The line was a little long when we arrived, but it moved pretty quickly, so the wait wasn't bad at all. The menu is pretty simple--burgers, chicken sandwiches, chicken tenders, onion rings, and ice cream--but honestly, they don't need a huge menu because what they do, they do REALLY well. The burger was out of this world! The onion rings were amazing, and the chicken tenders were just as good. Everything came out fresh, super hot, and clearly made to order. The prices are definitely on the higher end, but considering this is inside a high-end casino, that's somewhat expected. And honestly, you get what you pay for. Capon's is a casual food counter located in the Pomenade Food Court in the Fontainebleau. They offer Chef Capon's custom ground burgers and chicken on house made potato buns. They also offer chicken tenders, house made gelato, soft serve, and more. I've been here three times and each visit differed some. I planned to try the pop up restaurant but couldn't handle the long line and long wait to order. I had no idea that I'd be waiting nearly as long at Capon's today. My husband waited maybe fifteen minutes in line to order and then we waited a HALF HOUR for our order to be ready. (I think that is too long for this type of place) Both sandwiches differed slightly from previous visits. Both seemed smaller and both were slightly over cooked but still at least good. The chicken coating was super extra crisp so much so it was scary. It seemed like it had much less sauce too because it used to be a big sloppy sandwich and today it was very neat. Onion rings had a nice crisp exterior and seemed free of oil. I am happy that the pistachio was better than from my last visit and contained a decent amount of fresh delicious pistachios. I was eating in the food court with my friends for EVO and I wanted a dessert to finish my meal for the evening. This place looked promising, so I gave it a try. At first it was a bit confusing to order, since the line was with their main burger line. But ordering was simple once I got to the register. Mango and Pina Colada Gelato: I loved both flavors and the server was amazing. They initially did not have any Mango but the lady told me that she can check the back to see how much is left since she just pulled it. There was enough for 1.5 scoops, so she just gave me all they had. And to top it off, I also added Pina Colada for more of that tropical feeling. The gelato was smooth and flavorful with the essence of mango and Pineapple. I also added sprinkles for the kid inside of me to top it all off. I know I should've ordered a burger at a burger restaurant, but... the chicken sandwich was quite possibly the best chicken sandwich I've ever had. My boyfriend did get a burger, though, and also gave it the same stellar rating. The oil is very inflammatory and fried. Those onion rings were $8 so in all $24 for burger and onion rings. The service was average tho, the woman at the front forgot to put in the onion rings the first time so had to go back and tell her to add them. Was she not listening? What a waste of time, the line was moderate as well, maybe 10 people in total of which all were strangers to each other, so 10 orders. A few people eating nearby and the wait time was sort of long maybe 15-20 minutes for two items. Ambiance is again, smelly. It had a bit of perfume all around the casino which gave me a headache. It has a very natural mango flavor that isn't too sweet and tastes like fresh mangos. I will need to go back to grab the biggest container they sell of this stuff. I bring it back to the table, split the burger in half and take a bite. Wow! Nice size patty that's cooked perfectly and that Raclette cheese elevates the burger to another level. Their service is friendly, but just really slow and clumsy, with multiple mistakes in our order. The Classic Burger was OK, nothing special, and they even messed up our order so we had to wait longer. The food hall is very spacious, with lots of seating, with other food options. The day club just closed so it was super busy when we came, but their staff didn't act like like it. Unless management fixes, I do not recommend. TIP: Be wary if coming on a weekend right when the day club closes. The food hall will have long lines with crowds of drunk and loud patrons. read more

LOADED TRUFFLE FRIES: Pretty steep price for some fries but at least the portion was huge! Good texture and truffle flavor, definitely very heavy though. Make sure to eat them hot because they were rock solid when we tried to have them as drunchies later in the night. CAPON'S CLASSIC: The burger was decent. Nothing super special and I probably wouldn't pay this much for a mediocre burger normally, but it's a Vegas food court so I'm already expecting higher prices. I love chicken sandwiches so was looking forward to trying the firebird but for me, I didn't like the hot honey. It was pretty sweet for me & the bottom bun was drenched in the honey so I ate it with only one bun. The pickles were good & the meat was tender but the hot honey sorta made it all taste odd for me. The Nuttah Buttah was the best sundae I've ever had! I subbed the chocolate ice cream with vanilla and my goodness I couldn't stop eating it even if I wanted to. The hot fudge and Reese cup were nice additions and proportioned perfectly with the rest of the toppings.
