Yikes, we've been back three times since our last review a month ago. The last two times we've been here we had the sweet and sour fish with pine nuts. Absolutely wonderful. I think it's a whole fish or maybe two fish fillets together. No bones, which is great. The fish is super and the sweet-and-sour sauce is wonderful. I personally found the pineapple chunks that are with the sauce are a little too sweet for my taste. The sweet-and-sour sauce is wonderful on its own. We actually took it all home with us and I'll mix it with some other types of entrées. We had other great dishes, but the two super super outstanding dishes are the green beans with eggplant and the sweet-and-sour fish with pine nuts. I think that in the past month or so, we've been to Highland Noodle four times. The service is always excellent. (If you order a noodle dish, I recommend asking the server for scissors to cut the lengthy noodles.) Can there be a better endorsement? Oh, in this hot summer weather I also like the later closing hour at 10 pm, Monday through Saturday. I think the restaurant closes at 9 pm on Sundays. read more

I have nothing but good things to say about this establishment. Upon arrival I only waited about 2 minutes before someone sat us. The environment was amazing everything super clean, comfortable amount of space as far seating goes. Now the food ! My oh my. I got the spicy beef noodles soup & pork dumpling in chili oil. My wife got the pork wonton soup. The flavors were amazing, the freshly made noodles were to die for. I got a Tsing Tao to drink with it. Everything exceeded my expectations. Visited for my first time on 6/2/26, Highland Noodles was a great experience for Chinese cuisine -- I've only had their cucumber salad, lamb skewers, and noodles so I'm not too sure about the other dishes on the menu but we walked in around the late afternoon and got seated quickly. They give you your own water pitcher so you can serve yourself anytime. We were given a couple minutes to check out the menu before someone shortly checked in on us and took our order. The interior was quite modern, the lighting was warm and it makes for nice casual dining with friends or family. Our order came out after about 10-15 minutes and wow, the noodles were amazing. The noodles are freshly made and pulled and are given in great quantity and quality! The broth was warming and perfectly seasoned and there was an adequate amount of beef in my bowl-- I literally left feeling so stuffed ... The appetizers we order - the lamb skewers and cucumber salad were so good ! The skewers weren't overly gamey and slightly spicy and the cucumber salad was refreshing and had seasoning that made it addicted to keep eating it. I've heard about these hand pulled noodles for a long time and seen vids on YouTube of cooks tossing and stretching the dough up in the air, but I never got to come to a place that has them. No places like that where I live in the Northern Sacramento Valley, but I guess they're common in the Bay Area. So, I was excited to see there was this place, Highland Noodles, that feature all the hand pulled noodles and have a noodle chef that you can watch behind the glass. This restaurant is supposed to be super popular and packed a lot of the time, so I got here right when they opened. Inside is super modern look and clean. So modern, they expect you to use the QR code and use your smart phone to read and order from the menu. I asked for a printed menu, just easier to see the whole thing at once and see the pictures and compare dishes. Service was very friendly and all the servers spoke perfect English with no accents, so that made it easier, compared to some places. I wanted to try the hand pulled noodles, so I ordered the medium sized noodles with the Pork Sauce. ($16.99) That sounded more interesting and unique than just the common beef noodle soup. Also ordered the Chinese pork Hamburger. The picture looked interesting and that was something I never had before ($10.99). I also ordered the Pork Wonton with Chili. ($9.99) That's a lot for one person, but I'm here so I wanted to sample more stuff. I watch the guy pulling noodles and tossing them about. That was kind fun, I think he was used to customers watching through the glass. The food arrived quickly. The wontons in chili sauce wasn't as spicy as I thought, not too spicy at all. The wontons themselves I could tell were handmade and stuffed full and more firm than most wontons. I'd get the more spicy version next time. The Chinese pork Hamburger looked like a pita stuffed with ground pork stuffing, but it was I guess two round dough patties with stuffing in between and then sealed up and deep fried. It was good and tasty, but again thought I'd like it more spicy. There's chili oil at the table if you want. The "Pork Sauce" over noodles was something I never had before. Again I asked for a 2 star spice level, but I could have used more spice in it. It was tasty enough and had all kinds of spices and herbs in it. It was served with the pork sauce on top of the noodles. I was told to mix it all up, so I used chopsticks and a fork to toss the noodles. I