I had the red chilaquiles topped with chorizo, and honestly, they reminded me of the way my mom used to make them. That alone brought back some great memories. It was everything I look for--clean broth, piping hot, fresh, and packed with flavor. It even had a nice spicy kick that I absolutely loved. It was so good that I promised Christian and his tía, who prepares it fresh every day and serves it seven days a week, that I'd come back the next morning to buy some. A promise made is a promise kept. The very next day, I returned and picked up a few cups of the menudo to enjoy back at my hotel, which was only about a half-mile away. If you check out my photos, you'll even see me enjoying it in my room. It was just as incredible the second time around. Experiences like this are exactly why I love supporting small, family-owned businesses. Great food is one thing, but genuine hospitality and people who truly care about their customers make all the difference. If you enjoy authentic Mexican food, I highly recommend Lindo's Diner.
