This place is great. Owner is very friendly. Had the meat, margarita, and mac n cheese pizzas, all very good. Also had the prime rib special, at least 2 inches thick and cooked in their pizza oven. Craft brews also awesome, my favorite was the Knuth Citrus IPA and the Knuth Red. Highly recommended! read more

This storefront deli/bakery in downtown Ripon has 2 sides, a deli sandwich side, and a bakery side. We ate at the deli side. You order a sandwich with a side dish, and they bring it to you when complete. The sandwiches offered all sounded good, and, you get a choice of he bread. We tried three different sandwiches, a veggie, a 5 cheese, and a chicken. All were excellent. Sides include kettle chips, cottage cheese, veggies and dip, and yogurt. Portions were decent, but not overwhelming, and the service was excellent. While we ate the deli sandwiches, we dined in the bakery side, and the items in the bakery case looked pretty delicious. It would be worth another trip to Ripon to try the baked goods. read more

David Knuth and his team have done a wonderful job transitioning from Fat Bruce's to Knuth Brewing Company. The food is still top notch and you can tell that they are passionate about their menu and customer service. Their wood-fired pizzas are delightful especially the Margherita with fresh basil and soft mozzarella. One time when I ordered something that they were out of, David gave us a free loaf of bread with the meal. I hope to watch this restaurant grow for many years! read more

Decoded to take a winter mini day trip to ripon and check out Knute brewing company. We were not disappointed. Sat at the bar. Lots of local folks there and we felt welcome. Bar tender was equally attentive to us as she was to the folks she already knew (not always the case when you go to a place and you're not a regular) btk had the Scottish ale 7 to 71/2 so very good. Ordered smoked salmon plate with mascarpone and a cheese plate both wee well thought out with dried cranberry garnish yum. Knock down just a bit because the pin bones were still in the salmon. If you're in the ripon area for any of the multiple summer festivals or winter events stop in kbc will welcome you. read more

Every time we are in Green Lake we head to Bruce's. He makes an excellent cup of coffee and he and his staff are always nice and friendly. The pastries and food are delightful and I highly recommend coming here. Thank you Bruce!! read more

We were shopping at an incredible store called Ferrell's fine furnishings and got a bit hungry and ran across the street. Wow.... food was fresh and the beers we tried were fantastic. I got the wood fired pizza, Dave's Fave, and it is really impressive. He got everything right. The crust is perfect. The seasoning is perfect. I stopped in for a beer and to watch the brewer game. I had the American Pale Ale, excellent. I stayed for the entire game and watched the staff prepare for the end of the night. Pride is the word that comes to mind. All pitched in with the cleaning and making sure the dining area and tap room was in good order. This tells me the owner instills this. Attitude with his team. This restaurant has been a successful business for quite some time offering a great lunch menu, baked goods and coffee. Now under new administration, the restaurant has a virtually new menu including pizza and beer. The new owners are associated with Road House pizza in Ripon. I'm disappointed at the radical replacement of the menu with an offering that looks more like a re run of Road House pizza. The delicious, popular and healthy Quinoa salads are no longer offeted. I asked the owner if the Quinoa salads would be coming back to which he replied "maybe as a special". I ordered one of the new salads and although acceptable, the bread stick that was served seems to be of lesser quality than what was previously offered. It's not a bad place but certainly the menu changes were done too fast and the pizza and beer is already available in other restaurants in town. read more

We would come back again. Been here twice over the last few months. Interesting beer choices and, on the second go round, we found a pizza we liked that was prepared well with ample toppings. The Prosciutto Blue Fungi. Aaron definitely made our second visit worth us trying Knuth's again. The APA and the Worker's Mild Brown Ale were enjoyable. The first time, we came midweek in June and it was average. The service (waitress) was not attentive or friendly. Not forthcoming with suggestions or even a smile. We did not get her name. Tried a flight of beers and while they were pleasant, they were not a cut above some of the other brewery flights we've had in the North Central Wisconsin area. Large Margarita Pizza took forever, had two basil leaves, no tomatoes or garlic, little cheese and was not hot. Meh. Knowing what a good guy Dave is, we wanted to try Knuth's again. This time, midweek in September, we sat at the bar. Aaron was warm and friendly. We knew to avoid the Marg pizza, so opted for the Large Prosciutto Blue Fungi pizza. Yum! Not really very large, but arrived fast and hot. Had pints of the beers mentioned above and they were good. read more

Even though My parents Retired to Princeton from Chicago 3 years ago, I've been coming to the Ripon/Green Lake/Princeton/Montello area for well over 10 years. I've pretty much tried all the restaurants in the area. I always cut through downtown Ripen on my way to my parents to see if any new places pop up. I noticed KBC on the way in on this trip. Friday night, my wife and I left the kids with my folks and had a date night. We went to Knuth. We ordered wings, a salad, and a pizza. We both also had 2 beers. Good wings are hard to find in the area, so I was hesitant. They were delicious. They were cooked in the wood fire oven. They had some nice char on them. The salad was a tasty chicken Caesar salad(the Cicero). We got a spinach/pancetta pizza. Great crust and cooked perfectly. I got the American Pale Ale and it was tasty. My wife even liked it and she hates APA & IPA. Needless to say, I will go to KBC every time I go to my parents house. read more

Wonderful vibe with a lot of community friends gathering there. Incredibly fresh-tasting pizzas and interesting salads. Very reasonable prices (fresh baked goods under $2 and glass of wine for $5.50). Owner Dave is running a quality, smart establishment. I was so sad when Fat Bruce's left but the brewery is a great addition to downtown Ripon. The wood-fire pizza oven turns out very good pizzas. I had the Blue. Staff were friendly and helpful. I don't drink beer but I hear the beers are great. Fun atmosphere. read more
