    The waffle was really tasty and the size was more than your money's worth. The owners was really nice letting us sit inside during the cold. We got the chunky monkey and the caramelly in my belly. Both were generously topped and great balance of cold and warm. It's a fun carpe like treat but crunch. The waffle is a yeast base and has pedal sugar mixed in the owner explained. It was like nothing I've had before. They're only open Friday-Sunday so keep that in mind.

And then came the waffles. Warm, perfectly crisp, with melted butter and brown sugar that somehow tasted even better at the top of a mountain. Simple, cozy, and honestly one of the most memorable things I ate on this trip. Between the incredible scenery, the adrenaline rush of getting there, and those delicious waffles, this ended up being one of my favorite experiences in Wyoming. The views from the top, despite the wind, were once in a lifetime. The Nutella waffle was my favorite. Anything with chocolate is what I will always order! The berry compote and the brown sugar waffles were also delicious. And, when paired with hot chocolate and hot cider, it was the perfect meal. We could've gone up here for waffles for every day. We had a ski pass that was good for our whole stay, and it included this team ride. If you are an advanced skier, sometimes the mountain is open for you to ski down. However, they say it is the hardest trail. Corbet's Cabin is not to be missed. It's worth everything and anything!

We were very surprised to find the line already went out the door! The line moved fast and boy you better be ready to order when you step up, because it is a fast moving, no messing around system. In addition there were at least three employees taking orders at the counter so the pastry case is extremely crowded and it's difficult to view what the options are. The employees weren't un-kind, but they there were no niceties like "good morning". They wanted to move you through the line quickly, so we didn't feel we could really peruse the pastries and so we skipped it and we just ordered a hot coffee and a large hot almond milk latte. People were already more than crowded inside waiting for their items so we stepped onto the patio. It was a chilly morning so the small fire pit was welcomed. For the giant crowd waiting we received our drinks within a reasonable time frame. They call names from inside behind the counter, so if you are not within 4 feet of the counter you will not hear them. We sat on the patio near the garden and the view was beautiful. My "large" latte was the same small size of my husband's drip coffee and both appeared to be around 12-14oz. Disappointing. The drip coffee was okay, but not worth returning for and my almond milk latte was also just okay. We maybe would have given Persephone another try, but in the end we chose to try the many other coffee/bakery shops in downtown. I'm not saying 'stay away', I'm just saying it's not as amazing as the hype. Cafe Genevieve does them very well. The biscuits were light and fluffy. The gravy was rich and flavorful with a plentiful amounts of sausage. The eggs done over medium were also good. A bowl of fruit was ordered with fresh blueberries and ripe strawberries. Again, a generous amount. Cafe Genevieve has a staff that hustles. The food is done well and the portion sizes are large. The costs are a bit high with an average spend of $25 to $35 pp not including a morning cocktail for a basic breakfast. If you are hungry, stop by Cafe Genevieve for a solid breakfast.
