    Hummus Republic has a fun concept of "build your own" Mediterranean bowls and wraps. Their portions are generous and there's lots of unique combos to try. I had the falafel bowl with a cous cous base, spinach, regular hummus, corn, tomatoes, feta and tahini. They give you a side of pita with it was well! Very flavorful hummus (it's in their name, so it better be good!) and good value for what you get. My boyfriend and I split their sweet potato fries which were also pretty solid. This is a great option if you want a quick bite near, but not in, the outlets. Friendly staff, large lot and clean, bright space made this all around a worthwhile lunch outing.

    The reviews looked promising but sadly I was disappointed. The service was okay. I had to ask what was in each tray as they weren't labeled. Obviously not everything needs to be labeled but some ingredients would have been nice. When I asked to identify ingredients , the server seemed a little aggravated. At the end I saw some crunchy chickpeas off to the side. I wish I had known. The place was clean. The menu and instructions were clear. I was hoping there was some kind of list of what would be good together but I suppose you can't go wrong. However, the hummus choices were overwhelming. The dressings were also overwhelming. Do I pick just 1 or would 3 hummus flavors be overpowering each other? What dressings go with what? I discovered that 3 hummus flavors was not a good idea, especially the feta flavored one. And the 2 dressings I ordered did not exactly work. The rice under my bowl was dry and flavorless. I wanted the crispy chicken but was told I had to wait 5-10 minutes so I couldn't order that. There was no sign or notice that said it would take 5-10 minutes. Why isn't that already prepared? It was lunchtime so why not be ready? I chose half beef/lamb gyro meat and half mushroom instead. The mushrooms were amazing! That was the only thing that saved my bowl. The meat tasted freezer-burned. I ate around the meat what I could. Mostly mushroom, the original hummus and eggplant hummus, and threw the rest away. I don't think I'll be back. The whole experience wasn't great.

    The Food is Delicious if you are looking for a healthier options and going to Livermore! The Service is great kind staff and very patient. As they have tons of options and you can build your own protein bowl! The ambience is amazing clean and welcome in space! They are located across the San Francisco Outlets which is totally walking distance and also located in a shopping plaza area where you can still shop after eating!

    Really disappointed in the mushroom shawarma... it was like rubber, no j/k. The three hummus flavors I tried were good: Olive, harissa, and eggplant. I added the extra eggplant slices and charred jalapeño. I like the garlic jalapeño tahini and both hot sauces. But I can say I didn't eat the bowl once I was seated and began exhausting my jaw chewing through the rubber mushroom shawarma... although it could have been two meals (the serving size)... it went straight to the . Was also excited to try the tahini shake, which says it's vegan on the menu in the restaurant, but when I confirmed it was vegan when I ordered it, the workers informed me it's no longer vegan :/ would be nice if the menu was updated. Interior has enough space for dining in. Plastic cutlery and recycle bowls. Won't go back for another try.

    It was my first time experiencing Mediterranean food as a build-your-own entree. It was nice being able to customize and try the various options they had for a base, for a protein, and for hummus and spreads. I ordered a bowl (which comes with a warm pita bread). For the base, I got the yellow rice and couscous. For the spread, I got the traditional hummus and the zesty feta. For the protein, I got the lamb & beef gyro. For the toppings, I got the cucumber, red onions, beets, and crumbled feta. For dressing, I got the traditional tahini and the tzatziki. It tasted good! I enjoyed it very much. The bowl was pretty good in size, too. I wasn't able to finish it in one sitting and took my leftovers home.

    We got two bowls, looked a bit messy and items kind of got lost in the bowl but it tasted yummy. The food for price is pretty good. Place is casual. The staff was tired as we went end of day but he was nice.

    Really like the bowls from Hummus Republic, everything tastes great, and I like the way you can customize what you want to eat. I've mostly tried their chicken shawarma bowls, but am curious to try their vegetarian options as well. Both times I've visited, the staff have been very patient, kind, and accommodating. Clean basic tables for dining in. Reasonable prices, hearty portions. Lots of parking available. Location close to the freeway.

    Hummus Republic is a decent Mediterranean style quick food restaurant across the street from the outlet malls. The place is clean and the service is friendly. They're pretty efficient and fundamentally not that expensive. With a name Hummus Republic, I was expecting something like Orens with home made hummus bowls and wraps. Actually this is more like a chipotle style build a bowl where you get three spoonfuls of hummus along with everything else (rice, salad, chicken, toppings etc). The food was decent but not extraordinary in any way. The hummus tastes like something straight from the grocery store, but the other ingredients seemed fresh. It's better than anything inside of the outlet mall so I guess l I'll go back sometime.

    Hummus Republic is a "Modern Mediterranean Kitchen" operating on a Chipotle model of "DYI" with Wraps, Pitas, Bowls as the main vehicles. Decided to go for a bowl (13.95) to go with organic Med. Couscous as the base. Added mix greens. Should have added other greens too. Servers politely, efficiently scooped out all i requested. Not much decor. Just menus, pics. Added unlimited toppings: hummus, red cabbage, olives, tomatos, red onions, beets, fresh herbs, fried jalepenos, white cabbage, chopped cucumbers, chickpea croutons, crumbled feta, street mix, kalamata olives, tahini sauce. Added beef & lamb gyro (+2) Took a few pics, mixed it all up later. Actually plentiful & tasty. Shoulda got more greens. 4.5 stars..

