My wife and I came to Hello Shabu after the lunch rush, at about 2pm. The place was almost empty. The tables were all clean and the cold bar was fully stocked. Lunch for two was $71. We were seated immediately and the server took our broth and 2 meat orders. My wife got the beef broth with chuck eye and brisket. I got the exact same thing. You have a variety of cold foods to choose from to add to your hot pot, from seafood to vegetables. Then you can make a dish of dipping sauce from the ingredients at the bar. They have a sign with suggestions for different sauces. There's also a got bar with corn cheese, KFC and bulgogi. These are mediocre. Hello Shabu is a decent AYCE hot pot spot in San Bernardino. Prices aren't too high, and the overall quality is just okay. Nothing amazing, but not terrible either. The biggest letdown for me was the soup broth. Most of the flavor comes from spices rather than a rich base. The ramen seasoning is exactly the Korean instant ramen seasoning, and the rest of the seasoning options didn't feel very different from that either, which was disappointing. While I enjoyed their variety, Hello Shabu didn't offer the best quality of ingredients or prepared foods. They were very slow with protein refills and the portion sizes were small. We paid for our party before entering the dining area and an automated robot delivered our meats. There were three broth options: vegetable, beef, and chicken. These bases could be customized with flavors at the sauce bar. The possible meats included: beef brisket, beef belly, beef chuck, beef top blade, beef ribeye, and chicken breast. The brisket and ribeye were my personal favorites for their balance of fat and meat. I wished the meat came out faster and in slightly larger portions. There were long waits between rounds, so we ended up eating more from the self-serve options while we waited. There were juices available although they were a bit diluted and weak in flavor. There were lots of noodle choices, but we noticed a clump of mold on the egg noodles. It seemed like the ingredients weren't being rotated as often as they should be. With such large quantities set out, freshness was questionable. The vegetables and seafood offered good variety although the vegetables could have been washed better. The prepared foods were greasy and bland. The Korean dishes seemed off in flavor, almost like the seasoning wasn't quite right. The corn cheese tasted more like creamed corn. The tteokbokki was tough and mild. The bulgogi was overcooked with a weak, watery marinade. The shaved ice machine was unfortunately broken, so it only produced a few shavings. Still, the self-serve area had some fun flavors and toppings. The ice cream had a grainy texture and tasted almost floral. The sauce section was the most extensive, Since the broth could be adjusted with seasonings, I didn't need too much dipping sauce, but I liked having so many options. I usually focus on the protein when I eat AYCE hot pot, but the slow turnaround made it hard to get my fill this time. I eat hotpot often and never have I been to a place where you get your own pot!! That's soo cool. *Meats- they have 4 options I think maybe 5?, a small selection in my opinion for hotpot.. but they have the buffet. 2 meat orders per person per order.. a robot delivers them. *buffet- the buffet is in par with all hotpot's I've had in terms of veggie selection/seafood variety/noodles type.. there was literally so many options.. *hot foods-the hot foods wasn't as big as a selection as I was hoping for.. I think there was 5-6 total hot foods.. and one was doubled as rice.. *sauces- there was alot of sauces! And the workers were VERY helpful in making them for you if you needed help.. they even made off menu sauces which I LOOOVED!! *restaurant- the restaurant was clean and well organized and food was always available and never ran low.. service was quick and simple.. *dessert- they have self serve shaved ice and ice cream with lots of toppings.. Overall this place was great! It's been a little while since I've been here, and unfortunately I had a less than stellar experience today. I arrived at 8:30pm, and after paying and sitting down I was informed that last call for meats would be at 9:10pm. That's really early for an all-you-can-eat restaurant that closes at 10:00pm, making it difficult to have a relaxed dining experience. Note also that a sign clearly says that the last call is at 9:30pm, so they're not even honoring their own policy. Seems to me that this just encourages people to over-order during last call, leading to food waste. (Or at least let me know at the register if your policy is different than the sign right at the register?) Anyhow, this issue is compounded by how slow the meat orders come out. It took over 20 minutes for my first order to come out-- To be fair, my other orders were significantly faster, but by that time, last call was about 15 minutes away. I also noticed that the servers were often too busy cleaning up tables in preparation for closing to take people's orders and refill broth, etc. I understand wanting to clean up, but it shouldn't be at the detriment of people's dining experience. Furthermore, the other self-serve areas (veggies, sauces) closed shortly after