Could have used eggs or other ingredients to elevate this dish. Also the Volcano roll was extremely disappointing. Normally the volcano topping is cooked or (torched) and this topping was cold and very unappetizing. Would not recommend this roll. Overall this place is a hit or miss. The Spicy salmon roll had cream cheese and cucumber inside and was finished with large, generous heaps of spicy salmon. The portion of cream cheese felt balanced in the Oysi Roll but was a bit much in the spicy salmon, which also wasn't very spicy. That said, I loved how vibrant and fresh the scallions were on the spicy salmon and the fish in both rolls tasted fresh. There are two small tables outside the food truck, but this is definitely more of a to go spot. I'd recommend ordering ahead by text since there's usually a wait. I'll definitely be back to try more rolls!

For appetizers, we selected the Bang Bang Cauliflower, which our server highlighted as a very popular option, along with chicken pot stickers.For our main courses, we ordered the chicken pad Thai, Karage Chicken Strips for our toddler and the chicken firecracker dishes.
