Fantastic smell from the small parking lot as I entered at noon on a Friday. There was no wait to order and just a slow trickle of patrons while I was there. As I was a first-timer I ordered small. Just a rib sandwich. No sides. It comes unsauced with 2 ribs and 4 rib tips on white bread. Excellent smoky flavor on the ribs. I added a sauce which gave it the perfect amount of kick. Ribs are not "falling off the bone" and that's the way good ribs are. Now, am I still hungry? I am. The sandwich alone is just north of $15. That's about $7 a rib. I'm not sure that it's THAT good. We came in Sunday afternoon around 2. Not busy at all and smelled the smoked meat on the grill from the street. Yum! We had the rib sandwich plate which includes ribs with and without bones and 2 sides. None of the meats come with sauce but you can ask for some on the side. The ribs were good but I prefer baby back ribs which are much more tender. These are considered spare ribs. My 2 sides were mac n cheese and potato salad. Both were delicious. Mac and cheese had just enough cheese and was creamy. The potato salad had just enough of everything. All seasoned well. We also had 2 pork sausages and 2 beef sausage sandwiches with a side of potato salad. You really can't go wrong with sausage links but they were also good nonetheless. Nice and smokey flavor. If, on the other hand, you're sailing down Windy Hill Road in Marietta, Georgia, and you get whiff of hickory, cherry or apple wood pouring from not one, but five smokers right there on the roadside, you might be on to something. For a guy who has spent a lifetime in pursuit of the perfect barbecue (read my more than 125 barbecue reviews from across the country on Yelp), Herb's Rib Shack may be one of the best stories in some time. First off, there really is a Herb. His name is Herb Moore. Big John's in Peoria had its John Robinson; Dreamland in Tuscaloosa had Big Daddy; Bryant's in Kansas City had Arthur Bryant and now Marietta has Herb Moore Herb not only runs the place (a shack is being generous) but he keeps an eye on all five smokers, directs traffic and makes sure everyone, yes everyone, gets a free sample. The back of his tee-shirt says "free sample." The sample is that of a rib tip. Moist, good flavor with a nice bark with a rub that Herb prefers not to disclose. Talk a little bit and you'll be surprised by the honesty of his answers - check it out a few lines down. Order inside where the staff is friendly to the point of offering samples if you can't make up your mind about which of the four sides you'd prefer. The big choice , what meat you'd like, is limited: ribs, chicken or sausage. That's it. No brisket no pork - chopped, pulled or sliced. Herb says he was homelessness a half dozen years back, took what he learned at the meat processing plant where he had latched on, knew what he didn't know and starting selling curbside. Turns out a license was needed, who knew? Now in their new location (across from a bus stop shelter), they now have a license, clouds of smoke, a big sign and Earl's reputation, has the cars turning into the postage stamp size vying for a spot to park. The rib plate ($13) comes with a half dozen ribs tips, three meaty ribs and two sides. The sandwich is two bucks and two sides less. The chicken plate is $11, the sandwich $7. The sausage goes for 6 and $8 sandwich and plate. Sides? Glad you asked. Potato salad, slaw, mac 'n cheese, and baked beans. Four of them. The beans taste like they're fresh out of a can (they are). The potato salad and slaw are good and the baked beans (with a taste of ham) are all good to slightly better. And all are store bought. That's right, Herb says he doesn't know anything about cooking so he buys his sides from the big box where they know that they're doing, ditto the sauce made for him by a couple buddies. Sauce? Yes, you have a choice: one or none. It's pretty good. Fairly thick tomato based with a good does of vinegar. One sauce. Drinks? The standards plus a couple that are not so standard: Rachels fruit drinks made with real fruit juice and, grab your chair, real honey. Strawberry lemonade and peach tea - both excellent. Herb uses a mix of charcoal and fruitwood for the ribs, chicken and sausage (the only meat that's like the sides, is also store bought). Most of Herb's business during the pandemic is pick-up, but if you'd like, he'll set-up a small table outside and you can enjoy the food and the parade. It's worth the trip. Herb's Rib Shack is built around the bigger than life personality of Herb Moore. His barbecue (assuming you like ribs are chicken) is worth finding... but if you go (open Thursday through Sunday), make sure you top off your trip by having a few words with Herb. He's a great story: from homeless to entrepreneur with a finger pointing to the sky when asked how and why he has succeeded. The kind of guy you like to see making good. Another spot visited on my quest for amazing, reliable, consistently good barbecue! Rating 3 stars / A-OK. Leaning towards 4 stars / I'm a fan . . . but I can't honestly say I'm a fan YET. I drove by this spot today on the way to an appointment & the 3 small smokers / grills in the lot immediately caught my eye. I actually picked up my phone - WHILE DRIVING - & scheduled myself a calendar reminder to coincide with the time I expected to be back on this side of town. When that time arrived - 5pm - like clockwork - I got my reminder & actually double-backed to hit this spot up. Formerly a food truck - they are now located on Windy Hill in that block between El Salvador's Bakery & Piedmont Villas Apts. If you're not familiar with the area - the better way to describe might be stretch between Food Depot / Pizza Hut & Advance Auto - on same side of road as Food Depot / Pizza Hut. I turned in lot after nearly being rear-ended by the tailgating idiot behind me & parked. Only to have some other barbecue loving patron speed in park beside me. (More on this later). The 3 grillmasters in parking lot manning the grills & cutting up with one another, made eye contact but ignored my greeting. Kinda awkward - but no points deducted. I hustled myself inside - teenager manning cash register was friendly, well-mannered & polite - but