last call for meats, meaning you can't get any food at all after the meats stop strangely early. I hate to keep reiterating this, but the closure was much earlier than the posted time (which should be a good while after last call for meat). In short: This place definitely needs a change in policy, or if you want to have ample time to clean and close up, just change your opening hours. We mainly ordered a combo of beef brisket, belly, chuckeye, and top blade. Ribeye was for dinner only, and we don't order chicken for AYCE. You have access to a large buffet bar consisting of veggies, seafood, and condiments. Everything seemed clean enough and accurately labeled. You can use their sauces or make your own. They even offer some suggestions on a sign by the condiments, which is cool. It's different from traditional spots where you select a specific pre-made broth like tonkotsu or spicy miso or sukiyaki. I personally didn't mind it--it was kind of fun and customizable. But my husband did not enjoy this part at all. He felt like making your own broth was more work than it was worth, and it really took away from the experience for him. He said it felt less like dining out and more like figuring things out on your own. Meat & Food: We started off strong--the first round of beef belly was excellent--tender, fresh, and flavorful. The hot food area is a nice touch as well with decent Korean food to choose from. I love hotpot, and this is one of the few places in this area that does ayce hotpot! I love the different seasonings that I don't necessarily see elsewhere. Although you can have the waiter pick as many seasonings as you like for your broth, you can customize it yourself from the food island. They have a lot of different vegetables, seafood and meatballs available to choose from, including kale, bok choy, fish tofu, and more. One quip I have is that it feels like the seafood might not be as fresh as you can sometimes smell it from the island. Perhaps it's not cold enough? I also don't recommend the dumplings. Of course, one thing to mention is the fun-ness of a robot serving you. I wish you can order from a tablet instead of hailing a waiter every time, but the robot always brings your meats. The beef broth itself was very bland, and even after trying to customize it with the available seasonings, it still lacked depth and flavor. I love going here there's something about hot pot where it just gives you a different vibe than your Korean barbecue typically because the fact that the meat is kind of boiled in it and the vegetables are boiled rather than grilled they offer some really good milk tea. I had two little cups and their dessert of choice is shaved ice. I'm not a big fan, but hey, it is refreshing now they do offered cook already food like in these catering trays. The only thing is I think that most people don't know they're there so they are hard. Luckily the place was very accommodating. After dining at Hello Shabu for numerous special occasions and outings, I am disappointed to say that I will no longer be going to Hello Shabu due to the unprofessional and poor service. We went on Christmas Eve at around 7:45 PM, stating that we were a party of four with one other individual possibly joining us. The woman (Asian with black hair) at the cashier said that she needed to know "now" due to the 13% gratuity for parties of 5 or more. One member of our party explained how the fifth person had an ETA of 8:15 PM, and the cashier said, "Oh no, that can't happen. We close at 9." We explained how we called earlier that day at 12:26 PM to confirm the hours, and the person who answered our call confirmed that they had regular hours that day with a closing time of 10 PM. Inside the restaurant, they had photos posted of their regular hours and holiday hours, and the holiday hours did not include Christmas Eve. The cashier explained that she was the "manager," and there had been a "miscommunication." She then asked us, "Is this your first time here?" to which we explained that we had been here multiple times since their opening week. This restaurant has the shabu meat delivered via a robot. The servers enter the table number on the robot, and the robot goes to your table to provide the meat. For the first two orders of beef, the robot delivered the meat directly to the table behind us (we were the only ones seated in that section, with no one at either of the tables next to us). Of the numerous times we've gone here, we have never had our meat delivered to the incorrect table. When I ordered meat for the third time, I reminded the server (Hispanic/Latina with pigtails) about our correct table number. She just looked at me without saying a word before leaving. It wasn't until I told the server our table number that our meat came to our table correctly. These staff either can't communicate with each other about the correct hours or fabricated the closing time to leave early. I worry about how these negative experiences will affect the restaurant, as I have already witnessed it struggling to fill its seats with customers. However, customers should not tolerate this kind of service. We have never experienced such improper service at Hello Shabu before, but after being treated with such disrespect, I see no reason to continue supporting this business. read more

