Out go-to is definitely a half-bird, medium with fries or Mac and Cheese. They've expanded the seating in Block 16 of the cosmo so there's a bit more seating now too. We stopped into Hattie B's in Las Vegas while traveling, and for me this was one of those places I was genuinely excited to try because Hattie B's has become a bit of a tradition. I've now been to locations in Nashville, Franklin, Austin, Atlanta, and now Las Vegas. The one thing that has always stood out to me at every other Hattie B's has been the people. There's usually a friendliness to the staff that makes the whole experience feel a little more personal, like you're getting a small dose of Southern charm along with your meal. At the last location I visited, their fryers were actually down because of a storm, and they were only serving grilled chicken, but the staff handled it with humor and grace and still made it a great stop. That was the biggest thing missing here. To be fair, this Las Vegas location is in a food court, so I understand it is not going to feel exactly like a traditional standalone restaurant. But the warmth and personality I've come to associate with Hattie B's just was not there. Nobody was rude, but there was no real welcome, no conversation, no feeling that they cared one way or the other. It felt like a transaction, not an experience. The food was solid enough and it scratches the itch if you're craving Hattie B's in Vegas, but there were a couple of misses for me. First, no collard greens. That may not ruin everybody's day, but for me that matters. The pimento mac and cheese was good, but I'm firmly about that collard green life, and it was disappointing to see them missing from the menu. Second, the pricing is pure Las Vegas. I understand where I am, so none of this was shocking, but it still stands out. I'm pretty sure the price of my tenders here was around what I paid for a grilled chicken sandwich, side, and drink in Austin. And a large bottle of water for $11 just drives the point home. That part is not really on Hattie B's alone, it is Vegas being Vegas, but it definitely changes the value equation. At the end of the day, if you want Hattie B's while you're in Las Vegas, this will do in a pinch. But compared to the other locations I've visited, this one felt like it had the name and the food, but not the spirit. I first heard about Hattie B's when visiting Nashville, but I've only tried their food here in Vegas. They're located in the 2nd level "Urban Food Hall" called Block 16 at the Cosmopolitan. Hattie's offers a variety of chicken, with or without bones, with spice levels ranging from "no" heat (Southern) to "shut the cluck up!" There are a few sauces, some Southern sides and one dessert (banana pudding). They also have a chicken-forward breakfast menu. I ordered the chicken sandwich, mild (one step above no heat), and the Dirty Bird Fries, also mild. The sandwich includes a fried breast, coleslaw, comeback sauce, pickles and one side; I chose pimento mac and cheese. The sandwich was fine, still with a slight kick despite being mild. I couldn't have handled much more spice; I don't like to be tortured, sweaty or drawn to tears when I eat. I ordered to-go, so the slaw came in a container so I could put it on the sandwich myself when ready. I really couldn't taste the sauce. The mac and cheese also had a bit of a kick, I suppose from the pimentos. I recall the chicken sandwich I got at Howlin' Ray's in the Venetian last year more fondly, but the sandwich here is still good. The Dirty Bird Fries were more unique. Crinkle cut fries with crispy chicken tender bites, pimento mac and cheese and comeback sauce. Very tasty, although the fries could have been crispier. I was a huge fan of Hattie B's when I tried them in Nashville (still my #1 hot chicken sandwich ever), but I've been holding out on a review for their Vegas location because my first two visits were massive letdowns. I came here twice soon after their opening and it was consistently inconsistent - super dry chicken, burnt bread, slow service, wrong orders. It's been about 5 years and I finally decided to give them another try, and my experience finally came close to what I had in Nashville. Orders were correct, food arrived in a reasonable time despite a busy line, chicken was crispy on the outside and juicy on the inside, and the rub and sauce were perfectly balanced. Their comeback sauce remains my favorite. I like to get "hot", but would probably recommend most people start with "medium" as a tolerable compromise of