I had been meaning to try Humble Cow for a while after a friend recommended it to me, especially since I was craving ice cream today, so I stopped by in the afternoon around 3pm. I ordered a single scoop of the coconut cream in a waffle cone. At first glance, the scoop looked a little small, but it actually ended up being a satisfying portion. Pricing also felt pretty fair; it's around $5 for a single scoop of ice cream, which isn't bad nowadays (considering the economy), and the waffle cone was only a little extra. They also offer some dairy-free flavors, which is perfect for those who are lactose intolerant, like myself (I still ignored my better judgment and went for the coconut cream anyway LOL). For my kiddo, I ordered a root beer float with a single scoop of cookies and cream ice cream shortly before I had to go pick him up from school, and he really enjoyed it as an after-school treat. While sitting inside, I noticed how surprisingly busy this place gets for an ice cream shop. The seating setup was nice too, especially the little single-seat table that worked perfectly for someone visiting alone like me. They also have a filtered water station available for customers, which I thought was pretty nice since I was thirsty after finishing my ice cream, along with an outdoor seating area if you'd rather sit outside. Unfortunately, the outside patio area doesn't really catch much sunlight, so if you're hoping to sit in the sun, the best spot is probably near the front entrance instead. The shop itself was also very clean. Whenever there was downtime, the staff stayed busy cleaning windows, making waffle cones, or working in the back. As for the ice cream itself, I thought it was good. The coconut cream almost had a slightly sherbet-like texture to it, but I actually didn't mind. The flavor selection had enough variety, and it looks like they rotate limited-time flavors as well. None of the seasonal ones stood out to me this visit, but I'd probably be interested in coming back around fall. I do wish they had more consistently available unique flavors though (things like matcha, taro, or Thai tea would be amazing). The only thing that kept this from being a 5-star experience for me was the customer service. It wasn't rude, just very flat and straightforward. From observing all the interactions, the staff was noticeably more energetic and cheerful whenever families or kids walked in. Meanwhile, interacting with me felt a little dismissive in comparison. Not a huge deal, but it was blatantly obvious, and I felt a little uncomfortable. Still, the ice cream was tasty, affordable, and the atmosphere was pleasant enough that I could see myself stopping by again someday. read more

There aren't a ton of icecream options but we came in the fall and the seasonal sweet AMAZING. It's really hard for me to find ice cream that isn't too sweet but still satisfies the sweet treat desire. We got a scoop of the chumpkin (chai and pumpkin) and a scoop of the apple pie. This is the hot new place with cool new products in Lacey! Open for only a few months, my daughter and I decided to give 'Humble' a try, and we were not disappointed. Mint Chocolate Chip is my jam, but Humble instead has Mint Cookie Chip. No worries about a thing, as their ice cream is probably the best ice cream shop I've ever had. Almost a gelato in smoothness, my single scoop in a waffle cone always has ice cream to the bottom of the cone. I admit, I appreciate that! Small shop with a few tables inside, so when the crowds come, it gets tight. Fortunately, they opened up a patio section with lots of extra seats outside. Very cozy, even on colder evenings because of their mobile heaters. A little on the expensive side, but the service has been fantastic. I highly recommend Humble Cow! read more

We got the tart cherry cheesecake, and I'm pretty sure it was made by angels and sprinkled with pixie dust! It tastes like the sour cherries I used to pick in the cherry orchards of upstate New York when I was a kid! You know when you get something delicious and all conversation stops? Yep, that happened. I am lactose intolerant AND picky with non-dairy ice creams. I prefer non-dairy ice creams over sorbets. Humble cow has one of the BEST tasting non-dairy ice cream flavors and there is an actual list/section of non-dairy flavors, which feels very inclusive for those who can't do dairy like myself. I go to Lacey location often as I live 6 min away (so dangerous). My favorite is the non-dairy strawberry and Rocky road ice cream (on the left). Disclosure: I'm really not a huge ice cream eater. But Humble Cow is making a convert of me. I've been back 4 or 5 times now. The ice cream is so flavorful -- tastes like they hand-make it fresh every morning. Many flavors to choose from. I also like that they feature gluten free, and even dairy free, selections for people with those particular needs. The employees are helpful. The restaurant is pristine-clean.
