    I travel to Baltimore often for work, and when two completely separate people tell me I need to eat…read moresomewhere, eventually I'm going to listen. In the case of Chaps Pit Beef, I've now listened twice. First, the setting deserves its own star. There's something wonderfully Baltimore about pulling into a place famous across the country for pit beef, sharing the immediate surroundings with a strip club, and knowing you can shop for used tires across the street when you're finished. Add the walls of awards, television appearances, photos and decades of accumulated lore inside and the whole thing feels less like stopping for lunch and more like making a small pilgrimage. And that's part of why I'm struggling with Chaps. I've tried several of the sandwiches across my two visits. I've piled on the raw onions, pickles and sauces. I've ordered too much--which feels both heroic and completely appropriate here--and walked away convinced that Chaps is very good. But I haven't found my five-star Chaps order yet. The pit beef itself is clearly the reason for the pilgrimage, and the condiment station is part of the experience. Beef, raw onion and that horseradish-heavy Tiger Sauce is a combination I could happily keep attacking. But then you look around at the menu and realize you've barely scratched the surface: beef, sausage, corned beef, turkey, enormous combinations of all of the above, gravy fries, homemade sides and sandwiches carrying names and reputations of their own. It's almost overwhelming. That's ultimately why I'm leaving Chaps at four stars--for now. There's a five-star experience hiding here. I can feel it. I'm just not convinced I've ordered it yet. Next visit I'm stripping this thing back before building it up again: pit beef medium-rare, raw onion and Tiger Sauce as the control. Then I'm going in the opposite direction with one of the ridiculous combinations--probably Guy's DDD--and finally giving the gravy fries their proper opportunity. If that unlocks what generations of Baltimoreans and seemingly every food television personality already know, I'll happily come back here and move this to five stars. If after three visits I'm still admiring the institution more than craving the food, maybe it moves the other direction. For now: Chaps is absolutely worth the stop. The food is good, the history is real, and the atmosphere couldn't be manufactured if someone tried. I just haven't cracked the code yet. Four stars, with one more trip pending.

The sides I tried including the beans and coleslaw were also delicious. I remember the coleslaw being good in the past but for whatever reason, this one just hit different. It was perfectly seasoned and went well with the brisket and white lightning sauce. Did they change the recipe or am I just losing my mind? I'm not sure but my stomach was definitely happy either way. My boyfriend also mentioned how the mac and cheese was much better than before and although I didn't try any myself, it even LOOKED better than previous versions. The cheesy sausage was delicious as usual, the brisket was moist and fell apart, and the wings were perfectly cooked and slathered in a delicious buffalo sauce. OH and the drinks? So good. If you like tiki-inspired stuff, you'll love their menu. Is there someone new back in the kitchen working some magic or did I just really miss coming here? I'm not sure but it was one of the best meals I've had here so far and I will definitely be returning!

Beef Sausage was deep fried again not smoked which is why I came to a "smokehouse". Service Review: The gentleman upfront very cool and accommodating. I asked for a sample of the brisket to determine whether I was going to purchase the 1/2 pound or the pound. As he preceded to get the sample the gentleman (who may be the owner, not sure) in the kitchen told him nah we don't do that. This is the same gentleman that rung up my order and he just wasn't friendly almost annoyed while I was asking questions. Ultimately I want to support local business so I will give them another chance. I'll be hoping for a better experience.

The meat seemed high quality and our server stayed on top of switching out the grill and helping us with menu suggestions. My main reason for four stars and not five is I think they could do better with their gluten free friendly options. One side of the menu was clearly marked for gluten free options while the other side wasn't, making it a hassle to flip back and forth and figure out what I could eat. Despite having quite a few gluten free options, they didn't have any gluten free soy sauce (or tamari). This would've really taken the meal to the next level as the gluten free meats come without any marination and are very very plain on their own. We also ordered large combo for 5-6 people which had a good amount of meats and sides but was supposed to come with six servings of rice. We never received the rice but weren't provided a reason or a discount. I'd return in the future but probably smuggle in my own personal bottle of tamari so I could enjoy the flavors of the meat more. Overall, the price at $215 for six of us (plus drinks) was pretty good, regardless of these small hiccups.
