For me, no trip to Vail is complete without a visit to Kirbys. It's in Minturn, a town that's managed to save its awesome laid back personality despite its proximity to Vail. Kirby Cosmos is amazing--I love their brisket, pulled pork, baked beans, mac n' cheese, and pretty much everything else on their menu. They have a good selection of craft beer (both bottle and draft) that makes a perfect pairing with their BBQ. The staff is friendly and it's really just a perfect place to head to after a day of skiing or snow mobiling...especially if you're not looking to pay Vail Village prices for a great meal (I promise this is better than anything you'd find there anyway). It should be noted I love their homemade BBQ sauce so much that my brother sent it to me while I was in Iraq...and I cried happy tears. read more

I'm so mad that I've lived here for so long and haven't tried Kirby Cosmo's. The food is phenomenal! I had the crispy chicken sandwich and it was crispy and cooked to perfection! The corn bread and Mac and cheese is also amazing. My boyfriend ordered the ribs, which were definitely the best in town. Overall, I cannot say anything but good things. I'm visiting in town and figured I'd try out some BBQ. I'm from the south, so I am used to higher quality BBQ, but it was still very disappointing. After some quick yelp research, we learned that u brisket, pulled pork, and Mac n cheese was the way to go. The pulled pork was certainly the best of the three, but the so called "world famous" Mac was no better than some instant kraft. The brisket was pretty dry, tasteless, and was pulled rather than sliced. After a good bit of sauce added on top of the brisket it was alright. If you're looking for some BBQ then I would certainly try a different restaurant before this one. read more

Great all the way around.Love the food, drinks and the location is cool as well, the view from the deck is real Colorado in old town Midturn, a city that datres back to the 1800. A little out of the way but worth the drive. Would recommend the chicken, melt in you mouth and fall righ off of the bone, the sides are great as well. My fav is the Mac and cheese. Our area has two freat BBQ places to eat, I can not say one is better than the other because after eating at Kirbys I have seen that these guys have a gteat product as well. Disappointing experience here all the way around. Place was essentially empty, but the server forgot to place our appetizer order and didn't really apologize when we asked about it. The barbecue tasted like it was from a bag or boiled, I don't think it had ever seen actual smoke. The sauce wasn't great, but made the meat edible. The sides were forgettable. (Well wait, the fries were okay.) Mac and cheese was bland, cornbread dry. I first had Kirby Cosmo's at the farmers market in vail and I was blown away. So I decided to take my family here last week for them to experience it. It was just as good if not better. We started out with the wings where my Dad, who doesn't really like wings all that much, says that these were some of the best wings ever. I would agree with that. My mom and I had the Kansas City ribs and they were absolutely incredible. The sides were also incredible. The beans were great. A hidden gem. I came across this place after searching "bbq" and the other Yelp reviews did not dissapoint. This was a nice open bar only 10 minutes away from our hotel in Beaver Creek. I had the Po Boy sandwich with mac n' cheese and cole slaw. I am not fan of cole slaw but it was delicious. Next time I'm in Eagle county I will definitely make this a pit stop. read more

Stopped in for lunch during our visit to the Vail area. The BLT with the fried green tomatoes was delicious. Got a side of the sweet potato fries and coleslaw, fries were cooked perfectly and not over seasoned with salt. Coleslaw was AMAZING and super fresh! This is an excellent BBQ joint in the quiet town of Minturn which is easily accessible from both Vail and Avon. It's also a great laid back place for apres ski/hike/bike where you can kick back and enjoy a cocktail and watch sports on TV as you unwind from the day. I was excited by previous reviews of the jalapeno mac n' cheese, but surprised to see it missing from the menu when I arrived at Kirby Cosmo's. I asked my server (who was also the bartender, and the cashier, and the busser) about it, and his response was "yeah, we have that". It's really more of a side than a meal, but tasty nonetheless. The ribs were excellent, and the beer selection was solid, but the service left little to be desired. My friends and I were there about an hour before close on a Sunday night, but customers are customers. I expected a little more from this place. read more

Place is awesome. The food is just as good as the beer selection, and the bar tender had no issue when I said, "I want something local and different from the last every time this glass is empty." The place fits the tiny town which it resides, perfectly actually. Inside its cozy and doesn't feel overwhelming. The food itself was excellent. We kind of went crazy and ordered several different apps, meats, and sides, including some pecan pie at the end. EVERYTHING was worth getting. Above all else, the prices was super reasonable. Great place to sit down with friends and have a brew with some barbecue. We stop there and were pleasantly surprised. My wife had the pulled pork, fried tomatoes which she rated a 5. My son had the combo platter which he attests is the best he has ever had again 5 stars. I had the brisket which unfortunately was not tender and a little stringy and fries which were worth the price if the meal. 3-4 stars. The owner was there and very engaging especially since we were both from Maryland our conversation spilled over for an hour. Try this place out, you definitely won't be disappointed. read more