didn't finish it all so took home about half and half the Chinese hamburger thingy. I liked this place, just wish it was closer to where I live. I expected a wait in a place this good. I wouldn't be surprised if they will be on the Michelin guide soon. We came one Saturday lunch and there was a 45 minute wait. While waiting we were entertained by the live hand drawn noodle station. Once seated, their friendly server took our orders right away. Our appetizers were served in less than 5 minutes. The noodle soup took about 15 minutes to be served. Everything we ordered was yummy but for me, the star of our lunch was the porch dumplings in chili oil-the broth is creamy yet fresh and light. New popular spot known for hand-pulled noodles [Roseville CA] A friend and I dined here for the first time. Fortunately, on the evening we dined the restaurant was not super busy (but it can be). Reservations are recommended for parties of 6 or more. You can also add your name to the waitlist through the Yelp app. I ordered the Beef Broccoli Rice Bowl while my friend chose their Spicy Braised Chicken w/ Flat Noodles. I like rice but dang! mine was too generous and not enough meat. Where's the beef? I think it could use more flavor but they do provide some sauces per table for more taste. Anyway, there's more to try from their diverse menu which is accessible by scanning a QR Code. Specialty dishes include noodle soups, dim sum (dumplings, buns), stir-fries, and desserts like red bean bao. We came because we heard of their hand-pulled noodles but were impressed even before we sat down by how grand everything looked when you first walk in! This is place is date-worthy, with a beautiful design and good food to match. We tried a variety of dishes, including a bowl of extra broth with cilantro and onion plus hand-pulled noodles, green onion pancakes, chicken and corn dumplings and miso soup noodles. The noodles were fresh and the broth was tasty and the appetizers hit the spot. The miso soup noodles didn't have enough broth or flavor but everything else was solid. The service was awesome. Everyone from our server to the food runners were amazing and quick to get us whatever we needed. There's an area at the front of the restaurant where you can watch their noodles being freshly pulled, which was cool to watch. I was doing some shopping at the Galleria and almost just popped into Panda Express as I was craving for some sweet orange chicken, but then I thought I wanted something a little higher quality and I remembered about the hand,-pulled Noodles at Highland Noodles being in the area. I pulled up the venue and lo and behold. They had sweet-and-sour chicken/orange chicken and sweet sesame chicken. I drove across the street from the mall and was lucky enough to get in without a wait. I knew I wanted to try the flat wide Noodles and they were more than happy to give any type of noodles with any stirfry or any soup. The waitress highly recommended that I had the sweet-and-sour fish, but I wasn't up for fish so I got the sweet-and-sour chicken. It was delicious little heavy on the bread but that's OK because the sauce was perfect and the noodles were to die for. There was a lunch special also that I often not to get cause. I just wasn't thinking that I would be able to eat that much food. And I was right the plain needle dish with out on the sides was twice as much food as I could eat. The noodles are hearty and delicious. I highly recommend trying anything you like on the Noodles. The Resturant is night clean and modern . There is ordering via QR code on the table however the great wait staff will offer to explain the menu items to you. Your table setting comes with chopsticks and your meal usually comes with fork for serving and spoons for soup. You can also request scissors to cut the noodles that are very long, but there's a tradition of keeping your Noodles uncut in many Asian countries so for long life so I passed on scissors. The online menu has photos of every dish, including all of the Dim Sum. I believe the photo I took of my white Noodles with sweet-and-sour looks way more appetizing than the noodle sweet-and-sour dish they have on the menu. First time trying this place and it won't be the last! Hand pulled noodles! You can taste the clean, freshness of the noodles. Different noodles texture of choice, from thin to thick - thin or flat noodles. We had the Lanzhou Hand Pull Beef Noodle Soup. Although the soup looked simple, it was packed with flavor. We also tried the Pork XLB and it was very good! The garlic A choy was fresh and delicious!! The place was bright with modern looking interior. Booth seating for more privacy but also have space to accommodate large groups, open kitchen, and a viewing area to watch the hand pulled noodles being made. You can hear the sizzling of the wok. The vibrant atmosphere and buzz of conversation made our table talk a bit more difficult. A paperless, menu QR code spot. Our server was very pleasant and very attentive. DELISH! No notes! Hahaha but this is a yelp review so there are gonna be notes! First off they have a online yelp waitlist which I