I've been to plenty of Mediterranean restaurants, but this was my first time having a "build a bowl" situation. While you can also order a wrap or pita, I went with a bowl. On to the food! I went with a beef & lamb gyro bowl with my choice of fixins'. You also get a choice of hummus, and can choose up to three kinds. I forgot what kind of hummus it was, but the green one was my favorite! Also, the gyro was super flavorful! I devoured this bowl, and would love to be back again! Hummus Republic in Livermore is a pretty good fast-casual Mediterranean spot that reminds me of Sababa or a Mediterranean-style Chipotle. The staff are all super friendly and the whole setup is straightforward as you pick a pita, wrap, or bowl and then load it up with whatever you like, just like building your own burrito or bowl at Chipotle. No matter which base you choose, be prepared for a huge portion of food; I went with a wrap and the final result was massive (as you can see in my photo). What really stands out is the sheer number of options, with plenty of options for greens, rice, proteins, different hummus flavors, toppings, and sauces that really allow you to mix and match into what feels like an endless number of combinations. I chose the beef and lamb gyro, which was a bit on the dry side (it seemed like it might have been pre-sliced and reheated rather than off an active spit), but the freshness and customization of all the add-ons still made the overall meal feel lighter and a bit healthier, at least in spirit, if not in portion size. For the amount of food you get, the value is definitely there, and I'd recommend adding a drink to your order. They offer several scratch-made lemonades (the ginger turmeric, pomegranate and jalapeño cucumber options were all unique, excellent and really refreshing) and the fountain includes some premium options like artisan cream soda instead of just the usual basic sodas. All in all, it's probably a 3.5 star experience for me on the food alone, but I'm more than happy to round up thanks to the welcoming staff, generous portions, and surprisingly robust beverage options. read more

Hummus Republic has a fun concept of "build your own" Mediterranean bowls and wraps. Their portions are generous and there's lots of unique combos to try. I had the falafel bowl with a cous cous base, spinach, regular hummus, corn, tomatoes, feta and tahini. They give you a side of pita with it was well! Very flavorful hummus (it's in their name, so it better be good!) and good value for what you get. My boyfriend and I split their sweet potato fries which were also pretty solid. This is a great option if you want a quick bite near, but not in, the outlets. Friendly staff, large lot and clean, bright space made this all around a worthwhile lunch outing. read more

The reviews looked promising but sadly I was disappointed. The service was okay. I had to ask what was in each tray as they weren't labeled. Obviously not everything needs to be labeled but some ingredients would have been nice. When I asked to identify ingredients , the server seemed a little aggravated. At the end I saw some crunchy chickpeas off to the side. I wish I had known. The place was clean. The menu and instructions were clear. I was hoping there was some kind of list of what would be good together but I suppose you can't go wrong. However, the hummus choices were overwhelming. The dressings were also overwhelming. Do I pick just 1 or would 3 hummus flavors be overpowering each other? What dressings go with what? I discovered that 3 hummus flavors was not a good idea, especially the feta flavored one. And the 2 dressings I ordered did not exactly work. The rice under my bowl was dry and flavorless. I wanted the crispy chicken but was told I had to wait 5-10 minutes so I couldn't order that. There was no sign or notice that said it would take 5-10 minutes. Why isn't that already prepared? It was lunchtime so why not be ready? I chose half beef/lamb gyro meat and half mushroom instead. The mushrooms were amazing! That was the only thing that saved my bowl. The meat tasted freezer-burned. I ate around the meat what I could. Mostly mushroom, the original hummus and eggplant hummus, and threw the rest away. I don't think I'll be back. The whole experience wasn't great. read more

It was my first time experiencing Mediterranean food as a build-your-own entree. It was nice being able to customize and try the various options they had for a base, for a protein, and for hummus and spreads. I ordered a bowl (which comes with a warm pita bread). For the base, I got the yellow rice and couscous. For the spread, I got the traditional hummus and the zesty feta. For the protein, I got the lamb & beef gyro. For the toppings, I got the cucumber, red onions, beets, and crumbled feta. For dressing, I got the traditional tahini and the tzatziki. It tasted good! I enjoyed it very much. Really disappointed in the mushroom shawarma... it was like rubber, no j/k. The three hummus flavors I tried were good: Olive, harissa, and eggplant. I added the extra eggplant slices and charred jalapeño. I like the garlic jalapeño tahini and both hot sauces. But I can say I didn't eat the bowl once I was seated and began exhausting my jaw chewing through the rubber mushroom shawarma... although it could have been two meals (the serving size)... it went straight to the . Was also excited to try the tahini shake, which says it's vegan on the menu in the restaurant, but when I confirmed it was vegan when I ordered it, the workers informed me it's no longer vegan :/ would be nice if the menu was updated. Found this spot while shopping at the Livermore outlets and it's become one of my new go tos for a post-shopping meal. It's a Mediterranean, Chipotle style setup where you build your own bowl (or wrap or pita). You get a base, protein (can do a combo of two), 3 scoops of hummus/spreads, and unlimited toppings! I usually get the chicken shawarma bowl, which always tastes very fresh and flavorful. I also go with the olive hummus which is unique and delicious! The portions are generous, and they include a warm pita on the side. The ingredients are high quality, and I really appreciate how clearly everything is labeled, especially for anyone who is vegan or gluten-free. Parking is ample as it is part of a large shopping complex. There is some indoor and outdoor seating as well. Would definitely keep coming back! read more

