I was really disappointed by this place. I got a fish taco and steak taco. The fish taco tasted like they just took a defrosted fish stick and covered it in cabbage and sauce. The steak taco was made with some fancy meat but they overcooked it and it was tough and flavorless. Let's talk about the menu too. It's just tacos and burritos. The burritos are like $18! Guacamole is $9. That would be understandable if the quality was excellent and this place was in somewhere chic like Laguna Beach or Venice but give me a break, you're located in Tustin. read more

Went here with high hopes but left disappointed. Full disclosure, my wife and I are pescatarian/vegetarians and maybe that was the root of the issue. From the looks of it, their expertise lies with the meat options on the menu. We tried the shrimp and fish taco, as well as all three of the vegan options, plus their roasted corn. The two fish options we tried are prepared exactly the same. Fried shrimp/fish, same cabbage slaw, same salsas etc. Good flavor but I was hoping for something to be different between them. Maybe a grilled shrimp? Idk. The vegan options were nice to have but none of them really stood out for us. One of them really disappointed us, the jamica al pastor. It was so sour that both of us couldn't finish it. Inedible. The stand out was the corn- good flavor, good toppings, well roasted. Overall, the food quality we tried is around a 3.5 star, but two other things pushed it down to a flat 2. First, the price- for our 5 tacos and a corncob, the total came to $30. Too high for what we got. Second, everything came out on little slips of paper laid on a tray. Not on a plate. Nothing to stop our corncob from rolling around on the tray, off it's slip of paper and spreading it's salsa everywhere- not hygienic or appetizing. Had a meeting at Flight in Tustin and tried this place. We had a few items. A few observations: 1. The menu lacks any detail or specificity on ingredients 2. Most of the tacos (even the "premium" ones) have pinto beans. What??? That's right, slimy filler. For $4. In a food hall. 3. What is the last thing you'd want or expect on a steak and rojo ancho salsa taco? Unannounced guac salsa, that's what. 4. To get chips, we were told we had to order the guacamole for ~$10. Guess what you get when you order the guacamole? Potato chips. You actually get potato chips with guacamole. Rick Bayless this ain't. It's a poorly conceived attempt at elevated Mexican food, but with so many solid options out there, it's simply a fail. The chalkboard claims that Fonda Moderna is an "eco friendly" establishment. This is either a cynical attempt at marketing or a complete misfire, as the salsa containers, cups and utensils are plastic (granted there are few plastic alternatives for utensils). So far so good at Fonda Moderna inside the Mess Hall at Flight in Tustin. My favorites are definitely their cecina taco - (flank steak with burnt cheese, beans, cilantro & green sauce) and their birria taco (shredded beef, cilantro, salsa). Even though the tacos are pricey they are large and on a freshly made flour tortilla. They are juicy, delicious, and contemporary - as they aren't going to be your traditional street tacos. I like the creative aspect of them and the fact that you can't get them anywhere else. When I went, they were still in their soft open stage so I am looking forward to going when they have a full menu to fill out the meal. read more

Stay away from the lobster burrito it's very small and the lobster is fried and nearly nonexistent. The burrito itself was filled with 1/3 lettuce. For $21 I really expected a lot more from this place especially with all the glowing reviews. Very good. Tried the al pastor, Wagyu, lobster, mushroom and ancho. The red salsa could use some work, but the green is delicious. The ancho taco had absolutely no flavor, and didn't deserve to be in the presence of the rest. The rest of the tacos were quite splendid. Flavorful, juicy and delicious. Some of the tacos even have crispy cheese on the inside of the tortilla.... Genius! If they improve the red salsa and either fix or get rid of the ancho taco, this place would be close to prefect. read more

Holy crap the ribeye and lobster tacos are both amazing here, let me explain. The ribeye taco served chihauha style, this means it comes with burned crispy cheese melted/burned into the tortilla. Need I say more? This was the best "gourmet" or high end taco I've ever had. Which was not a surprise when the manager who helped me with my order told me they also own Anepalco in orange, another amazing but totally different type of mexican restaurant. This place is located in the new OC Mess Hall at the "Flight" office complex (ginormous office buildings that are still empty) off barranca and red hill. Bring your pickiest friend, there are about 8-10 other restaurants in here. So far I've tried all but 2 of them...however Fonda Moderna is the only one I've been to twice. That should tell you something...and Ill probably be back next week lol. read more

Fondo Moderna is one of those places that is a tribute to the traditional Mexican taco. All their food is deliciously thought out, ingredients well chosen to compliment your plate. The al pastor tacos are my favorite, followed by cesina then asada. The salsa bar is fresh and it tops off your taco with perfection. You want some corn as an appetizer? You got it. Food and service was great. We got the 5 taco sampler featuring the "guisado" meats. The pork and birria were a little too fatty for my taste, but still delicious. The three other meats were amazing and they were devoured instantly. The tortillas on all the tacos were obviously freshly made, and tasted delicious. We also got a fish taco and al pastor taco a la carte. The al pastor was a hunk of meat rather than chopped up. I'm pretty picky about dry meat, and i expected it to be tough to eat. It was a little bit dry, but cooked well enough that it was easy to eat and it tasted amazing. They also have Corn - and I appreciate that it is an actual ear of corn vs a bowl that other places do these days. Probably my favorite elote-style corn I've had.. ever. I bought the golden burrito for $23 and there was nothing golden about it. They should actually call it caca burrito because of how crappy it was. Way too expensive. The burrito was smaller than average which you can see in the picture I posted. The meat inside wasn't tender and tasted plain. Actually the whole burrito tasted plain. The chips were burnt and there was barley any hot sauce in the to go cup. Absolute waste of my money. Chipotle has better burritos than this place. Save your money and go elsewhere. read more