you could tell he was a bit timid & nervous. No pts lost for this either but maybe put more 'seasoned' person out front during peak hours - especially since business is new (more on that later). SO - here's what I discovered. They only have 2 or 3 sides. The posted signage says baked beans & potato salad - but today the dry erase board also listed 'macaroni & cheese.' I don't eat baked beans or potato salad. And when I walked in - there was a woman in line, finishing up her order while attempting to eat her rib sample. And - then folks that nearly ran my car down in the parking lot came in - ordered, then 3 more people arrived. This was all inside of 60 seconds. So - as busy as they were I was loathe to ask for a mac n cheese sample because they were SLAMMED. They have a full slab of ribs for $30 - but the ribs were a little tough for me. See previous reviews - I'm not looking for fall apart, mushy ribs. But I don't want chewy, tough ribs either. The flavor was good - but spicy - subtle heat there, I enjoyed - but I wouldn't give it to a kid unless they were like my Cajun / Louisiana accustomed niece & nephew. Also - for a barebones spot like this - $25 per slab is the norm. They have a chicken sandwich & a chicken plate - signage doesn't indicate - but both are dark meat only (leg / thigh quarter). I was surprised by this - I thought at the very least, the chicken sandwich would be a) grilled chicken breast or b) white only or white & dark combined, shredded, chopped, or pulled. Wrapping up - Friendliness / Customer service - Other than 'grillmasters' - everyone was friendly (even the guy who stuck his head up front - Herb, I'm guessing) seemed eager to please. They even made sure to give me a business card & advised me to call to check availability for full slabs later tonight. They also provide free samples of the pork ribs! When I was there - they literally either handed you one wrapped in a paper towel - or asked if you ate pork - then handed you one. Love that level of customer service & confidence in your product! 5 stars Product / options (or lack of) - choice of 2 sides is fine at a festival or food truck, but most people expect more variety. And I've honestly never gone to a barbecue spot that didn't offer white meat chicken - even as wings. Add to that, my rib sample - though VERY flavorful - could have used another 30 or 40 minutes on the grill. 2 stars Convenience / Cleanliness / Exterior / Interior - Location is very convenient to my home. No restrooms inside. Back when it was Roll's Bar-B-Que Heaven, restrooms were in back - outside access only - may be same situation. Right now - no tables (maybe cuz of restroom sitch) but there are 3 or 4 random chairs in there. The parking lot is limited & TIGHT. 3 stars ********No stars deducted for anything below this line - just notes****** By the time I left - 2 more cars had pulled up blocking in 2 cars that were in legitimate parking spaces. #noracism - but there appears to be a lot of Latino 'working man' type customers (kudos cuz owners actually had forethought to provide menu board Spanish language translations! Awesome!) But the Spanish dude / passenger in car next to me threw his door open & banged the h*ll out of my car without acknowledgement. Then another Spanish dude exiting building hawked a big loogie as I drove past. If you get mad easily, maybe avoid peak times. This is the type of customer stuff I expect at a construction site foodtruck. Owners can't control actions of their customers - but this is definitely NOT - at least not at this point - a sit-down, bring-the-kids/family type venue. read more

Amazing Smokey real flavorful BBQ!!!!! They will even give you a sample when you hit the door. You can TASTE the seasonings on the meat. The large grills outside have a secret pot of onions and other items to infuse the meat with flavor. AWESOME!!! The sauce comes i a hot dog container which desires changing but I don't do the sauce. Sometimes there is a lady selling slices of cake that look truly homemade. I don't get the sides and just go for the meat. EVERYONE I've introduced this place to now goes there on their own. Yes, 100%!!!!!! No joke. One friend orders two plates. One to eat in the truck because it smells so good and one to eat later at home. Herb's Rib Shack has been on my list for a while after a coworker raved about how good the ribs are. I decided to try them out after the initiative from the Yelp Community Managers to support local businesses. I was able to order through Yelp for a contact less pick up experience. I will say I was surprised when I pulled up but happy to see that so many people had the same idea to support this restaurant today. The owner was out front on this large grill. The smell of the BBQ could be immediately smelled when I pulled up. I felt like I was pulling up to a family BBQ everyone was very friendly. There was a line outside the building so there wouldn't be too many people inside. It didn't take long for me to get inside to receive my food. When I reached the counter the young lady said they were out of collard greens which is one of the sides I ordered so I ended up getting potato salad instead. It was actually really good, but my mind was set on greens. The baked beans were nothing special & actually were just luke warm. The ribs were actually the star of the show & were seasoned very well. They didn't even need bbq sauce, but since Im a dipper I decided to try the sauce. I recommend supporting this local business. read more

So proud to see Herb with a location! I've been getting bbq from him since he was on Austell Rd! Always great customer service and the ribs are by far some of the best I've ever had! While you wait Herb gives you a sample of a rib! The location is small so I always get my food to go. Herb has exceptional customer service and a wonderful spirit. You can really tell he enjoys interacting with his customers. There may be a line when you arrive but the wait is always worth the food and the line normally moves pretty fast. The bbq sauce is always bomb so I make sure that my ribs are drenched lol because what are ribs without some bomb sauce?! I literally get the same thing every time I go which is the rib sandwich.