highly recommend to join prior to arrival! Especially on the weekends because they do get busy. I join the waitlist 30 minutes prior to arrival while getting ready and didnt have to wait. The interior is decorated with clean and modern asthetics fused with asian culture which is always very nice. They have an open kitchen so you can see where the food is getting made and maybe if youre lucky you get to see the chef throwing down some noodles! You are allowed to customize your noodle type which is awesome so we got to try a couple different ones all of them were amazing. Very elegant interior. It was packed when we went and there was a wait but it wasn't too bad (near peak lunch hour on a Saturday). Ulysses was really friendly and answered our questions with smiles. Because it was so busy, service was slow but I never felt rushed or anything negative when he was assisting us. He picked up that I enjoy garlic and suggested the chili flakes noodle. He also offered extra garlic in my bowl which was a pleasant surprise. When my bowl came, I was shocked by how much garlic there was! I know it was extra but I was wowed by how much, and it was so fresh too. The noodles were cooked perfectly, and sauce flavor was good but felt like it missed something. I ended up having a lot of sauce and ground pork left over (+ garlic), so I got an order of extra noodles to-go. Even reheated, my leftovers were very enjoyable. My breath smelled like garlic for days lol. My husband got the Dan Dan noodles. I can't speak on it since I'm not a fan of Dan Dan noodles in general, but it was definitely peanutty. WhOoOOoHooooo, this place serves up good quality food! I'm more of a Pho person versus ramen, but when it comes to this place it has won over my stomach. The noodles are so fresh and this is what makes all their dishes so much better than anywhere else. Next it's the broth, the broth is so rich and flavorful. For appetizer I would recommend the beef burrito, think French dip korean spring roll. SO.GOOD. Making me wish I had one right now. This is a family style type restaurant so it's good if you can come with a group to try even more dishes! We arrived right when they opened at 4pm on a Sunday, and it was a good thing we did because the restaurant quickly filled up afterward. Overall I was just a little disappointed by the flavors overall. Most of the dishes were quite bland. The only memorable thing I had were the sweet rice cakes. Strangely they were the first thing that showed up before all the dishes so we ended up having these dessert items for an appetizer. I had the highest expectations for the noodles dishes. We tried the Mongolian beef and the orange chicken noodles. The beef had more flavor, but orange chicken was completely bland with not nearly enough sauce to cover the noodles. The noodles didn't have that thick hand pulled texture I was expecting, and it was closer to a linguine shape. It seemed pricey too, for example the XLB and the siumai only came in a set of 4 and they were already $9.99 each. Typically the XLB is one of my main indicators on these types of restaurants and unfortunately it was a letdown here - the outer dumpling skin was just too thick. I'd probably only come back here if I was invited but otherwise I would not go out of my way to come back. read more

"Noodles" is definitely a highlight, as the name emphasizes it, at this restaurant! Parking gets crowded, so good luck with that - otherwise the service, staff promptness, food, and ambience are all wonderful with top scores across the board. Best Advice? Join the Yelp waitlist ahead of time so you can be seated as soon as you arrive (and on time). As of 4/4/26, wait list worked nicely on Yelp but you know how it goes - things change and suddenly it's turned off thus having to just go in person. Our top favorite - Dan Dan Noodle with thin noodles (spicy)!! Waiter recommended it and he sure didn't disappoint! As soon as you hit that first bite, you already know how lucky you are to experience the taste of this delicacy. This is one of those dishes for us. Jackpot, bullseye, whatever you wanna call it. I'd highly recommended trying this one. Taste is very flavorful with just the right amount of spice. My other favorite, as an eggplant lover, is Stir fried green beans with eggplant. Powerful flavor woth every bite! Need more spice? Grab a spoonful of spice already available at the table. Other goodies that were great but I wouldn't say spectacular (came out as expected, didn't launch us to Mars and back) - Pork Xiao Long Bao (4 pcs), Garlic a choy (wife liked it, I didn't care much), fried rice with shrimp, and Chinese beef burrito (yummy for sure but didn't knock my socks off). Came on a weekday during lunch hours and they were packed. Luckily, we were still able to be seated immediately upon arrival. I love how they have vegetarian options for every category in their menu. I ordered their egg and tomato noodle and seaweed salad because I saw my neighbor seated next to me enjoy his and I had to try it. My boyfriend ordered their orange chicken rice bowl. The seaweed salad was delicious, fresh, and packed with