    As a huge pizza lover, I can honestly say In Pizza We Crust is an absolute gem in Seattle. The pizza here is nothing short of amazing! The crust hits that perfect trifecta soft, light, and chewy in all the right places and the flavor is spot on. You can tell they put real care into their dough. And the sauce... wow. It's vibrant, rich, and perfectly balanced, easily one of the best pizza sauces I've ever had. Every bite felt like pizza heaven. This place is a 10/10 for me. Your taste buds will thank you!

    Woooo!! We've been waiting for this place to open. Super happy to have yall in the neighborhood! Love the slightly charred crust! We split the 14" (2 of us) and it was the perfect amount. Pepperoni was delicious! We'll definitely be back!

    Yum! Great wood fired pizza from a truck! Grabbed one to go for lunch. The crust was just perfect. I didn't even need any dipping sauces. Great ratio of toppings. Only thing I'd change is asking them to cut in 1/6. It was cut 1/4 which made for large slices, and me having no portion control, ate 3 of the 4. I was stuffed!

    What they do even when people arent looking is what makes this pizza taste so good...read on..! I recently tried this food truck and must say the bake on the pizza was soo damn perfect and the crust was just perfect. I ordered two "Im trying" with extra jalapenos When they were baking, no one was around the truck, so i was observing the baking from a distance without letting the owners know i was there. I was soo happy to see that the cook bake it carefully and after removing the pizza kept it on a wire tray.....(yayyy finally someone does it right...thank you chef ) Trust me, almost none of these established joints do it or the chains too..they dunk the pizza out of the oven into boxes or plates making the crust sweat and become flappy. But not here-not that day, they baked it super well and made sure it stays that way in box. The pizza even when I was home held its crust crispness well without getting burned. Sauce + topping to bread ratio was great. I would have loved a little more spice and salt. But when I came home and added some chilli flakes and salt on pizza it was uh-mazin-ggg. The brookie was something I did not like but I am only going here for pizza anyway. They also had this nice little box with built-in pizza bib. It is nice bit of gimmick to get most out of pizza box. Things I dont like is they are not open weekends and close at 7pm on weekdays I suppose its business related decision, but a pizza lover can only wish for different hours. In any case, I am coming here again for a quick pizza pick up .

    Excellent pizza! Love the wood fired crust! Tried their I'm Corny Breadsticks which were super tasty! Both guys were very nice and friendly - and the truck was easy to find! Would totally recommend!

While packed with flavors of lemon and Parmesan they had a very tree like feel and were a bit on the harder side. The El Diablo pizza, to be straight forward was by far the best part of the stop. The crust could have been a little more well done, but that's just me splitting hairs. I ate more of that than anyone else. Probably could have finished it myself if I hadn't stopped for a lobster roll beforehand. Either way, great service, good drinks and legit pizzas!

As for things like grabbing water, silverware, plates, or chili flakes...our table had already gotten those before a majority of the group arrived. It's a casual pizzeria, on one of their busiest days ever. Setting and cleaning up the table (especially when seated outside) is not a problem for our group as we do it every week. Which is why it's upsetting that we opened our spot to someone that left such a nasty review. What stood out to me wasn't poor service. It's that despite how overwhelming it must have been to work post-FIFA, Karin was able to take orders, bartend, serve food, and close out checks with professionalism. Sometimes no matter how much effort someone puts in, not everyone leaves happy. The pizza is fantastic! I love showing up every week and trying what new slice they have come up with (in the year that I've been coming here there legit hasn't been a repeat). The atmosphere is great and the staff, especially Karin, have earned our loyalty over the past year. We'll absolutely continue coming back.

As others have mentioned, it's that taller bartender (Alex?) who repeatedly comes across as arrogant and dismissive to us; a less than desirable character trait for a bartender. Recently we did give Diller another try, but sadly it's the same story and thus this feedback. Hospitality makes a HUGE difference. Bartending isn't just about making a good drink and expecting tips. As someone who tended bar all over Seattle for 23 years, I know how much energy and attitude shape a guest's night. When the service feels cold and passive-aggressively rude, it's hard to feel good about the experience. It's disappointing, because this place has so much potential. Hopefully management considers bringing in weekend staff whose personalities reflect the warmth and atmosphere the space deserves, there are plenty of more qualified bartenders in Seattle that would gladly fill their spot.
