This place absolutely sucks!! In 2009 when I ate here it was 3-4 stars. Now???? It is negative 10 stars. The quesadilla's tasted like lighter fluid, and had to throw them away. He went and got a take out order because I was tired. He wanted to make dinner easy. He called to order the pescado frito and the burrito Colorado. They were a little behind from the time frame they quoted for pick up. The food was tasty and that was what was important. Crispy skin and tender fish flesh. Tried this place and it was very good. Nice large restaurant colorfully decorated. Full bar. We had the margaritas with the coronita and it was very good mix. The salsa was brought to the table complimentary with chips and had nice spice. Everything was flavorful and fresh. First off, great salsa! Perfect heat level for the whole family. Was a little taken aback by what appeared to be a bullet hole in the window but it was from the outside and not the inside so who knows. The place is pricey for the quality of food but the portions were large so I guess if I can make two meals out of it then I guess it's not so bad. Glad I finally had a chance to try this place, I would not drive from Denver just for it but if I'm close (and I am a lot thanks to 105 brewery) I would come here again. read more

I'm writing this review for my parents in their 80s who aren't exactly 'computer literate'. My parents had dinner at Guadalajara on Oct. 10th, and my parents, who are on a fixed retirement income and only eat out as a 'treat', paid for the meal, $67.55 using a credit card (receipt attached). They also, as they always do, left a $20 cash tip on the table for the server as they are 'old school' and believe that 'cash is king' and that servers prefer cash to credit card tips to avoid credit card charges, etc. My father always writes "Tip on table", and the amount for the meal, less tip, on the total line of the credit card charge slip. A month later, when reviewing their back statement, the charge processed and posted by the bank on Oct. 13th was in the amount of $87.55. So not only did they get a $20.00 cash tip but also ran $20.00 on the credit card, which was posted. While Guadalajara has always had good food and service and a family-friendly atmosphere, it's not worthy of a nearly 60% tip. Unfortunately, they cannot dispute the charge because the bank needs the restaurant's credit card charge slip and they obviously do not have it. So enjoy good food at Guadalajara, and the food is highly recommended, but I strongly suggest not tipping in cash and leaving it on your card in order to avoid double charged tips. My parents hate to do it but they view it as having 'pre-paid' a tip for their next visit and, despite the fact that the server will end up being 'shorted', they feel as if they unknowingly and without authorization double-tipped the previous server. read more

Came from out of town couldn't have been more satisfied. Food was amazing and service was excellent.

I won't be going back to this place. Ordered a taco which was torn apart from being soggy, The meat in the taco wasn't even chewable. I also got steak nachos, it looks like the meat was steamed instead of grilled, the cheese was hard and the whole thing was bland. Also, I think they should put the guacamole separate from the meal next time. I dont know if its just the mediocrity of castle rock but mexican good in CR is straight garbage. So disappointed. I got an order of chicken flautas to go and when I made the short drive home they were so incredibly soggy. They were $19 and I had half of one before throwing it all away. Went here for a friend's birthday, they picked it so off we went. We had reservations but really didn't need them on a Tuesday night, even with 5 of us. We were greeted & seated immediately, while waiting for the other 3 in our party to show. Great, warm, fresh chips & homemade salsa was first up & they were delivered to us right away. The salsa was mild, but ask for the really spicy stuff personally. Service was great! Didn't catch the waiter's name, but he really knew how to work with guests. The restaurant itself was big & very clean. Custom chairs with beautiful scenes painted on them were at the tables, as well as comfy booths. Food was ok, it was standard Mexican cuisine. The dishes had refried beans, Mexican slaw & rice on most of them. The plates were very hot. Dessert of Sopapias & fried ice cream were very good! After church lunch with 10 friends. I normally have their Tortilla Soup which is the best I've ever had. But today I tried the Chef's Choice Enchiladas Culichi. Ground beef in corn tortillas with a green poblano and spinach cream sauce. Actually really tasty but I still prefer the Tortilla Soup! And because I'd previously raved over the soup 2 of our lunch companions tried it and they LOVED IT! Antonio presided over our meal and provided stellar service! My wife and I are always on the hunt for some solid Mexican food. Well, X marks the spot here at Guadalajara. A huge, extensive menu of delicious true Mexican delights. I guarantee there is something for everyone here. I'll definitely be going back to try some more and to check off the more of their margaritas. This is our family's favorite local place. Quick service, good atmosphere, the food is amazing!! The entire menu is good. Just yummm.

