It's nice to have true variety in flavors and I really enjoy that about it here. I really liked the Aglianico! Howdy Y'all!! We visited Hilmy Vineyards during Spring Break '26 after reading a positive Yelp post. Food - We didn't order food as we were there to try their wine. We did enjoy the 5 wine tastings for $25 - 2 whites and 3 reds, I think. Ambiance - They have several Adirondack lounge chairs on their back patio that overlook the peaceful vineyard. These were all occupied so we found a quiet 4 top table out of the 20 mph wind. It was a Tuesday, so there was only one kind lady handling everything for maybe 30 patrons. THE BIG: Located off the 290 strip right after the Rhinory. Pretty spacious tasting room with a beautiful view of the vines in the backyard patio. Plenty of parking as well. THE BLACK AND WHITE: When walking in, you see this big imposing door that looks hard to open but is really easy to get through. The bar is wide and they have a variety of different whites and reds all sourced from either the estate or in Texas High Plains. My favorite wine that they have recently is the sangiovese, although a nice Juju is great if you want to have a bit more body and tannins. For whites, the Marsanne and sauvignon blanc are always a good choice. All available in their tastings! They even have a eclipse wine called penumbra, which I highly recommend giving a try. THE FINAL BAMBOO: Overall a tasting will cost around $25 for 5 wine pours. I personally love their wines and Hilmy is always a spot we frequent everytime we are in Fredericksburg. read more

Absolutely love this winery! The service is stellar, and the wine is absolutely amazing (Texas wine), the venue itself has a beautiful aesthetic. Kris, who served us the day we walked in, was absolutely amazing and so knowledgeable about all the wines and very, very friendly. This was our last stop. We didn't get to enjoy it as much since we didn't want to overstay our welcome. I ordered a glass of Sangiovese. It was good. Dry. My friends ordered a bottle of the orange muscat. They love sweet wine and really liked this one. The server was nice, but did question us a little too long about how much we have had to drink prior to serving us. None of us had that much to drink prior to arriving at this winery, but I guess I understand. It was after 5pm and most people have been drinking all day when in the area. read more

We have a handful of our favorite wineries in the Hill Country and Hilmy ranks at the top of our list next to Ron Yates, Adega Vinho and Siboney. We can appreciate a smaller boutique winery with less crowds. We find it to be a much more enjoyable experience. Also, Hilmy's award winning wines are worth a visit. Reds or whites you will find one you love. I would give this winery a try on your next visit. We had a blast at their True Crime and Wine Event last weekend. read more

Hilmy Cellars is by far my favorite winery in Fredricksburg! My husband and I decided to take a weekend getaway to Fredricksburg to relax from the buzz of the city. One of the things we wanted to do while visiting the Hill Country was to do a winery tour. But for our surprise every winery we visited was full of wild and crazy bachelorette parties (since when did Fredricksburg became Bachelorette Nation?! ). After 5 failed attempts of visiting different vineyards and trying to have a "relaxing" wine tasting experience, my husband found Hilmy Cellars on Yelp and it was PERFECT! Their place is right off the same highway as all of the big wineries, but tour buses don't stop here so keep that in mind. Everything about this place was just so relaxing; from the beautiful vineyard, to the very friendly Great Pyrenees saying hi to everyone and the superb wine. After the tasting, we decided to go for a bottle of their Rose which was amazing! read more

Sad experience. Walked in and was looking forward to the tasting & overall time there. With in the first few minute we were met with frantic wine servers who seems to be using negative language and complaints. They definitely let us know that they were having a bad day. They charged us up front which I thought was odd (but fine..), usually tasting they will charge after the experience. That set a tone for sure. Part of me just wanted to walk out and go somewhere else. Our server eventually lighten up and was fine. Gave us some good information along the way. Wine was okay, minimal pours and no accompanying snacks to complement the wine. Service was painfully slow on the patio. Our neighborhood conducted a wine tasting tour of the TX hill country and this was our first stop. They had a couple tables set up inside in a "U" fashion with wine glasses and comment card of all the wines we were going to taste. This tour was included in our price ($20) as we got to tasted either 6 all white, 6 all red, 6 combo white / red. The representative talked about each wine we were tasting and I felt kinda bad because our group talked over her in conversation, it didn't help as the building echoed very badly. We persevered thru the tasting and enjoyed commenting on each bottle we tasted. Several of us walked out with a bottle for future enjoyment or as gifts. The space and tables didn't really accommodate our group as people were standing behind their partners due to limited space at the tables. I recommend if the weather permits, to take it outside in a larger area, this would also alleviate the echoing and minimize the loudness of the group I really enjoyed myself here and appreciate that the tasting was somewhat organized. I wished our group would have been cooperative and also wish the representative would have talked more about the wine and what to expect / look for when tasting it. I.e. nutty, fruity, peach taste etc read more

The wines here are really good quality. The problem I had here is the service when there was hardly anyone there. 1) 40 minute wait to get water we asked for on arrival 2) 30 minute wait to start our tasting ( which we made a reservation for) 3) first wine was poured and then she walked away after saying "this is a nice one to start with". Okay? 4) After 80 minutes, we had been through 3 of 6 tastings and I politely asked to receive the last 3 together so we could accelerate our departure. This did not happen 5) she skipped the last tasting for one person in our party. I am sympathetic to any business that's understaffed right now. Truly. That said, don't have reservations exceed your capacity to give folks an experience. I would have probably bought 6 or so bottles based on what we all liked but we didn't get any description of wine and felt line we were an inconvenience. Been coming to Fred for 15 or so years and this was the worst tasting experience I've had. read more

