Was in town Wednesday for a college game so stopped in just after 11 open. Parking was easy w free street parking. Entered to an empty bar and two staff. Excitement filled me as i aloud said "yasss can chat you up! Hello my 381st brewery!" I was warmly welcomed by friendly & knowledgable beertender Mikey. Staff Stephanie was nearby too. Mikey built me a flight. After making my way partially through the flight & beery chat, Mikey poured me a sample of Charlotte's Revenge Scotch Ale. Mmmmm so good!!! Of my flight, none of the six would i not order again but the Maibock was my victor!! Watch out for My Sophia....she is sly @ an easy drinking 9%. Mikey poured me a blue eyed blonde while telling me it was named for the owners wife. Boom....a few minutes later Mikey "thats the blue eyed blonde behind you". They had a brick oven but we didn't even discuss food. Mikey said they just celebrated 10 years last week, March 4th. They were originally right across the street as Mikey rattled off the store names where they were. Time got away from me so i didnt look @ merch. Thats my second visits task. I really like the tap room!! Spacious, lots of natural light, the exposed brick wall, the kitchen right there and a really big bar. The brew house just outside the tap room. I like the Wisconsin shaped flight paddles. When looking @ my flight list i asked the order? Mikey pointed out there is a tiny "map" on the sheet! I appreciated that w all the rising prices Knuth still offers a reasonable flight of $2 pours! I asked Mikey how to pronounce Knuth? Then forgot to ask its definition or how the owner came up w the name? Knuth checks all the boxes! Delicious beer, fantastic staff, comfortable digs, easy parking & just an all around good vibe! Ripon has nice things! My wife and I went to Knuth today, Had a couple of their beers each, and we both agreed that they were great (especially the coffee stout!). The taproom is modern, well-lit, and has comfortable and spacious seating at the bar. Skylar was a great server, and we had a great conversation with him. Half of what sets one taproom apart from another is the service, and he was a great host. Will be back when in the area! read more

The food was amazing, we got the pretzel bits, and the margarita pizza. the pretzel bits didn't look like pretzel bits, but tasted heavenly! It came with a variety of sauces, and one of them was Carmel, which surprised us but was amazing! The pizza was so good! The inside of the store was VERY kid friendly but also was fine if you were there alone. There were some board games that you could play. It had so much seating which was nice! It was really easy to order, we got to seat our selves, which was nice. The Staff was so nice. I don't know our waiters name but she was such a nice person! Would a 100% recommend to go! read more

I had one of the best sandwiches of my life, who knew mixing Cajun sausage with Cuban pork and Chicago Italian gardinera would be a match made in heaven!?!? Fantastic find in downtown Ripon, WI. Local brewpub with nice craft beer featuring traditional styles. Nice wood fired pizza oven used to make most the hot items on the menu. Bright and spacious beer hall with plenty of seating and outdoor seasonal space too. Service was friendly however slightly overwhelmed by a couple of large groups arriving at the same time. Not a big problem, we just relaxed and looked over the quite extensive menu. Pizzas were great and the salads were huge. Worth the trip to Ripon. read more

I recently went to Knuth brewing for lunch while on business in Ripon. We were looking for a lunch spot and I had been there once before for a small gaming event. I remember the pizza being delicious and a good menu of other items. This time around I got a salad and it was also delicious. They have a nice selection of house brews available and the people there are always friendly. They have a single point of service setting so you go to the bar to order food and drinks then they'll give you a number to take to your table so the food runners can find you. I'll definitely stop again when in the area. read more

Really wanted sandwich but they were out if some of the meat and bread(because it's made daily) but we got nachos and they were good. A lot of food is made cooked in a wood fire oven. Very cute place they even have an outside area to hang out. Bartenders were very helpful and friendly. read more

Best pizza around. Food in general is really good. Downside is the location is echoey and loud. Making conversation difficult. Some acoustic panels would be awesome. They don't have a full bar limited to wine and beer only. They have a full bar in the upstairs function hall but not in the main restaurant Their beers are good but it would be nice to have the option. And they aren't open Sunday's. read more

We were in Ripon to visit meet my Sister-in-law for lunch. We picked Knuth because we liked the menu. Upon walking in we were completely ignored. The bartender was like a deer in the headlights. We order beer while waiting and she said I don't know where our coasters are, and then never looked for them. The atmosphere is too wide open clinical for me. Not coming back. Too too loud. I usually go and sit at the bar with my husband, and we enjoy it. But we brought several guests and sat in the upper level. A horrible time of loud din, unable to have a conversation. Please install some sound-reducing acoustic panels, or anything to take the sound level down. We were embarrassed we had suggested the place to our guests. read more

Ordered the beer flight, wings, and two personal size wood fired pizzas. Delish. The Thai chili wings were perfect. We had the chicken pesto pizza and Dave's Favorite pizza. Both were excellent. As for beers we loved the Blue Eyed Blond and the IPA. We had no problem finding a table for four but we arrived at 230 in a Saturday. When we left around 430 people were waiting for tables. It is a beer hall so you have to find your own seating and it's a little bit of a scramble trying to find a table when it's busy. Knuth just bought and fixed up a new location down the street which will be able to accommodate more people. Highly recommend! read more

