We wanted something easy to eat for our drive from Portland to Fox Island and found this on Yelp. I thought it's called Kimbap & Go, but the place is actually called "Nikki's Cafe", a small little place inside a building of offices. Wow, hardest place to find. It's called Nicki's cafe or something and is in a business office tucked in one of the halls. Call ahead of time if you want their Kimbap, but omg so delicious! Fresh gimbap smelling of sesame oil and happiness. we got one of each -- the mushroom avocado & bulgogi were my favorites! Personally I like my kimbap to have a thinner layer of rice but that's just me nitpicking :) Everything tasted SO fresh and delicious. I wish I could get kimchi on the side for spice. I didn't try the mayo sauce it came with, I was a little suspicious lol. We did clear out all the yellow radish that came on the side! They have 3-4 specialty kimbaps daily and they are delicious and ginormous. They make them on order, which means you wait a bit but they are completely fresh and not sitting around for a day or two, like if you buy them off the shelf at H mart. I can't wait to try this kimbap because there's not many places that have kimbap in Portland area. I like the concept they have least menus means that it should be really good. I have no complaint how it looks but rice. Traditionally, Korean people put sesame oil and salt on fully cooked rice. I believe they put some, but need to improve on seasoning rices and vegetables.
