Very disappointed about trying out this place. We got seated immediately as the place was not full. However, I couldn't believe it took 20 min to get hold of the server to take our order and got us some water. She is the only server there, taking order, typing the order into the system, serving, cleaning up the tables... Again we waited for 20 more min for our ramen to come. Ordered the tonkatsu ramen, gyozas and karage. The ramen soup is very good and flavorful..... the ramen itself is a little soft I would have prefer to be more chewy. This place is disappointing. We reached at 845 pm on a Friday night and the hostess mentioned 30 minutes wait time as restuarant was full. Very reasonably priced ramen with good flavor. Not too busy on a Friday evening around 7pm, we were greeted by friendly staff who were attentive. Our ramen came out super quick too. I ordered tonkatsu and even though the broth wasn't extremely rich, it was quite flavorful and more like a lighter take on tonkatsu. Noodles were the curly kind and chewy. I'm not the biggest critic but having just been to Japan this doesn't really compare to Ichiran, however for under $10 I'm very impressed. Ordered tokatsu ramen which says to have a rich bone broth. Broth is light and clean, but not very rich. Still good, but I feel calling their broths rich was misleading. Just the noodles and soup together was nice. Their "seasoned egg" isn't actually seasoned. It's just soft boiled, but also very good. Chasu is oddly dry. Some pieces cut generously, and some very skimpy. Fish cake taste like nothing. Bamboo shoot cut thickly, making it very hard (could not eat it). Overall, the ramen itself was a 4/5 to me. Not bad new ramen house in the milpitas area. We came during the lunch rush and were lucky to get seating considering the restaurant is fairly small. Its a nice looking restaurant, very decorated with all kinds of interesting decor. As for the menu, its pretty extensive in addition to ramen they have other dishes as well. I tried the salt flavored ramen and the broth was good to above average. Good amount of pork and the ramen came out fairly quick. We ordered 2 starters, a kimchi pork belly rice, hamachi Kama and an order of beef skewers for 2 people. The portions are relatively small, but they are having BOGO 50% deal, so it is alright. Their kimchi in their kimchi pork belly donburi is really sour, way too much kimchi and very little pork belly. And the big disappointment is the hamachi Kama. I order this almost every time I try a new Japanese restaurant, so I know what's good and what's not. Our order of hamachi Kama was undercooked. When we pointed it out to the waiter, she quickly took it back to the kitchen and the chief probably just microwaved it for a few minutes. Because when the same piece came back to our table, the fish was dry and tough. It was bad, we just left it on the table. And YES we still got charged for it. First of the customer service is great! Our waitress was super nice and attentive. The place is very small and currently they have a bogo 50% off until July 14 I believe. Everything on the menu qualifies for bogo, but you can't order ramen for takeout. I don't think that matters anyways because the ramen had no flavor whatsoever. I ordered a shio ramen and made it spicy, but when it came out it looked clear white. Every ramen place that I've been to when I order shio it's white but the broth isn't transparent. It looks more like a milk looking broth. Took a sip of the ramen broth, and it taste like as it looks. It taste like water. It had no flavor whatsoever. I added some chili flakes but it still had no flavor. I then had to ask for chili paste and added soy sauce to my ramen. Safe to say I didn't finish my ramen. Out of all ramen places, this is by far the worst ramen I had. Eating top ramen would have been more satisfying. The place is fairly new, but I would not return unless they improve drastically. When I was there, there was only one other customer. From that you can tell the food isn't great. It's a shame because customer service was great! read more

