The pork was sliced thin with the perfect amount of chew which paired well texturally with the soft, buttery leeks. The flavor was so well balanced while being heavily seasoned and the smoky wok hei flavor really comes through. The snow pea leaves were soft and silky with tender stems, and they came served in a golden broth with some mushrooms, juicy tomato and snappy pieces of black fungus. The dish is topped with a century egg. I found the broth itself to have a bit of a grainy texture when sipped. I've tried century egg in the past and while I'm not disgusted by it, I never quite felt like I understand the ingredient until eating this dish. The creamy, funky flavor of the egg reminds me of blue cheese and it pairs very well with the subtle flavors of the snow pea leaves and amplifies the richness of the broth.
