meal in house. I previously looked at menu and was going to go with a classic burger and fries but asked the waitress whom I think her name was Michelle what would she recommend between the burger and peach glazed salmon ? She suggested the salmon for a nice light lunch. And she was perfectly spot on, the salmon was heavenly with the glaze, little frisee salad and polenta!! I liked the fillings and that you could easily get a good egg white omelet. Good portion size too. Each day the other options were exactly the same. The bacon was decent. The sausage was not. The bagels toasted nicely with some smoked salmon that made it delish. The coffee was served in big cups and was good. The ketchup was a weird brand and not. Cavernous restaurant on the main floor of Hyatt downtown close to DPAC. Shiny copper pipes over the bar are for pumping in the brews, so we were told by very friendly manager. Staff all prompt, courteous, and knowledgeable. Food could use some improvement, some things were undercooked such as the roasted carrots side. Prices a bit high. Didn't see the Cork and Board deal until after ordering. Will check out Peaks lounge on the 27th floor next time. Spectacular views of downtown! read more

Totally a hotel restaurant but it looked promising. I was staying at the Hyatt while attending a conference across the street at the convention center. This was a 4800+ in person conference and this place seemed like they had no idea. (And, this WAS the conference hotel.) Went for lunch a bit early to beat the crowds and the line was already out the door. LOTS of seats available and there was one whole section they weren't even using. Totally understaffed for the day. We ended up crashing at the bar (even though we were told we couldn't) and did get served but we were late getting back. I did like the fried cauliflower with mole. Nice decor and vibe. Brunch! Brunch! Buffet. Brunch!! I've dined here several times during my 2 dozens stay at Hyatt. This last week was the worst. It's actually quite pretty, open, casual yet inviting restaurant. The key is to get the low yet comfy couches by the windows! Once you move in closer to the buffet, it's just meh. Dark; stiff, a ok seats. A ok good. Just a ok. I'd much rather pay more for an entree and get what I like had they offer a menu!! But I'm usually in town for business, my days start at 6 am and this place opens at 6:30 am. For convenience: 2 stars!! But that is it. I know hotel food is usually less than desirable. But I've been a globalist with Hyatt: I've had many great Hyatt breakfast.. park Hyatts Toronto being the best this year followed by Andaz Central Park, Thompson Central Park. Many great ones actually since I travel a lot ! To compared a buffet to buffet : Hyatt Regency Bellevue ( offer buffet or a la carte) quite delicious. Hyatt Montreal ( buffet only but again, massive fruit, yogurt , other fun food selections) This one:. Especially this week was sold out for a whole week with SO many conventions. Priced were sky high. Pretty sure my room price for one night was what I paid for a week here 2 months ago. It was that much in demand. Long story short: after all that demand and commotion! Single worst breakfast buffet EVER! Legitimately so bad. There's pretty much nothing worth $25 price tag. The omelette station was a saving grace : but the pretty lady that work the station seems new. She burned almost all the omelette, breaks them off flipping. She also cook one at a time cause she's new: very heavy on salt! Fruit bar was a mess next to smoke salmon and onions everywhere. Gross! Onions carry so much germs. The pastry bar is so sad, dry and dryer!! Nothing appetizing! The hot food is also totally avoidable: pancakes were a little edible but nothing else is. Bacon is bacon. The toaster bar for such a huge restaurant has 2 toasters.. constantly on! Never stopped. Burnt! Smell! Coffee/ tea will be good or bad depending on your server. I usually come for a 20 minutes breakfast before I had to run. Some servers took the whole time to not bring your coffee or tea. Some are great! Bring them out fast with my oat milk and even got me a Togo decaf. Overall, the worst buffet food!! Coffee is decent depending on who your sever is. I stayed a week here. It's snowed, windy, 72 degrees and then some. Roller coaster of a weather. I appreciate how convenient it is to roll down to breakfast. But Starbucks food would have been way above this!! I stumbled upon this place late, around 10:30PM, on a Monday night when the bar was mostly quiet. As part of a national conference, it was one of the few places open that offered true "food" and as part of the hotel, I figured it would be a decent place to check out. It wasn't great. The service was pretty awful with two bartenders crossing over each other and appearing very overwhelmed (despite a mostly empty bar with only 5-8 other patrons). It took 15 minutes just to receive the menu and place our drink order. I ordered the vegan burger, and my friend ordered a dirty martini. When the cocktail was finally made, the bartender plopped the drink down without smiling nor acknowledging to whom it belonged. It did not taste good nor appear fancy (by any stretch). My vegan burger was filling and complimented with a side salad, but took 30+ minutes to prepare. I'm not sure what really happened here. It's my guess the kitchen was shutting down and staff were simply burnt out from the whole day. But a very disappointing experience nonetheless. read more

Four stars just for the super convenient location right across the street to the Denver Convention Center. If you are here for a biz trip and working the floor at the center this restaurant is a good spot if you don't want to walk far. With plenty of indoor seating and outdoor sidewalk tables it offers a nice respite off the show floor for a client breakfast or lunch. Not the largest menu of offerings but there is enough to choose from, and the food is quite good. The breakfast buffet is worth the cost and and has plenty to choose from. Friendly staff that checked on me and made sure I had my coffee cup filled. Typical hotel pricing though as it's in the Hyatt so it's a bit on the costly side, but worth it to eat well and not have to pollute your body with the horrible convention center food court offerings. read more