For its worth, Milpitas is moving from a suburban environment to an urban one. The result of which are neighborhoods becoming more compartmentalized. Good Japanese food is hard to come by in this stinky two exit town. So when you don't want to make a trek, Juban Ramen & Tapas will do just fine. Everybody that has Yelped about the place mentions the former MOH's kitchen and the new occupants have pretty much kept the interior intact. Save for the Tenchi Muyo posters and the back shelf that should have some Hibiki and Yamazaki bottles sharing space with the sake. Asahi is well represented near the counter. Felt like some nibbles on a Saturday evening so got a saba shioyaki and takoyaki to go with some tuna rolls from a couple of doors down. Ramen takes top billing and I had some a few weeks after their grand opening. From memory it was an 'ok' tonkatsu in the place holder sense. A handsome bowl of forgettable noodles in a opaque, but hollow broth. I like the standard accoutrements just fine (I'll save the play by play). The soft boiled egg was a standout but the raw white onion slices really brought it down for me. Maybe a second try? Takoyaki is a second time around and although it suffered a little bit from getting it go, it was savory delicious but better enjoyed hot from the kitchen. Saba shioyaki is a favorite from my Yuki days in the FMT and was standard whiteboard item before the izakaya thing become trendy. Juban's was obviously frozen before cooking but the flavor was delicious salty grilled. A thin slice of lemon would have been nice. Despite a lackluster ramen experience, Juban will do just fine when your're looking for an interesting snack or two. read more

I've been to this place twice. First visit I ordered the Shio ramen. The soup base was water down. Very bland. For crying out loud, it's Shio... add more salt!! I also ordered the scallop wrapped in bacon. The scallop was grill well but was ruined by the bacon. Bacon has fat, I get that but it was 70% fat. A good fat/lean ratio would be 40/60. The interior was nicely decorated but the bench seat with gaps in between is not comfortable at all. On the second visit, I ordered the Tonkosu ramen. They forgot to include the chashu pork :( The chashu was actually season well and tasted really good but again, too much fat 40%. I've been to other ramen places and all their chashu has no fat or little fat. The Tonkosu soup base was ok. It didn't wow me. Again, flavor was light. Both times, the service was good. The good: - Away from popular area so very slow during dinner time. - The restaurant itself is quite new so the interior is modern, cozy, and clean. - The ramen broth flavor is actually good with a variety of toppings. The bad: - The portion for the price is very small. Yes I know you usually get 2 slices of pork in ramen, but their slices are super thin. Even compared to some of the other ramen houses their portion is quite small. It keeps me full for 2 hours at most. - The waitress is constantly chatting with the cook or owner in the back. When I say back I mean all the way back, like you have to shout so loud that the entire restaurant can hear you to get her attention. There were times when someone would wait at the door to be seated for 3 minutes. - The wood bench by the wall has a big gap in the middle. It was difficult for me to find a comfortable spot. Tonkatsu Ramen - Really bland, no taste to it Juban Champon Ramen - It was alright, the spiciness made it more flavorful Overrall, this place was ok. A cozy ramen place when a mom and pop feel. I had the Juban ramen which is a pork based ramen that has the usual fixings - a couple slices of chashu, wood ear mushroom, green onions, some corn, and half an egg. The big difference is added veggies. I believe this consisted of slivers of carrots and onion. I generally take my ramen unadulterated (no veggies) so this was quite different. I'd say that overall it was okay but I thought the veggies would be wok tossed. They didn't seem like they were cooked so the onion was a little overpowering. I want to say that the base was fine but the onions were too much. What I did really enjoy was the mackerel appetizer. There's a lot of bones in it so exercise caution. We actually wound up picking the mackerel since two of the other grilled fish weren't available. One thing that makes visiting difficult is the parking. It seems like all the spots are compact so just beware. I'd definitely come back but might go for a different ramen. read more

This place was fantastic. It's almost impossible for me to find vegetarian ramen in the Bay Area, and when I do it's usually so-so. But they clearly put time into making sure the vegetarian broth is just as good as traditional broths. They have a good selection of standard toppings, and add-ons that don't cost too much extra. Their selection of other dishes is pretty substantial (although the ramen and a couple appetizers looked like the only veggie options). All in all I was super impressed, and the others I ate with enjoyed their dinners as well (shoyu ramen with gyoza, miso ramen, and poke). Hope to see this place around for a while! read more