garlic flavor. I'm drooling just thinking about it and would go back just for this. The egg and tomato noodle dish was good but too sweet for my liking and a bit underwhelming. I've definitely had better home cooked egg and tomato but the noodles were great and perfectly chewy. Finally was able to try this location. The first time I tried to eat there, the wait was over 2 hrs long. Most of their seating is for parties of 2-4. The menu is a QR code you pull up through your phone. It would be better if you can order through it was well because it was hard to go back and remember what items I wanted to order. Also, I wish the menu had better descriptions of the items. I wanted to avoid anything with cumin in it lol. Our waiter was nice enough to help check if certain items had cumin in it or not. The hand pulled flat noodles were great. Loved how they're al dente and have a good chewiness to them. Other than the hand pulled noodles, the times we tried were only ok. What a great meal! We came here and tried a good portion of the menu. In addition to the photos we had the shrimp dumplings and pork bao. Favorite was the chow-mien and also the crab wontons. The ube matcha was very tasty and great for us to share. The spicy burger was next in line - a bit messy (good thing!) and super flavorful. Wasn't too spicy for me, but had a little heat. The dimsum was not our favorite, when we come back I'm going to try pot stickers. The general chicken was ok, we read reviews and that was a "crowd favorite" but it wasn't our favorite. The noodles were more spicy and sweet/sour flavor than savory. My wife and I both said we wished we ordered two plates of the chow mein, so we decided to order one more to go! Very classy vibe inside the restaurant and food came out pretty quickly (shrimp dumplings took longest, everything else was quick). We visited Highland Noodles where the noodles are made fresh to order, and you can actually watch the cook making them. I ordered the braised beef noodle soup with the thin flat noodles, and the noodles were cooked perfectly al dente. I loved the thickness and texture. Because they are freshly made in a circular motion, the noodle is continuous with no clear beginning or end, which made it even more enjoyable. The broth had great flavor, and the portion was very generous. There was a good amount of noodles, beef, and vegetables in the bowl. The beef itself was very tender, though slightly on the dry side. We also ordered the spicy braised chicken with regular flat noodle dish, which came with a huge amount of chicken. The portion was so large it could easily feed three people. The dishes here are perfect for sharing so everyone at the table can sample different items. The restaurant has a nice, modern decor, and it's fun to watch the noodles being made fresh. Already so in love with this place! I got their sour soup, and it was flavored so well, and it tasted very nostalgic for me. I grew up eating sour veggies, so it was such a hit, felt like a home cooked meal. Servers were great! Fast and food came out just as fast. This place is extremely clean and modern, and they have lots of booths and tables. On top of it all, the noodle soup portions were LARGE. I've stopped in two weeks in a row now for takeout and have had a great experience. They have plenty of parking in the lot and their restaurant is a good size for dining in, with tablespace for different sized groups. When you walk in there's a Yelp waitlist kiosk and if it's not busy the staff will help you. Since I was ordering takeout, I just placed my order with the team up front and waited on the benches. The cool thing is the chefs are right there hand pulling noodles in front of customers and they offer various sized noodle options. They offer noodle soup, stir noodles, dim sum, rice bowls, and a few other types of options as well as some drink options. On both occasions where I placed orders to-go it didn't take long for them to be ready and they were packed nicely for the drive home. Upon arrival home everything was packed well and the containers are microwavable to east to heat anything that needs it back up. My favorite items that I've tried so far have been the Braised Beef Soup Noodles (absolutely delicious), the Chinese Beef Burrito, and the Pork wonton with chili sauce and sesame. Takeout is delicious, but I'm sure everything is even better if you dine in because it's fresh and plated exactly how they intend. I'll have to have that dine in experience soon! read more

