"Mole negro" is the regional specialty of the Zapotecs and the signature dish at Fonda Oaxaqueña. The sauce gets its blackened color from the charred chilies and seeds from which it is ground. Add to that the chocolate, nuts and spices of later Spanish influence , and you have a sauce that is unique to this restaurant. I had Enchiladas Oaxaqueñas this evening (see the menu)--chicken with mole negro, garnished in cilantro, onion, radish, and queso fresco. If you're a fan of mole negro, this is the best in Wenatchee! ...definitely 5-Stars.
