The napkin were two decent dinner napkins wrapped around our silverware, then a stack of cheapo diner napkins like you would have in a chrome dispenser on the table of a greasy spoon diner. The staff was very friendly and we enjoyed our time. I've actually been here a few times since our cottage is up in Lexington. So when you get off the freeway take a right instead of a left to go to Lexington and grab some tasty grub.

So glad we did! The concept is somewhat similar to Chipotle--you choose your style (bowl, burrito, salad, etc.), then your protein, rice, beans and toppings. But that's where the comparison ends. The food at Lugo's is prepared in the kitchen like a traditional restaurant rather than sitting precooked in containers on an assembly line. And you can taste the difference. Everything was incredibly flavorful without being overly spiced or seasoned. Each ingredient was seasoned just enough to let its own flavor shine through, but when you put everything together, it created a really flavorful, well-balanced meal. We also learned that they source their ingredients locally from area producers as much as possible, and you can absolutely taste that freshness in the food. It's a practice that really sets Lugo's apart. The service was incredibly welcoming, crazy fast, and the food was excellent. But for me, the stars of the show were Lugo's house-made sauces. We tried the jalapeño ranch, salsa, roasted pepper hot sauce and green chile VERY hot sauce. All were good--and I like heat--but that green chile sauce was even too hot for me! The roasted pepper sauce was by far my favorite. The combination of flavors, the consistency, the heat level--everything about it was outstanding. We ate inside and had the opportunity to talk with the owner. If you get the chance, take a few minutes to chat with him. There's a very interesting story behind Lugo's and it made us even happier that we chose to stop. It seemed like most of the locals were grabbing their meals to-go, and I can completely understand why--this would be an amazing place to pick up a quick meal without settling for typical fast food. If you're passing through Caro and looking for something fast, fresh, flavorful and locally owned, skip the chains and give Lugo's a try. And whatever you order, don't skip the house-made sauces