What we had today 3/11/26 Honey Walnut Shrimp- (according to server we are the first customer to order as they just launched last night) Shrimp batter is crispy and succulent inside. The mayo condense milk sauce is perfect it's creamy and not too sweet. Braised Beef noodle is good just the beef dry when you chew.. I wish they use brisket not just beef chunk. Second time here, and I have to say this might be the best Chinese food I've had. There hasn't been a single item I didn't love. Everything tastes extremely fresh, vibrant, and delicious. The Dan Dan noodles and wontons were executed perfectly. The dough tasted freshly made and had a nice chew to it. The wontons were extremely juicy, and both dishes had a great level of spice. The orange chicken was also really good. It doesn't really taste like Panda Express, but I don't mind that at all. It has a nice citrus sweetness while still keeping a slight crisp, even though it's drenched in sauce. The highlight for me is the stir-fried green beans with eggplant. The green beans are good, but that eggplant is incredible. Tender, packed with flavor, and extremely addictive. It's honestly insane how good it is. I would come back solely for the eggplant. It's a must-order here. The best way to describe the food here is perfect execution. The interior is clean and grand, and service is fast. Our first dish came out just minutes after ordering. The website could use some improvement, especially when ordering on the phone. Overall, this is my favorite place to eat in Roseville. I've been hearing a lot of great things about Highland Noodles so wanted to try it. The last time I had noodles like this was from Yang's Noodles in south sac before they closed down. This place is still extremely popular and crowded. We were quoted a wait time of about 50 minutes. Luckily I called in to check and was able to add my name to the wait list over the phone. I drove from downtown Sacramento and still had to wait about 25 minutes for a table when I got there. The restaurant is really nice and they seat a decent amount. It's just always busy, so seems crowded. When we were sat down, we were brought water and quickly greeted by the staff. Customer service was great. We ordered a few noodles: Dan Dan Noodles, spicy ground pork Noodles, and braised beef noodles. We also ordered the spicy wonton dumplings. Everything tasted fine. I would say my favorite was the wonton dumplings. It had the most flavor to me. The noodles are decent. But the flavoring and broth are okay to me. It's hard not to compare it to pho, but to me, pho has more flavor. I still enjoyed it. The texture of the noodles themselves were actually great. We came in around 12:40pm on a Friday and were lucky to get seated with almost no wait, which was a plus. Service overall was friendly and attentive, especially considering how decently full it was. That said, they squeezed the five of us into a booth and added one extra chair. With 5 people ordering 6 dishes (3 appetizers and 3 mains), the table felt really small for the amount of food. It was pretty cramped once everything came out. They also didn't have spoons available at first because they were still being washed. Womp. I'd recommend going earlier in their service hours. By the time we arrived, they were already out of spicy wontons, which was what we really wanted to try. Here's what we ordered: Cucumber Salad - 1/5 Too garlic-forward, watery, and the presentation wasn't great. Beef "Burrito" - 5/5 Crisp exterior with beef and fresh cucumbers. The sauce is what makes the dish. So good and I'd order this again. Braised Beef Soup - 3/5 Flavor was solid and the noodles were great, but it came out lukewarm, which took away from it. Spicy Flat Noodles - 3/5 Tasty, but more curry-forward than expected. Still enjoyable. Shrimp Fried Rice - 4/5 Great portion size and solid flavor. Would get this again. Overall, Highland is okay. Some dishes were strong, some were just average. If you go, aim for earlier in the day and maybe keep your group size in mind since table space can get tight. read more

We ordered the chili oil wonton- average, had too much peanut oil or something that made it taste like peanut, texture was so so, but I would probably order again to see if would be made better! I ordered the tomato and beef noodle soup with thin noodle! Broth was a little sweet yet very tasty and went well with the beef! Beef on the other hand had good flavor but was a little dry and tough, needed more fat on it! Noodles were the star, excellent texture and cooked to perfection! My wife ordered the braised beef noodle soup with hairline thin noodles! This dish had Great flavor and the meat was tender and the noodles were excellent. Also, we ordered the green onion pancake and that was awesome! It was crispy and a little flaky with great onion flavor!! That is a must order!!! Definitely get that again! Service was overall really good! The manager Ulysses is great, very friendly and made sure we were satisfied and wanted to sure the food was good!!! I tried the beef roll, beef noodle soup, Dan Dan noodles with pork, and spicy wontons. The beef noodle soup was good. The noodles were made fresh and had a good bite to them. The soup had a good amount of spice and herbs - you could really taste the cilantro. The beef was very tender. Pass on the spicy wontons. The wontons were very dense and the peanut sauce overpowered the dish. Dan Dan noodle dish was okay. The noodles were great but the sauce was too salty. Pass. Beef rolls were standard. Highland noodles has skyrocketed to my favorite place for noodles! The service was ok, the server wasn't much help but the food made up for it. The Dandan noodles were the best part for me, kinda like a Chinese version of spaghetti, highly