For the record, as of this visit, most of the food at Hi sushi is gluten free... only the eel sauce, onion something and tempura have gluten, and they are willing to substitute for you. And still, as we just asked to confirm what we could order, Kyle and Kyla worked to confirm what we wanted and we confirmed a couple substitutes. THEN they worked magic.... They improvised on the recipe and brought us something even more special!! The Tokyo combo is good and they made sure to replace the one fish marinated in eel sauce with another fish - this was good. Same for the nigiri / sashimi we ordered. Both were good without soy sauce... and Lyle replaced that with another gf sauce for us and that was extra tasty, too. Kyle's magic was the Laramie roll... a couple ingredients were substituted, and they put "baby" scallops on top - the smallest I have ever seen, about the size of a pearl onion.
