Ribeye steak

Excellent local butcher shop offering a range of choices, from their Mexican meats (e.g. carne asada) to every cut of prime beef (except for ribeye cap). Prices are fair, especially with the higher quality compared to major markets and wholesale clubs. They also offer dry-aged prime beef on site as well. I ordered some ribeyes for Father's day and they were beautiful, juicy and delicious!

Ribblets with their House Marinade is nothing short of FIRE!!!

This meat market is the one I keep recommending to everyone I know! I drive from Pomona every single time I have a carne asada. If I'm in charge of that grill, you best believe my meats are coming from Francisco's. I have had their aged tomahawks, wagyu (Japanese & Australian), kabobs, picanha, ribblets, arrachera, chorizo, and others I can't even recall. They are all winners!!

Final product: aged ribeye cooked to perfection! Med rare!

If you're a meat lover, consider this your sign to drop everything and head to Francisco's Meat Company. I recently tried their 35-40 day aged ribeye, and let me tell you--this steak had me rethinking my life choices. The flavor was deep, slightly nutty, and packed with that perfect beefy richness you only get from a quality dry-age. I hit it with just salt, pepper, and garlic, reverse seared it to 130°F, then finished it in a cast iron pan for that perfect medium-rare. The result? Soft as butter, melt-in-your-mouth magic. A few weeks ago, I also picked up their Wagyu picanha for my girlfriend's brother's birthday. Reverse seared it to 135°F, then broiled it for a few minutes until the fat cap was crispy perfection. Let's just say--there were no leftovers, and I had people asking me where I got the meat. (I considered lying and taking full credit, but Francisco's deserves the love.) Beyond the amazing selection, the customer service here is top-tier. The front desk staff and butchers are incredibly knowledgeable, friendly, and patient with all my questions. They clearly love what they do and are more than happy to help you pick the best cuts. They also offer marinated chicken and steak for tacos, which I haven't tried yet--but if it's anywhere near as good as their aged meats, I might just start meal-prepping tacos for breakfast, lunch, and dinner. The shop itself is small but mighty, and it looks like they're expanding. Whether you're a seasoned home cook or just looking to impress someone with your grill skills, this is the place to go. Highly recommend!

After eating at several Argentinian restaurants recently, I've been on a chimichurri kick. I have…read moretried chimichurri sauces from Whole Foods and Trader Joe's but they aren't really very authentic. A friend recommended seeing what El Gaucho might have, so I visited the next day. The market is easy to spot with a big street sign out front. There are only two parking spots in front, one is a handicapped space. There's plenty of parking around the back though. When you walk in, you will see the main market with lots of items and brands I've never seen before. Slightly to the right is their deli counter with lots of meats, cheeses, and other miscellaneous items. To the right of the entrance is a dining area, and another counter where you can order sandwiches, empanadas, pizza, French fries, and drinks. I was laser focused on getting the chimichurri and leaving since I was short on time. It is in plastic bottles in plain view on on top of the deli counter. I purchased the regular variety, but they also have a spicy version. I could already tell this was going to be way better than the other two sauces I tried. I've had it on a steak, and on my breakfast scrambled eggs, and it's in a whole different league from the grocery versions I tried. It looks just like a restaurant chimichurri, oil based with lots of herbs and spices. I just had a nice filet mignon with chimichurri at a good Argentinan restaurant last week, and this chimichurri is about 90% as good. I moved it from the plastic bottle it comes in to a glass jar which will hopefully help preserve it longer, and store it in the refrigerator. I now have no reason to look elsewhere for chimichurri. My friend visits here periodically and says the sandwiches are excellent. I'll have to return again to try one, get more chimichurri, and explore the market and deli to see what other goodies they have.

There is also a small diner where you can enjoy the delicious foods or some wine and beer while you sit and discuss who is the most legendary footballer (soccer). There are big screen TVs with murals of all the footballer greats. The people are friendly, the food is good, and the vibe is awesome! Great place to watch World Cup and cheer!

Today we decided to give them another chance instead of doing our usual one-hour drive to buy quality meat. Unfortunately, it was a mistake. We purchased about 5 pounds of picaña, priced at $13 per pound, expecting a premium cut from a market that promotes itself as one of the best around. What we received was mostly fat. A proper picaña should have a fat cap, but this was excessive -- large portions were simply not usable meat. For the price we paid, the quality was unacceptable. To make matters worse, the store is advertising meat specials at $9 per pound, but once you're there, you're told that picaña is "no longer part of the special," even though it's still being promoted in a way that suggests otherwise. That felt misleading. At this point, we would much rather continue making the one-hour drive to purchase quality meat elsewhere because we only buy the best and expect honesty and consistency when paying premium prices. Sadly, this visit confirmed that standards have gone downhill. We won't be returning.