recommend! I plan on working through the whole menu, so far everything's been good which includes the soup dumplings, chili wontons, and the beef patty. Service was really good and the restaurant was very clean. They bring you a water carafe per table to serve yourself water in tea cups. Food was good overall. We ordered pig ears, pork dumplings in chili oil, braised beef noodles, and mandrin chicken with a side of rice. Rice is extra charge for the chef specials. We enjoyed the Mandrin chicken the most when it first came out. It still was crispy and not soggy yet from the sauce. So I recently found myself looking for a spot in Roseville for an impromptu dinner with my daughter-Roseville having so many options,not always an easy task deciding-but we both agreed to a spot that neither of us have had the pleasure of dining at yet-we chose Highland Noodles-a relatively new noodle shop located in a shopping center across the street from the Galleria. Plenty of parking is available for this restaurant as it's located in a multi tenant shopping center. Upon walking in,I saw the trusty Yelp waiting list kiosk-I've had great experiences with any restaurant that has had one of these things-so good vibes right away.Luckily for us,there was zero wait,so did not have to use this kiosk to get on waitlist but I'm glad it's there for future use. So upon sitting down,I walked past an employee that seemed to be making fresh noodles behind a glass window-my expectations are skyrocketing for this place when I saw this. Our server informed us that the employee we saw basically makes fresh noodles all day-pretty much made to order-which is just insane to me to think that such a place exists to get noodles that fresh-I was impressed. The menu u get from scanning a QR code located on the table and holy smokes,I did not expect so many options-I truly thought they were just a noodle/soup shop but this menu had depth-dim sum,traditional Chinese plates,along with the aforementioned noodle and soup options. We decided to go with the Spicy Beef Noodle soup($17.99) and the Braised Beef Noodle soup($17.99) and as an appetizer we went with Pork and Shrimp dumplings($9.99).This restaurant offers at least 6 different size/type of noodles and we couldn't decide so we let the server choose for us. Before our soup arrived,our server brought us a pair of courtesy scissors-I was puzzled but was told the noodles are very long in our bowl and many customers want to cut them down-hence the scissors. We got our dumplings first and at initial look,seemed rather plain but man o man,once I took a bite after dipping them in my own chili oil/soy sauce concoction I made with the table side condiments-talk about a flavor explosion-they were anything but plain-very very tasty. Both soups were delicious,the freshness of the noodles were unsurpassed-just knowing that the noodles we were consuming were not even made 15 minutes before I was eating them just made that experience so much better.If I'm being honest though,the thing I loved the most about my soup was the broth-the richness,the depth of flavor-not too spicy yet not too bland,just right amount of seasoning-this broth is what I strive for when I'm making broth at home but could never accomplish-I wish I knew their secret-incredible stuff that night. Me and my friend were in the Roseville area and stopped by Highland Noodles which has been on my list for a little while. I would definitely recommend joining the waitlist before you get to the restaurant, because there was definitely a wait, but nothing terrible. Me and my friend ordered the Spicy Braised Chicken with Flat Noodle to share, and I was impressed! It's definitely spicy, so be prepared! The portion size was huge! We were able to both bring home a serving for l leftovers! The taste is very similar to the Uyghur dish Big Plate Chicken. My only comment was I wish there were more noodles and potatoes, because it was definitely like 90% chicken, which was delicious, but would have been nice to mix in more noodles. Went on a Monday for lunch and was seated right away. It was pretty loud in here so be mindful when bringing your small babies, mine got overstimulated after a while. The orange chicken and sweet and sour chicken were really good. The star of the dishes were obviously the noodles. They were cooked perfectly and had just the right amount of chewiness. I don't think the pictures do the amount of food justice because my plate lasted me 3 meals after I took it home. We also got the pork buns and egg yolk buns. Both were amazing as well. I got a coconut matcha to go which was okay, but I barely tasted the matcha, and mainly tasted coconut water. Overall I'm really pleased with the food. I was craving wide noodles and wanted to also try their most popular medium firm noodles too so gave those a whirl Spicy beef noodle soup 8/10 the meat was super tender and soft, soup was also pretty flavorful, this was def the perfect dish to use medium firm noodles with! The noodles had the bounce, chewiness and texture you need in a solid soup dish Also got this was wide noodles and IMO, the medium was better.