They were pretty good, the pastor street taco was flavorful and sweet. Hot sauce is good, small salsa bar at counter to chose from. They have a wide variety of proteins and fancy cuts of meat and veggies options for tacos that most Mexican restaurants don't offer. I also got the Wagyu taco and was a little disappointed with the fact that I bit into a chilled/Luke warm taco with vivid cherry red center staring at me in a majority of the portion. I understand serving top notch type offerings can get both sides of opinion and Wagyu is supposed to have a red center and stay as tender as possible, but the pinto beans and the whole taco were the same temperature. The chef seemed overworked and the back kitchen looked understaffed so I get it to an extent. I will probably revisit these guys in a few months when I'm back in the area and being one of the first restaurants to open at the mess hall there is a little getting adjusted to be done to get the kitchen on point and used to the high foot traffic. read more

I have been waiting for the food court at FLY to open. The food court has much to offer. I finally decided on a shrimp burrito from Fonda Moderna. The Shrimp Burrito came with potato chips. The burrito needed the flavors to be revised. The shrimps were coated with an over salted batter and the taste of burnt batter lingered on my tongue. The cabbage made the burrito cold and the watered down aioli made the salty batter soggy. I understand that it has the word "modern" in the name,but somethings are better untouched. Corn tortilla chips are a staple Mexican side dish which should always remain unchanged. (Leave the tasty potato chips to the sandwich shops. ) As a review, $15.00 gave me 1 flour tortilla, about three shrimps, a cup of shredded cabbage and potato chips. read more

I had the flank steak bowl which came with pinto beans, rice and chips. The guacamole was on the side. The beans were very bland and not seasoned but the steak was flavorful. There was a kind of adobe sauce on the steak that was muy delicioso. I also had the corn cheesecake. It was very dense. Some of my companions thought it was good. Don't really know where to start with this one. Went with the wife, ordered a couple tacos each and some corn and a Jamaica. Asked if the tacos I selected, a chuleta de puerco and the surf and turf, came with cilantro. I'm just one of those people that cilantro tasteless like soap. She said if the menu didn't say cilantro, there was no cilantro. No problem. Get a little buzzer, go sit down. Watching the counter, other people get handed their drinks when they order. I want my drink. Go up, hey, can I get my drink? So I get my drink, go sit and wait some more. Waiting. Waiting. See a bunch of other people getting their food. Go up, look to see if anything that looks like my food is there. Get some salsa. Go back and sit down, waiting, waiting... 25 minute go past. Go up, wave the little pager they gave me. "This is supposed to vibrate or something?" She looks at the buzzer "oh, here's your food" "it never buzzed. Had that food been sitting there a long time?" "Oh no, not long". Take food. One of my tacos is covered in cilantro. I point out that they said it didn't have cilantro, and they agree to remake it. My hand brushes the corn, it's ice cold. Jam my finger in a taco, ice cold. "Hey, this is all ice cold" chick behind the counter looks at me like I'm speaking in German or something. "I don't want this and I don't want to wait for you to remake it, can I have my money back?" It's a shame, because I love Anepalco, and the food looked delicious, but I'm certain that my food was sitting there when I went to get the salsa, and the chick was just clueless. If you have food just sitting there, and you see me looking for it, wouldn't you say something? I know they're newly opened, but it wasn't busy at all. This taco joint is super authentic. If you're looking for a tacos in a tostada shell, with ground beef, shredded cheese, and sour cream...this place is NOT for you. Come here if you're looking for a real taco without all that Tex-Mex nonsense. The guisado tacos are my favorite! The salsas and stews are on point and the closest thing I've found to authentic Mexican tacos. The tacos here are very large. They are also pretty expensive....as are the burritos. I think most of the burritos are like $15-$21 and taco are $5-$7? The ingredients are all high quality, but its still a steep price. The tacos are really busy. I'm talking a million ingredients in each one.....sauces, beans, meat. Its a little much for me. It also makes the tacos incredibly messy. I really, really like the carne con chorizo. Great flavor. The cheese grilled into the tortilla on the hangar steak taco was also a nice touch. Pleasantly surprised to find authentic tacos with a twist in this area. First of all I have to command the front of house for being knowledgeable, spot on with recommendations and just fun and pleasant to talk with. Now the good stuff.... the food!!!! The lobster tacos are my favorite!!!!! It's tasty, flavorful, filling and has a solid amount of fresh lobster. I've been back twice and it's been amazing each time!!! We also had the surf and turf, this was with shrimp, steak a layer of cheese almost like a quesadilla with pinto beans cilantro and salsa. Also a really good choice, but it's best to eat first so the tortilla doesn't lose its structure. There tortillas are fresh and flavorful flour tortillas. A new item I love is there Brussels sprouts a ton of flavor, great texture, crispy with a savory but a subtle sweet taste. There salsas and sauces are great also.
