I've eaten enough shabu, hot pot to know that Australian or American Wagyu are overrated, many of them are tough and chewy, not as tender as normal ribeyes or Brisket that I like. This restaurant Wagyu beef does have marbles of fat in it, so it's tender and not so chewy. So, for the GOLD menu, I don't think it's worth the $78 but for special occasions, it's OK.