This place used to be amazing. We've been coming here regularly since we first heard of it late 2023. The price was decent and the selection was not bad. Unfortunately, given we've been coming regularly, we've been able to notice the steady decline in their offerings. Ingredients no longer looking as fresh as they once did. Other ingredients being removed all together. The very noticeable decline in their beef broth which at one point was a vibrant, aromatic, and flavorful broth has now become a bland clear broth that requires several additions to enhance the flavor. Staff has been slower in attending despite restaurant not being that full. Additionally, over the past year the price has gone repeatedly. When we first started coming Adult Dinner was approximately $28.99. It's currently $36.99, over $80 pre-tip for two. There are other spots that are higher quality at this or near this price point. Be careful when walking around though, we were there on 1/4/2026 and my wife took a major slip. The floor near our table felt oil slicked. We notified staff and they didn't seem to mind. They said it doesn't look wet and went about their day. We spoke to the manager because my wife was experiencing a lot of pain after the fall, we were promptly given a refund and asked to leave. We wanted to file an incident report however the manager said they didn't know what to do. They took our contact information and informed us the owner, Ted, would be giving us a call. The ambiance and decor inside were Asian inspired. You walk in and pay first but how can you pay for gratuity before you even get served? You get a table number and shown to your seat. The place is huge! Surprisingly they were full of patrons but there was never a wait. It was my first time and our waitress was very attentive. She showed us what to do. I'm confused as to why she brings us the seasoning for the soup when they are at the buffet line but that's nice. What she didn't tell us was to make sure to get some ponzu sauce to dip your veggies and meat in to cool off the food. She didn't tell us how to turn down our hot pot as that boils fast. All that we had to figure out. Once we did, we were set. We were there 2 hours and she didn't kick us out. Overpriced for one thing. Weather you go for lunch, dinner, or on a holiday, for a bowl of soup, you pay plenty. They offer no senior discount, and a bowl of soup is the type of food seniors like. They close at a certain time but if you go an hour before they close or less than that, so already telling you we close soon we close soon, get your food because they stop slicing the meats and start closing down sections. I mean if they say they close a certain time you should be able to get your food and not have to worry nervously that you can't go out for seconds or thirds. Also a party of five or more is instant graduity, even if you ask for separate bills! And even if two or three of your party is children! To me it's a little too pricey for both romaine noodles that you can just make at home for 25 cents. read more

Was a little confused at first since it was our first time but our waitress was so kind to explain everything to us. And once understood, it was actually fun to make our own food. Upon entering, go toward the register where you pay first & then are seated. The menu explains each step: choose broth, choose meat, visit bar for seafood, veggies, dipping sauce options, drinks and dessert. Each person can choose two meats, which is delivered via robot. There's a 90 minute time limit, and service was painfully slow and appeared to be short staffed (only 2 servers) on New Year's Day. It seemed as if the bell at the table did not work, because we pushed it several times and no one ever came; so we had to flag down staff each time we wanted to order additional meat and broth. The broth base is very bland (almost like hot water) and the seasonings are much needed to flavor the broth to your liking. The meats are cut to order, and our favorites were the beef belly and beef ribeye. The self serve buffet station is clean and replenished often. It has everything you need, plus all utensils, chopsticks, napkins, etc. They have a large selection of fresh vegetables, fish cakes, noodles and seafood (shrimp, mussels, clams and crawfish) as well as steamed rice and other hot food such as gyoza, chicken and fried rice. read more

Wish I could give a zero. I'm a butcher and can easily tell fresh meat from old meat and the meat they gave was fairly old meat, not saying it's expired but close to expiration. This could happen because of two ways, they buy cheap meat that's close to expiring, or they leave the meat out of the fridge and then put it back in the fridge. I believe it could be both though as some meat were colder than others. Food was good but the butcher in me does not like knowing its old meat. As bacteria could affect the body negatively. Service was cool though with the robot. Did not like how they used packaged instant ramen and overpriced it 10x reg price. Feels like a place that cares about money than customer satisfaction. I wouldn't come again due to the issue of the meat. Fresh meat is red all around, this one was brown. read more