On a recent road trip my boyfriend and I came across this great little brewing Company. We decided to go in and see if they had flights. We were excited to see that they offered flights along with some amazing food. Stephanie was our bartender and she was absolutely amazing! We sat at the bar for hours and enjoyed food and drink and listening to live music. The beer choices that they offered were fantastic. The ones that they brew there were quite tasty. The food menu was exceptional and the pizzas were fantastic! We will definitely go back the next time we are in town!!! read more

I tried all of the house beers except their IPA (thanks to a flight and a couple of other glasses). I must say this is easily the best overall microbrewery I've ever been to. My particular favorites were the Maibock and hefewifezen. Dave's Fave pizza is excellent. The spinach artichoke dip was really good. The radler made from seltzer and beer was good for my girlfriend. She also liked the local ciders (apple and raspberry) from Vines & Rushes Winery. The staff was incredibly friendly, which helped put this place over the top. I'll DEFINITELY be back. read more

We love this place. Come here often. Tonight, I wanted to watch the Milwaukee Brewers on one of their monitors. They readily put the game on both available screens. 5 minutes later, other people wanted to watch the Olympics on a different channel. The staff tried their best. Can't do. All or nothing. I watched the Olympics. I can't believe with this new venue they haven't figured out how to show two different sporting events on the two screens available. Very disappointed! read more

My husband and I stopped in to grab a brew and a bite and to watch the Badger game. Beer = 4 stars. I had the Coffee Stout and Harvest Fresh Mackinac IPA. Both were good. I would have preferred a more prominent coffee flavor and actually expected it to be more given they have some coffee offerings there that were pretty tempting. The IPA was good. I am interested to try more. Food = 5 stars. Hubby and I each had a personal pizza. Mine was a pie with white sauce, chicken, and mushrooms. Wood fired and oh-so-tasty! A nice crisp and chewy crust. My husband really liked his red sauce, pepperoni, and jalapeno. The other food options looked great also. Someone else at the bar had wings that looked really good and I kept eyeing up the carrot cake in the dessert case. Too full though to pull the trigger on that. Next time! Atmosphere = 4 stars. Second visit. Both times were great. Not fine-dining but what they do they do well; pizza, sandwiches, panini's, sides, salads, soup, and their own beer. Interesting layout with essentially two sides to the place (and 2 entrances). The food side and the bar side (you can eat and drink in either). It's obviously a reclaimed building so some interesting architecture and character that they left. Relaxed atmosphere. Pizza is wood-fired and ours was real good (not great). You can build your own or choose their offerings. We shared a Margherita pizza after enjoying a mug of cheesy potato soup. We had a tough choice deciding as so much looked good on the menu. Beer offerings on tap limited to 10 of mostly their own but they do a nice job of various styles. We shared a flight of 6. Their Hefe' was some of the best I've tasted brewed in the states. Inexpensive, friendly and prompt service, great food, great beer, nice atmosphere. We don't get to Ripon often but when we do we will be back! read more

But with every well attended pizza joint wear and tear sometimes gets over looked. Second time dishes were dirty and no washed silverware. Fat Bruce's is two, two, two shops in one (cool, I inserted my dated cultural reference on the first line of my review). For those of you looking to get your caffeine buzz on, Fat Bruce's is a decent coffee shop for small town Wisconsin. They dropped some serious coin to renovate the interior of the 19th century building housing this establishment. There is plenty of seating, a strong, password-protected wi-fi signal and a wide assortment of pastries to nosh on. The coffee shop roasts its own coffee on site in small batches and ol' Fat Bruce serves up a mean cup of joe. My oatmeal and brown sugar muffin top was a disappointment - it was the bastard child of an illicit union between a scone and muffin (a scuffin?) that was extremely spongy and far too sweet. But the packed display case is home to a wide assortment of tempting pastries and I am more than willing to sample those confections until I find an acceptable match to the wonderful coffee I consumed. Where Fat Bruce's really brings the thunder is the sandwich side of the operation. I recently ordered a Berlin Club Panini (Ham, Turkey, Swiss , bacon, lettuce and tomatoes) to go. For my panini order, there were several homemade bread options that change from day-to-day. I wisely selected the ciabatta option. The bread was out-of-the-oven fresh, flavorful and provided great textural contrast. It certainly gets my bread-head seal of approval. Also drawing raves was the thick cut, succulent slices of turkey, oven roasted on site. This fantastic sandwich was a tremendous value at $6.99. The kettle chips were a nice added touch. Since I ordered the sandwich to go, they placed those chips in a small plastic bag so they stayed crunchy next to the moist sandwich and pickle spear. Fat Bruce, I am definitely a fan and look forward to future visits when my travels take me through Ripon. read more

We were not expecting much when we stopped here last week on our way to golf, but were we surprised! Our meal was so good! We started with the Pretzel rolls - with two different mustards and a caramel sauce. All three sauces were very good and went perfectly with the pretzel bites. For such a cheap price, it was very filling and delicious. We ordered the Large Meats Pizza - Red sauce base with sausage, pepperoni, bacon, ham. What made this pizza so good to us was the crust - a little burned but nice and flaky. One of the best pizzas we've ever had. If the pretzel rolls hadn't filled us up, we would have been able to finish the whole pizza. They also had a dessert window where they had home made cookies and brownies - all looked wonderful, but we were too full to try. The staff was very nice and even came over twice to see how everything was. Unfortunately, I doubt I will ever be in the area again, but if we were, I would stop here in a heartbeat! read more
