For food, we ordered the steak macho nachos and the pork belly tostada. As I said, the tortilla chips were crispy, however in the nachos they were heavily wilted. The nachos were absolutely drenched in queso. I love cheese, but this was overboard. Aside from the chips on the top layer, everything else was really soggy. Each component of the nachos tasted fine and would've been much better had they not been drowning in queso. I do wish there was more steak for how many nachos there were. The pork belly tostada was a total miss though. It appeared very difficult to eat due to the pork belly being one large piece vs being cut up. It was crispy in parts where the bbq sauce wasn't. The sauce was sweet, but not great; could've used more flavor. Didn't pair well with the pork belly. Overall my experience was not great by any means, but I'd be open to going back for drinks and trying something else.

But I never use salt at a restaurant, and I order my In-N-Out fries cooked light, no salt. =) I should've just rubbed a little of the salt off the ribs and/or used a little water. So I would order that again. The coleslaw had a really good spicy kick. I think I like mine a little more chopped up, but I could've just thrown it in a food processor. Anyway, definitely worth trying the coleslaw. They have an unusual pizza, but this was the first weekend they didn't have the dough. They cater. And I think they know a good cajun cook. Let me start with the most important thing I can tell you. If you have never eaten at Vaqueros, you are missing out. Vaqueros and Hutchins are the two best BBQ joints in Collin County. But Vaqueros has a twist. Their barbecue is competition grade, and they also happen to run one of the Top 50 taco spots in the entire state. Do not take my word for it. Ask Texas Monthly. Want to know why the tacos are that good? It is the brisket. Trey uses every last ounce of it. The trimmings end up in the sausage, the burgers, the tacos, and the consomé de res. They go into the tallow too, and if you ever order the fries, you will understand. You will want more. His suadero tacos are something special, and that is just the beginning of the menu. Speaking of burgers, do not skip his. It is outstanding, and it is made with, if you guessed brisket, you would be right. So here is my advice. If you are thinking about wandering next door to Village Burger Bar, stop. Get a burger from Trey instead. His beef is ground fresh daily, and the pickles and the mustard are made in house. It is in a different league. Now the class itself. What Trey taught me about trimming a brisket, treating it like a steak, seasoning it, and wrapping it, those are lessons any wannabe pitmaster will cherish for life. And here is the part nobody warns you about. Trey is a phenomenal storyteller. He knows everyone in the Texas barbecue world, and his stories alone are worth the price of admission. It was rich and gooey, topped with feta, chives, and shredded cheddar. Not a combination I would have expected--or ordered--but somehow it really worked. The only real disappointment was the beans. They arrived cold and were a bit bland, especially by Texas BBQ standards. Overall, it was a solid 4-star experience.
