Maybe I have a small sample size but among the better birria I've tried lately, the meat is tender and juicy and falls apart without any weird stinginess. Comes with consommé which itself is super flavorful and doesn't feel like just oily, muddy meat juice. Salsas - pleasantly spicy, the tomatillo is my favorite. Maybe my experience was different from others since the food court wasn't busy at all. But I'll be coming back regularly when I'm in the area.

The confusing thing was the "tomato sauce" that they use. I have no reference for what the sauce was supposed to be, but it reminded me more of a salsa and it was too wet for my liking. The tacos already came with salsa, so I didn't think the tomato sauce was needed. Didn't really add much to my food other than drenching it more with the fixings that were already included. Solid taco vendor. They have other interesting offerings I'm down to try like their birria grilled cheese, so I'd probably return if I'm back in the area.

The tortilla is flaky, crispy and thin. I tried the beef and the potatoes taquitos. Both were surprisingly good. As previously stated the tortilla was surprisingly thin, therefore leaving you with a tortilla that's not overpowering allowing you to taste the contents...good job. These taquitos were definitely tasty and enjoyable. The guacamole was flavorful and the salsa was pleasing. Minus one star due to, although tasty they were served a bit cold. He also brought bacon wrapped hot dogs, rice, beans, salsa, onion, cilantro, lime, plates, forks and napkins. Everything was wonderful and my 35 guests raved about his food. The tacos were very authentic (myself and about 75% of my guests are hispanic and loved them). Samuel and his team were very professional, courteous and polite. But this week - it was Flying Pig, Tornado Potato, Chunk-n-Chip, Greasy Wiener, Calbi, and the Shrimp Pimp Trucks. I came during the inaugural week, where Shrimp Pimp, Calbi and Greasy Wiener was at, but I missed last week where there were other trucks that weren't there during the first week or this week.