spice and comfort. Only 4 stars given the questionable experiences I had at this location in the past, as well as a disproportionate Strip upcharge on their menu. Ever since visiting Nashville a couple of years ago, I've been dreaming about having a proper bone-in hot chicken* again. I never visited Hattie B's there - instead preferring Prince's, however, I did visit Bishop's Meat & 3, which supposedly serves the original Hattie B's. Since I was in Las Vegas recently, I made it a priority to give this location a try. This Hattie B's is within the Block 16 Food Hall inside The Cosmo, one of a number of small chain restaurants sourced from all across the US. It's very crowded inside, especially on weekends, which makes seating a premium. Still ordering is easy and the food comes out quickly. Small Dark, Medium Spicy ($15.50) - This is a leg and thigh coming as a single piece on top of a slice of white bread. The chicken breading is a hard shell that's kind of gritty like cornmeal. It's very uniform, almost like it's battered rather than being breaded. It sticks to the meat pretty well and has a very hard crunch rather than being crisp. It coats every surface of the chicken. The flavor is a bit smoky and full of cayenne flavor. The medium is distinctively not spicy. Do they tone down the spice levels for Vegas? The skin of the chicken is very well rendered, and the rest of the meat is exceptionally flavorful and moist, being perfectly brined. It tastes different from what I had at Bishop's - missing some of the fragrant sweetness, making the flavor less complex. Still, this is a very good hot chicken, despite the lack of spice. The chicken comes with two pickle rounds and a slice of white bread underneath. The scant amount of spicy oil soaks into the bread, making it a bit more spicy than the chicken itself. Still only a pleasant tingle in the mouth though. The meal comes with one side, with which I went with the Pimento Mac & Cheese. This mac cooks the pasta until it's very mushy, almost indistinguishable against the cheese sauce. Even though it's all texturally mush and stretchy cheese, the flavor is phenomenal, with a bit of sweet spiciness from the pimentos and a deep and rich umami. There's a bit of cheese melted on top to enhance the cheese stretch even further. Yum! The meal also comes with a choice of sauce, of which I went with the Comeback Sauce, which tastes like a slightly spicy ranch with a bit of pickle tang. I didn't use it much since everything else is flavorful enough without additional sauce. Overall, I found the chicken to be a little weaker in flavor and heat as compared to similar ones in Nashville. It's still a spectacular fried chicken and is a must stop for me anytime I'm in Vegas. I will be ordering at least Hot next time. *Anyone else annoyed by the fact that 90%+ of "hot chicken" places outside of Nashville only serve tenders and/or sandwich? I was excited to see Nashville fried chicken in the area, but I was pretty whelmed by the experience. We had a sandwich, tenders, fries, and mac and cheese split between two. We'll start with the positives - the service is pretty quick and friendly, and the portions are quite large. The seasoning on the fries and the chicken were pretty good. They were pleasantly crispy. However, seating might be pretty difficult - it's in a food-court-ish area with lots of traffic, and it's pretty noisy. As for the food - the chicken is pretty dry, and the mac and cheese tasted like the typical "we prepared a few gallons in a vat and scoop it out to whoever orders it." You pretty much cannot eat fried pickles without ranch, and their ranch is pretty good. You get one packet of sauce with the order, any other packet is an additional fifty cent. I'm pretty picky about ranch and it was one of the better ranches! The crinkle fries were good as well-- hot and fresh just the way fries should be. Their shining star is the mac and cheese which was creamy, thick and filling. I'd go back for that alone. We got their lemonade, and it was not kid friendly for one reason or another. I didn't think it was bad. We got their iced tea as an Arnold Palmer as well, and that was actually pretty good. Their service was very quick from the time I ordered and found a place to sit, our order was essentially ready for pick up. Maria (easy for me to remember her name since it's my own as well) deserves a shout out for her great customer service, because she explained everything quickly for me and even tried to find out if the chicken was halal (it is not).
