The Boudin egg rolls were the best thing I ate on my entire trip. Perfectly seasoned and perfectly crispy, every bite was heaven. The jambalaya was the best jambalaya I had on my trip as well. It had a fantastic smokiness and was not wet at all. I also loved the crawfish étouffée. It was creamy and loaded. The red beans and rice had a bit of a sweet edge that was not quite my taste. Try for yourself. The bread pudding was the perfect sendoff. Bite-size beignets were nestled in the bread pudding. It was a sweet, creamy, perfectly Mississippi dessert. I loved Parrain's so much that I bought a T-shirt. I generally don't like wearing clothes that serve as advertisements, but this place just has to be advertised all around the country. Woody's usually never misses (from the time when I lived down here full time) but they were on their p's and q's this go round. We beat the Sunday church crowd by about 30 minutes. I decided to try the "Nola" burger (listed as the same blend I had at other locations) topped with blackened shrimp and creamy sauce. I ordered my burger medium well. I usually go with medium, but this being a beef and sausage blend patty, I like it over 150 internal. My burger came to the table RARE at best. Took one bite and immediately saw red...in the patty. To their credit, they re-fired and served me a well done burger pretty quick. The patty was all beef and not a touch of seasoning or salt. The cream sauce was a savior, it was nice and flavorful though partly broken. It did not make up for this (now) overdone and flavorless burger patty. The shrimp were fantastic, especially dipped in this Cajun cream sauce. Then I paid witness to something I have never encountered. The hosts tried to seat a party with a person in a wheelchair, in an end booth. Obviously, they immediately protested and had to explain why they couldn't be seated in a booth. They were quickly moved to a table...but this just shook me on how either untrained or uneducated folks can be when it comes to disabled. Shake it off, back to the review. The fries were delicious and hot, just like the ones at the other locations. I think maybe they make their own ranch dressing, it was killer with my piping hot and crispy fries. The Bloody Mary was OK, glass rim was seasoned but spilled all over the napkin upon arrival. Service was friendly and adequate but otherwise unimpressive, had to call server over for the burger issue. If I had not have had such a flavorful burger at the other location, I probably would not have been as disappointed with this one. May give another try at this location, but will probably defer to the other location given the choice.

The easiest way to find them is to follow their Facebook page for locations, which vary weekly. Salty Jax is most famous for their lobster rolls, because few other places down here even offer such a thing. They are quite expensive (upper $20 range, depending on market price) but for obvious reasons since we don't have lobsters out in the Gulf. I always go with the Cajun roll because it is doused in garlic butter for a wonderful kick of flavor. They recently advertised that you can now get lump crab meat added to your roll, and I can't wait to try it! You can also get extra lobster meat so you get a stacked lump of seafood. Be sure to grab some extra napkins because you'll need it. I've been to Maine twice and had plenty of lobster rolls up there, and Salty Jax can hang with the best of them. They give you a roll stuffed with meat and it is quite filling. The owners are local and super friendly, and I don't mind paying for this gourmet premium because of that. If lobster isn't your thing, I highly recommend their fried shrimp basket when they have it on the menu. It's some of the best fried shrimp I have had, and they are plump and crispy. I'd love to see them eventually open a full blown restaurant one day.