This is my favorite winery in Fredericksburg. In my youth (jk, just up until a couple ago), I felt very indifferent towards white wines, until Hilmy introduced me to the Viognier. Game changing! Overall, the wines at Hilmy are on the drier side, which is perfect for me. A lot of the other spots in the area specialize in fruit-flavored wines that taste pretty much like juice. I've enjoyed the tasting here before, but my friends and I have also split a couple bottles while sitting outside by the vineyard. It's a great view when it's not too hot. They also have a chef that makes delicious charcuterie plates to go with the wine. Highly recommend! read more

We came here on a girl's trip on our way to Fredericksburg in late December. This was the first winery that we tried. I enjoyed the tasting and the guy helping us was very informative and told us about the flavor and what it was good to pair with (steak, seafood, chicken). I really appreciate him treating us with the same treatment as your older people - I think some of the wineries just think that because we are 4 Asian girls (in late 20s / early 30s) that we just want to drink and don't appreciate the experience and wine. Also you don't have to stick to the 6 tastings if you want to try something else. The guy next to us asked for sweeter lighter wines. The 2013 California Viognier was my favorite. The reds were a bit too dry for my taste. My other friend substituted the Tempranillo for the Moscato which was great! :) The vineyard had only dark shriveled-up grapes but its December, so not sure when is a better time to go. read more

Hilmy sits on the right of 290 as you approach Fredericksburg. We had passed it a few times and decided to give it a try - and are very glad we did. Their Semillon & Texas Blanc vintages stood out - and I am normally a red wine guy. Their cab is also excellent. Back when the winery was new (Summer 2013): We have visited this winery twice now. The young Mr. and Mrs. Hilmy are very sweet and very welcoming of guests. They remain open for individuals who call ahead who may arrive near closing time. Neldy remembered my husband and I from our first visit. Although they only have four wines to sample, I enjoy each one. I feel that they take the time to craft a small selection of beautiful wines rather than a larger selection of mediocre wines. The husband has been crafting wines for nearly 15 years as an amateur. He left his prior profession to pursue his passion full-time. Hilmy Cellars is slowly becoming one of our regular stops. We will be visiting again! Well, we visited again and now I am torn. This was one of my favorite wineries; however, the flavors just weren't there this weekend (07/19/14). The three white wines tasted too similar with no distinction. The two reds were okay to all in the party. There were make-shift tasting counters that made the tasting room feel smaller. I really loved Hilmy, but I didn't see the owners and the feel and taste seemed like the winery grew too fast. read more

I've been to Grape Creek and Becker Vineyards so far, and they're OK, but Hilmy's wines are my favorite. They're on the dry side, and there's plenty of character to them without their being distracting in a meal. If you do prefer sweeter wines, they have two rosés, and one of them is sweet enough to please your palate. It's still really good, though! The sweetness isn't covering up the quality. My husband, who never gets sweet wine, actually ordered it! Literally everything that they make is good if you're actually into wine. This is wine for real wine lovers. My husband and I just joined "The Flock," which basically means that we agreed to buy three bottles a wine from them four times a year at a slightly discounted price. In exchange, we can schedule free tastings for us with our friends, and we can go to special events. Last night, we looked at Saturn through a telescope! It's a nice way to motivate ourselves to take a break and get out of the city. The property is pretty but fairly modest. Not as picturesque as a place like Becker, but certainly relaxing enough. There's a bocce court, but it's not shaded, so you'd probably want to do that in the cooler months! The people who work there do a fine job of describing the wine and are generally nice, but this isn't one of those places with cute "characters" working the bar. I have yet to spot any of the animals, but I'm sure they'll turn up eventually! This place may not be for everyone, but if you love wine, you should make it one of your stops. read more

We've been flock members for years and I've never written a review, it's time. We discovered this vineyard due to past friends who ran a wine store in SATX and took us specifically to Hilmy. We fell in love with this place instantly with the farm animals roaming around to the beloved Great Pyrenees pups laying about during the day after working all night. The wine is best in the Hill country for our taste and we've tried around 10+ other vineyards in the area from Johnson City to Fredericksburg. The atmosphere is quaint and intimate unlike some of the cattle call vineyards in the area with 100's of people clamoring for a pour. They usually have live music on the weekends and a gourmet food truck on site. The wine is focused on our Texas soil and climate they're not trying to make Chardonnays here. The Tempranillos are best here along with Sangiovese and other Spanish/Portuguese varietals. The whites are sublime with the Viognier being our favorite. They don't really do dessert wines but more complex fruit forward dry wines with depth and flavor. I would highly suggest coming up and doing the sampling and then buying a bottle and hanging out. read more

We enjoy our stops to Hilmy but when I compare to other wineries in the area I think there is much better. As a whole we like one or two of the wines each tasting. The bottles are significantly more expensive. And what bothers me the most is the lack of knowledge their staff have! I want to hear about the grapes. Learn about the blends. They just read what's on the tasting sheet. One guy when asked a question actually handed us a book about wine and told us we could look it up. Wtf?! Like I said. I am on the fence with 5 but the wife adores the place and who can resist a winery with big furry dogs! Much more modern and posh environment than most wineries - also a lil smaller. There is some very cool art on walls and cement floors. We shared a tasting and bought a few bottles because the wine is delish. Like most you get the tasting fee refunded if you buy 3 bottles. The wife likes the Politics and Religion I prefer the temp but also love the alberino. Our server was awesome and. Had great recommendations We were there on a Saturday and there was BBQ that smelled awesome! The patio is nice - not super breezy and looks out over a small vineyard area.