They're pretty efficient and fundamentally not that expensive. With a name Hummus Republic, I was expecting something like Orens with home made hummus bowls and wraps. Actually this is more like a chipotle style build a bowl where you get three spoonfuls of hummus along with everything else (rice, salad, chicken, toppings etc). The food was decent but not extraordinary in any way. The hummus tastes like something straight from the grocery store, but the other ingredients seemed fresh. Came here the other day and employees were sitting on chairs looking at phones and didn't acknowledge my presence. After 2 minutes of just standing there employees were laughing after realizing there was a customer present. Person who served me spoke little english and gave me terrible service. Online it said I could order up to 3 bases and 2 proteins for the build my own bowl option. Employee said I could only have 1 protein and 2 base options. Employee was in a rush to serve me and also didn't explain sauces or oil oils I could add to the end of the bowl. Coming in for the 1st time I was really disappointed because I was really excited to have a bowl. I feel let down and did not get my moneys worth. Unfortunately with only 2 workers we didn't see anyone bussing the dirty tables. We ended up cleaning up the table ourselves. Food wise we had no complaints. Just know that the earth burger came with red onions. I'm not a big fan of onions so I just pick them out. But the falafel burger was really nice and crispy and flavorful. We've passed by Hummus Republic near the Livermore Outlets so many times, but finally had a chance to stop by. We weren't sure what to expect but were pleasantly surprised! As another review mentioned, the setup is "Chipotle" style. You can choose from a wrap, pita, or bowl with a garbanzo bean or couscous base. They have leafy greens to choose from, a variety of different hummus, meats, toppings (tomatoes, cucumbers, corn, onions, etc) and dressings. We chose bowls with chicken shawarma and Moroccan steak and they were both good. I especially liked the roasted red pepper dressing to top it all off. The bowls are very hearty and filling - a bit too much for me to finish. If you're looking for a lighter option, I'd suggest getting a pita or wrap. They also have a lot of healthy drinks options that aren't too sweet, not just the usual sodas that most places have. The lavender lemonade is really good! The service was good, but nothing to write home about. Overall the restaurant was pretty clean and set up nicely. Really good food though the service from the "guy" was short and rude, hence 1 star off. I've heard of Hummus Republic from a friend so was excited to try this place. While the food is pretty good, the bad service left a bad taste in my mouth. With so many restaurant choices in the area, there's no love lost off not coming back. We came in at around 7:30, 30-mins before their closing and placed an order to go for 6 bowls. Okay, 6 bowls really doesn't take that long and there's no line, so I don't know why "the guy" (see picture) was so rude. Yes I know the "Ordering Steps 1-2-3" signs are big but it's our first time here, so we looked obviously confused and was just staring at the menu for a bit trying to figure things out. He was immediately very impatient and asked us what's the 1 that we want (e.g. what the base of the bowl; salad, couscous or beans). Rinse and repeat the same impatience and rudeness for the 2nd (Hummus) and 3rd selection (protein). During the ordering process, he would shift the weight of his legs and pause to stare at us while we are making our choices. How about making some suggestions?!?! Before, during, and after our entire ordering, there were only 2 other customers. So again - not sure what the rush is in pushing us faster through the assembly line. This place is worthy of the great reviews. We got two bowls; one with the lemon chicken and the other with chicken shwarma along with a great selection of sides, rice and greens base. Both meat entrees were incredibly moist and flavorful and the sides were very fresh. The bowls came with pita which was extremely dry (possibly left over from the day before) and tough. We ordered to go so I'd suggest eating the pita right away and not taking home to warm up in the microwave. Not much interaction with the staff. I think this is of those secret places that the locals know about , that like to eat healthy go to. Mediterranean wraps or bowls bursting full of foods of your choosing. 1 wrap is always enough for 2 meals for me. They have a wonderful system of making your order exactly like you want it. The first time I ever went here they had the best pita chips I've ever had. Ate them with hummus.