For the food I got a beef chimichanga with queso covered 8/10 for a chimichanga fried right crisp and loaded. Beans 7/10 rice 7/10. Another great meal here. The Pollo Fundido was good, as always. My daughter tried the quesadilla for the first time and may've stumbled onto her go-to dish. This is an appetizer, but it's clearly meant to be shared, because the thing is massive. She ate two of the six triangles, and I had most of one. The ground meat and cheese both had wonderful flavor. I am sad to say that this might be the worst Mexican food I've had. My husband ordered the chile relleno, tamale and enchilada combo. The relleno cheese was hard, not even melted. The waiter said that's just how it comes. Everything was dry and hard and disgusting. The worst part is that it's expensive. The 3 taquitos were $18. We have been here a few times. Over all they are my current favorite Mexican restaurant in a 10 mile area around my home. What makes them my favorite? 1.) great customer service over all. They have had some small service issues just with forgetting things with an order and being very slow with finishing bringing a ticket, little minor things over all. Service is always friendly, helpful, and attentive. 2.) their queso is good. I come from an area in the Midwest with a large Hispanic population and we are blessed with many restaurants. All of them have amazing queso that's spicy, silky and cheesy. Here in Denver area, all queso is usually thick, bland and goopy. This one is thicker but still flavorful and smooth. For Denver area it's one of the best I've found. 3.) Their meats always taste fresh and well prepared no matter what style I order. Beef Colorado, nice and tender. Chicken and steak fajitas, fresh, pretty lean and delicious. Shredded chicken in the tacos, flavorful and not too spicy, mix of white and dark meat seemingly. 4.) the have a very mild kids salsa that they volunteered to me when dining with my toddler!! Much love for that. 5.) my mom's favorite Mexican dish ever was eaten here.... It was chicken with a creamy sauce over a bed of rice. The owner-our sever yelled at me saying the 6lb tiny service dog had to be on the floor, both my arms were tangled in my jacket and I was trying to get free to put the dog on the floor. I told him I will put her on the floor as I was trying to untangle my arms. He continued to berate me and all the customers were watching him embarrass us while trying to get loose. Told me the service dog had to be on the floor. Wrong a service dog for diabetics and cardiac need to be on the chest to smell when there is a medical emergency. I had the harness to keep her on my chest to do her trained and certified job. He denied me and her our federal rights. I do not recommend this place at all! read more

I ate here and was charged twice. Once for the pre tip amount and once for the post tip amount. So my already overpriced meal for two turned into almost $80! If you eat here be sure to check bank statements after. I tried to contact them using the contact page on the website and am still waiting to hear back. This is the perfection of hometown, authentic restaurant. My partner grew up in Castle Rock and we chose to stop at Guadalajara before a show in Denver. I could not have been more thankful for his idea to take me here. I was in love from the moment I saw the brightly colored furniture and the warm smiles from the employees. The service was incredibly fast and attentive, and I gobbled up my enchiladas in pure delight. If we move to Castle Rock in the future, I hope we find a house right next to Guadalajara, lol!! Our go to Mexican comfort food. I especially love the fajitas and seafood soup, the wife is a big fan of Combo #1.

Went there for mothers day. Food was average level Mexican food, took about 20m to get someone to take our order, an hour to be served our food. (table of 3 of us). I think this was a hit or miss experience for my husband & I. I loved my deluxe enchiladas & thought the portion sizes were great. I also loved the atmosphere & nice staff. While my husband could agree to liking most of what I listed, he wasn't a fan of his breakfast burrito. He said it wasn't flavorful enough or lacked kick. We also both thought the chips were bland but the salsa was really good with a nice heat. I'd definitely want to come again to try more items.
