I travel to Baltimore often for work, and when two completely separate people tell me I need to eat somewhere, eventually I'm going to listen. In the case of Chaps Pit Beef, I've now listened twice. First, the setting deserves its own star. There's something wonderfully Baltimore about pulling into a place famous across the country for pit beef, sharing the immediate surroundings with a strip club, and knowing you can shop for used tires across the street when you're finished. Add the walls of awards, television appearances, photos and decades of accumulated lore inside and the whole thing feels less like stopping for lunch and more like making a small pilgrimage. And that's part of why I'm struggling with Chaps. I've tried several of the sandwiches across my two visits. I've piled on the raw onions, pickles and sauces. I've ordered too much--which feels both heroic and completely appropriate here--and walked away convinced that Chaps is very good. But I haven't found my five-star Chaps order yet. The pit beef itself is clearly the reason for the pilgrimage, and the condiment station is part of the experience. Beef, raw onion and that horseradish-heavy Tiger Sauce is a combination I could happily keep attacking. But then you look around at the menu and realize you've barely scratched the surface: beef, sausage, corned beef, turkey, enormous combinations of all of the above, gravy fries, homemade sides and sandwiches carrying names and reputations of their own. It's almost overwhelming. That's ultimately why I'm leaving Chaps at four stars--for now. There's a five-star experience hiding here. I can feel it. I'm just not convinced I've ordered it yet. Next visit I'm stripping this thing back before building it up again: pit beef medium-rare, raw onion and Tiger Sauce as the control. Then I'm going in the opposite direction with one of the ridiculous combinations--probably Guy's DDD--and finally giving the gravy fries their proper opportunity. If that unlocks what generations of Baltimoreans and seemingly every food television personality already know, I'll happily come back here and move this to five stars. If after three visits I'm still admiring the institution more than craving the food, maybe it moves the other direction. For now: Chaps is absolutely worth the stop. The food is good, the history is real, and the atmosphere couldn't be manufactured if someone tried. I just haven't cracked the code yet. Four stars, with one more trip pending. read more

Food: Loved the sauce bar with all the sauce options for your sandwiches, and my favorite sauce for my Pitt beef sandwich was the house sauce! So good! One word: YUM! I'm from Texas so I like to think I have high standard for BBQ. This place came recommended by a close friend. This establishment was featured on Guy Fieri's show and has a sandwich named after him. This is side information, but I usually side eye his recommendations because one time I tried a place that he featured and the food was absolutely disgusting. However, this place was absolutely Yum. The staff was friendly and helpful. The cashier lady super cute and was helpful with recommendations. I got the pit beef sandwich with mac & cheese. The mac & cheese somewhat reminded me of the mac & cheese at this place called Luby's in Texas. It was pretty active on a Sunday evening, but the service was really fast. There are several options on how to order the beef. i tend to go with medium, topped with cheese, lettuce and tomatoes. Note, there is a toppings bar that you can add onion and it is free. And I'm back! And you know it wouldn't be a full service trip to Baltimore without a trip to Chaps! My husband and I made our usual stop and got our pit beef sandwich's and I swear every time it's better than we remember. This time we were also notably impressed by the fry's too; nice and crispy and didn't get soggy with a hefty amount of malt vinegar. The servings are big and a regular to a large is usually only a $1 difference... get the large! They were having a special on jerk chicken and my husband got a whole chicken which we took to go and snacked on the rest of the weekend; it was amazing! The lobby and dining space were also nice and clean, fully stocked, and had lots of seating. I love the indoor picnic tables and the condiment choices (I'm a sauce boss!). We then had our flight delayed... by a whole day! And after our general annoyance we realized we would get to squeeze in one more trip to Chaps, blessing in disguise. The pit beef is pretty freaking good, but no matter what sandwich you get, you get a LOT of meat for what you're paying for. I usually get medium or medium rare, but it's sliced so thinly you could probably get any doneness and it'd still be pretty dope. The Raven or Guy's are usually my two different go-tos. The fries are also pretty dope, freshly cut and fried are always the best ways to go. Plenty of additional sauces you can add at the end, horseradish is usually what I go with but I like the different BBQ sauce options they got. What can I say? Interesting. Stopped in traveling from BWI to PA. With high marks and such fame we figured this was a must stop to see what it was all about. Another big difference is when it says sausage on the menu...here that means Italian sausage, really didn't expect that. We tried the regular pit beef sandwich, the Markie which had beef, turkey, Italian sausage. Also tried mac and cheese which was excellent, gravy fries and cheese fries which were also great these tasted just like Storm's hand cut fries covered in that gooey fake cheese deliciousness. The gravy didn't really have much flavor. The sandwiches had good bread and meat cooked well. We appreciated the bar of delicious pickles and thin sliced white onions. There is an array of sauce choices, and the thing is...it needs it. It needs some kind of sauce whether you choose the horseradish based mayo sauce or yellow mustard based Carolina style, or sweet baby rays...it needs something. To us...if it needs sauce...it's not perfect. We embrace trying new and different styles of bbq in all the states we travel to, so this was a good experience. A Baltimore local told me that if I only make it to one place this should be it. Get the beef sandwich. They have a pretty large menu. Once you see the beef in all its glory on the grill you will want it. I am not sure if I will be in Baltimore ever again. But even if I am close I will uber from DC to visit one of their locations. There is no table service. You order at the counter and then wait for your order. Once you get your food make your way to the condiment area. This is my first time in the new spot. Looks like they moved 50ft to a bigger place. I kind of miss the Divey Charm of the old spot. Place was packed. Cross between locals and food network fans. The outside of the building is covered with accolades and TV shows that have featured this restaurant. You order at the counter and they call your number when your food is ready. I decided on the pit beef sandwich medium, with macaroni salad and baked beans (the latter came highly recommended by the cashier). The food came out pretty quickly and I turned the corner to see an array of sauces and toppings for the sandwiches. I tried a taste of their bbq sauce and found it a little vinegary. I ended up adding a small amount of horseradish sauce to the sandwich. In my opinion, it would have tasted just fine without any sauce, as the meat was pretty juicy. I was surprised at the size of the sandwich, as it was much smaller than the roast beef sandwiches I've had in Massachusetts.
