Detroit was light and thick with excellent frico edge. Sauce was slightly sweet with nice flavor. Cheese was melted nicely with slight caramelization. The Figgie had fig jam, prosciutto, goat cheese, arugula and a balsamic drizzle! It was out of this world! I use figs and prosciutto on my pizza at home but never seen in at a restaurant. Highly recommend! Staff was attentive and answered questions about their Detroit style hydration. Apparently all dough is made daily in house each morning. Restaurant was large, but they had several areas blocked off. Only two available tables for dine in. Not sure if they had an event later that day or not. The restaurant is located in a little shopping center in the heart of Cahaba Heights. It is a cozy bistro-style place. As usual, I got the food to go due to work. Unfortunately, I rarely get a chance to dine in and enjoy food at the establishment. So, I am very picky about to-go quality, and Troup's delivered. I had the margherita pizza, small 12-inch. It was still warm by the time I made it home. The mozzarella was fresh, and the perfect circle was cut and spread over each piece. The sauce was delicate and flavorful, tasting light and homemade as it should. I like a good amount of sauce, and it was very saucy. It was not overcooked in the slightest, with the cheese and basil still fresh and not burnt. The crust was more Neapolitan-style, softer toward the middle (it wasn't a true Neapolitan, though), but I like various styles of pizza, even hybrids, so I was happy.