    First time eating at this establishment, WOW! I opted for the bowl, spinach base, 3 scoops of hummus (traditional, Harissa, and eggplant), onions, tomatoes, cucumber, red cabbage, topped off with garlic jalapeño, roasted red pepper, and traditional Tahini! Flavor explosion, definitely will be visiting this place again!!

    Great bowl with hummus, spinach, farmer's mix lettuce, garbanzo beans, couscous, 3 kinds of hummus, mushroom shawarma and tahini. All was good. Especially loved the harissa hummus, good flavor. The mushroom shawarma wasn't as flavorful as I thought it could've been though. Good counter prep speed. Casual atmosphere.

    the employees act like they don't want customers. i asked for crispy chicken and was told that it would take too long to make and that i should order something else. then i'm charged $15 for the saddest looking half-filled bowl of awful couscous and tiny falafel harder than a rock. everything was cold, even the falafel.

    Went here yesterday with my classmates during our lunch break. The service was fast and the employees are friendly. The place is small, but clean and welcoming. I got a bowl and it looked pretty good, but after a few bites, I found it underwhelming. I'll give this place another try one of these days and try something different on the menu.

    The food is not Arabic and low quality, it's Israeli. The ambiance is busy and not friendly.

    We found the food cold and bland on two different occasions. There's definitely plenty of better Mediterranean spots in the area.

    they don't fry/grill anything in the restaurant, it is all pre-made

We were started off with a huge round flatbread (which ironically was not lavash) paired with a tasty condiment made of chopped cucumbers, tomatoes, onions, and vinegar. A highlight dish for me was the Appetizer Combination Platter, which came with four dolmas topped with pomegranate dressing, creamy hummus, tabbouleh, and babaghanoush (grilled eggplant with caramelized onion), all of which went together nicely with the flatbread. From the entrees, the Lavash Plate for two came with a skewer each of filet mignon, chicken, and koubideh (ground beef), each of which was juicy and nicely grilled but tasted underseasoned. The platter also came with sumac onions, grilled tomato, and grilled peppers, along with sides of saffron rice and Greek salad. Next, the Pomegranate Chicken was a roasted chicken quarter in a sweet and tangy pomegranate sauce, served with mashed potatoes, broccoli, and carrots. The most unique part of this dish was the pomegranate sauce, which gave a nice caramelization and flavor to the tender chicken. Finally, the Ghormeh Sabzi was a stew of lean beef chunks in a mixture of chopped herbs (scallions, parsley, chives) and red kidney beans. The stew had a bitter flavor from the herbs and a slight sour flavor from dried lime, but overall, the dish was bland, underseasoned, and a bit of a let down. Overall, the food here was mixed--some dishes (the appetizer combo and pomegranate chicken) were tasty, while others (the kebabs and the ghormeh sabzi) were just underseasoned and underwhelming in flavor.

Looks like it took over the old Harry's Hofbrau space except they turned that massive space into 2 units now, as the days of massive dining halls are starting to become a rarity. Order at a counter and food gets brought to your table. There's a full bar (which I thought was strange for this type of food) but this is also Livermore where it still tends to have a stronger drinking culture than most other suburban towns. Most of the seating is in their 'outdoor' patio which is pretty well enclosed with one of those catering tents. Babaghanoush ($8/2.5*) Looked great with warm pita and an olive oil drizzle on top. Texture was spot on creamy and soft but they overloaded this usually delicate dip/mezze with enough raw garlic to kill a horse. Now I usually love garlic but this was to the point where you couldn't taste anything else so main ingredient which is roasted eggplant, you couldn't even tell what it was. And your mouth was tingling with that harsh garlic taste for minutes after chewing it down. Instead of wasting it, I packed it home and used it like Toum to spread onto other things. I've actually had Toums less potent than this. Adana Kabob ($19/4.5*) This a ground lamb kabob Turkish style. Similar to a Lule, Koobideh, Shami kabobs from other cultures. Turkish has pretty bold spicing but not as strong as Afghan or Pakistani. And definitely more assertive than Persian or Armenian. So kind of in the middle of the spectrum. I loved the texture and the flavor, just maybe a tad ambitious on the charring. Now that char did add an awesome grill flavor but a couple degrees more than burnt qualities may then be perceived. Combo Beef/Lamb Kabob $20/4*) For combos you can actually pick from several kabobs. They use smaller chunks like half inch cubes small. It is very natural tasting, no heavy marinades or spicing. Tasted like just salt to me so you can really taste the protein. But very well done but not really dry. I just prefer larger chunks like at least 1 inch cubes, so the meat stays juicy and succulent. Afghan and Persian kabobs usually have bigger pieces on those skewers. And these plates have a side of salted plain rice (not basmati) a green salad, some pita and a nice dollop of hummus which was top notch. Decent food, efficient service is going to make them a solid option for me in this town. Iskender, lamb shanks still in the zone for me to try.
